BACON WRAPPED ASPARAGUS BUNDLES
These bundles can be easily prepared on an outdoor grill or in a hot oven.

Steps:
- Preheat oven, if using, to 400 degrees F.
- Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
- To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
- For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.
ASPARAGUS BUNDLES
Steps:
- Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.
ROASTED ASPARAGUS BUNDLES
A very pretty way to serve asparagus! NOTE: The directions state that you should roast for 25-30 minutes, although I have found that it takes much less time at that temperature, especially since we prefer our asparagus crisp-tender. I strongly suggest you begin checking your asparagus after only 10 minutes, especially if your spears aren't very thick.

- Preheat oven to 400 degrees. Line a sheet pan with parchment paper. Rinse asparagus and trim bottom ½" from stalks. Cut red pepper into 8 slices, lengthwise. Separate asparagus spears into bundles of two to three, place one pepper slice onto each. Starting from bottom, wrap a piece of bacon tightly around spears and pepper, ending about halfway, add another slice and continue wrapping, leaving tip of spears visible. Repeat with remaining bundles. Place on parchment lined sheet, so they are not touching. Drizzle olive oil over bundles and sprinkle with sea salt and pepper to taste. Bake in preheated oven about 15 minutes, then turn on broiler and broil for 5, or until bacon is as crisp as you like. Serve warm.

Steps:
- Wash asparagus and cut off the woody hard ends.
- Separate asparagus evenly to make 6 bundles.
- Place a slice of cheese in the middle of the bundle and wrap the bundle with bacon to "hide" the cheese and help hold it in when melted.
- Season with salt pepper and garlic powder.
- On a flat griddle or skillet (i like a electric griddle to control heat better).
- Cook bundles tuning a little at a time to make sure bacon is cooked all the way around.
- Serve immediately.

My mom gave me this recipe using green beans, but I like it much better with Asparagus. The asparagus is tender, with a slightly sweet, but tangy sauce.

- Cook the asparagus in boiling water for 2 minutes; drain and set aside.
- Melt butter or margarine.
- Mix Worcestershire sauce, brown sugar, butter and garlic in a bowl.
- Wrap the asparagus in bundles of 4-5 stalks with a piece of bacon. Place bundles in the bottom of a baking dish.
- Pour sauce over the bundles and bake at 325°F until bacon is crispy.
- Remove and serve warm.

- Heat oven to 425°F. Line 18x13-inch rimmed pan with foil. Place large rack in pan; spray rack and foil with cooking spray.
- In large shallow bowl or pie plate, mix melted butter and pepper flakes. Add asparagus; toss thoroughly to coat. Divide asparagus evenly into 8 bundles. Wrap each bundle in one slice of bacon.
