SLOW-ROAST PORK SHOULDER

Slow-roast pork shoulder image

This smoky, melt-in-the-mouth main course is slow-cooked for several hours, making it ideal for a Bonfire Night feast after the fireworks

Provided by James Martin

Categories     Dinner, Main course

Time 6h50m

Number Of Ingredients 7

1 tsp black treacle
2 tbsp cider vinegar
2 tsp smoked paprika
1 tsp ground cumin
1 tsp mustard powder
1 tsp chilli powder
2.7kg boned pork shoulder

Steps:

  • In a small bowl, mix the treacle, cider vinegar, paprika, cumin, mustard powder and chilli powder until smooth. Using a sharp knife, make deep slashes in the skin of the pork shoulder to cut through the skin and fat layer, but not the meat. Place the joint, skin-side down, in a large dish and rub the spice paste into the meat (not the fat). Turn skin-side, cover tightly with cling film and put in the fridge overnight, or for 24 hrs to give the pork maximum flavour.
  • Heat oven to 150C/130C fan/gas 2. Transfer the pork, skin-side up, to a deep roasting tin, rub 1 tbsp sea salt onto the skin and pour 500ml water into the bottom of the roasting tin. Cover tightly with foil and roast in the oven for 5 hrs.
  • Remove the foil, turn up the oven to 200C/180C fan/gas 6 and cook for a further 1 hr 30 mins or until the pork is very tender and the skin has turned to crispy crackling.
  • Once the pork is ready, take it out of the roasting tin, cover with foil and leave to rest. Pour the juices from the roasting tin into a jug and leave to separate. Pour off the fat layer and transfer the remaining juices to a large sauté pan. Simmer over a high heat, stirring, until reduced to a rich gravy.
  • Once rested, cut the pork into pieces - it should pull apart with very little effort - and break the crackling into shards. Serve the pork and crackling with the gravy poured over and mustard mash, honey-roasted carrots and quick pickled red cabbage on the side (see goes well with below).

PORK SHOULDER POT ROAST WITH WINTER VEGETABLES

Pork Shoulder Pot Roast with Winter Vegetables image

Provided by Geoffrey Zakarian

Time 12h30m

Yield 6 to 8 servings

Number Of Ingredients 25

Kosher salt
One 3- to 4-pound boneless pork shoulder
1/3 pound pancetta, cut into 1/4-inch-thick pieces
2 sprigs plus 6 leaves fresh sage
6 cloves garlic
2 carrots, peeled and cut into large dice
1 rutabaga, peeled and cut into large dice
1 turnip, peeled and cut into large dice
1 large yellow onion, quartered
2 tablespoons tomato paste
1 tablespoon miso paste
1 sprig fresh rosemary
Two 12-ounce bottles dark beer, such as stout
2 cups chicken stock
1 tablespoon sherry vinegar
Fresh mint, for garnish
Fresh cilantro, for garnish
Neutral oil, for frying
1 cup fresh parsley leaves
Neutral oil, for frying
1/4 cup all-purpose flour
1 teaspoon cayenne pepper
1 cup thinly sliced onion rings
1/2 cup drained capers
Neutral oil, for frying

Steps:

  • For the pork shoulder: One day before cooking, liberally salt the pork shoulder and refrigerate uncovered.
  • When ready to cook, preheat the oven to 300 degrees F.
  • In a large Dutch oven over medium heat, cook the pancetta and 6 sage leaves over medium heat until the pancetta renders its fat and gets crispy, about 5 minutes. Using a slotted spoon, transfer the sage and pancetta to a plate lined with paper towels and set aside. Add the pork shoulder to the pancetta fat and brown the pork on all sides, about 5 minutes per side. Set aside.
  • Add the garlic, carrots, rutabaga, turnips and onion and cook until browned, about 4 minutes. Add the tomato paste, miso paste, rosemary sprigs and sage sprigs and cook for 1 minute more. Add the beer and chicken stock and bring to a simmer. Return the pork to the pan and add the reserved pancetta and sage. Cover and braise in the oven until fork-tender, about 3 1/2 hours. Allow the pork to rest for 30 minutes in the liquid.
  • For the fried parsley: Put 1/2 inch of oil in a small saucepan and heat over medium heat until 350 degrees F. Add the parsley leaves and fry until crispy, about 1 minute. Remove with a slotted spoon to a paper towel-lined plate.
  • For the fried onions: Put 1/2 inch of oil in a small saucepan and heat over medium heat until 350 degrees F.
  • Mix together the flour and cayenne in a shallow bowl. Dredge the onions in the flour mixture, shaking off any excess. Fry in batches until browned, 3 to 5 minutes. Remove with a slotted spoon to a paper towel-lined plate.
  • For the fried capers: Pat the capers dry with a paper towel. Fill a small saucepan with 1/2 inch of oil. Add the capers to the cold oil and turn the heat to medium. Cook until the capers are fried and crispy, 3 to 5 minutes. Remove with a slotted spoon to a paper towel-lined plate.
  • Remove the pork from the liquid and transfer to a cutting board. Slice the pork into 1-inch-thick pieces and transfer to a serving platter.
  • Stir the vinegar into the braising liquid. Pour the sauce over the pork and top with the fried capers, fried onions, fried parsley, mint and cilantro.

PUERTO RICAN ROAST PORK SHOULDER

Puerto Rican Roast Pork Shoulder image

This recipe is for a bone-in pork shoulder, or pernil. It is marinated in a garlicky paste for 1 to 3 days; the longer the better. Unlike other recipes in the database, it is cooked at a relatively high heat so that the result is a tender roast with crispy crackling or chicharons. Adapted from Daisy Martinez. Cooking time is approximate. The original recipe called for a 4.5 lb pork shoulder. The smallest I found was 8.5 lbs.

Provided by threeovens

Categories     Pork

Time 4h20m

Yield 16 serving(s)

Number Of Ingredients 7

12 garlic cloves, peeled (or one head)
1 1/2 tablespoons kosher salt
1 tablespoon black peppercorns
2 tablespoons dried oregano (or 3 tablespoons fresh)
2 tablespoons olive oil
2 tablespoons white wine vinegar
8 1/2 lbs pork shoulder, skin on bone in

Steps:

  • Using a mortar and pestle, pound the garlic and the salt to form a paste.
  • Add the pepper and oregano and pound well to incorporate; stir in the olive oil and vinegar, this called a wet adobo which will keep in the refrigerator for 5 or 6 days.
  • Place the roast skin side up and make several slits, about 1 1/2 inches long and as deep as possible; spoon some wet adobo into the slit.
  • Turn roast and do the same with the other sides, then rub the adobo all over.
  • Refrigerate, covered for at least one day, up to 3.
  • Turn once a day.
  • Preheat oven to 450 degrees F.
  • Roast, skin side up, on a rack in a roasting pan for 1 hour; reduce heat to 400 degrees F and roast until the skin is deep golden and crackly (160 degrees on an internal meat thermometer), about 3 hours.
  • Let rest at least 15 minutes before carving.
  • Remove the crispy skin and cut into smaller pieces (you can use kitchen shears).
  • Carve the meat, parallel to the bone, all the way through to the bone.

SLOW ROAST PORK SHOULDER WITH HERB RUB

Slow Roast Pork Shoulder With Herb Rub image

Provided by Alice Hart

Categories     dinner, main course

Time 12h

Yield 10 servings

Number Of Ingredients 9

6 tablespoons mixed finely chopped robust herbs (like thyme, rosemary, sage and parsley)
3 garlic cloves, finely chopped
3/4 cup brown sugar
1/2 cup, plus 1 tablespoon sea salt
1 tablespoon crushed black peppercorns
A 7-pound pork shoulder, skin on, boned
5 bay leaves
Rosemary applesauce
Crusty bread rolls, for serving

Steps:

  • Mix together herbs, garlic, 1/4 cup brown sugar, 1 tablespoon sea salt and crushed peppercorns.
  • Untie the pork if rolled. In a large bowl, thoroughly dissolve 1/2 cup salt and 1/2 cup brown sugar in 2 quarts of cold water. Add bay leaves and 2 tablespoons of herb mixture. Place pork in a container or strong sealable bag and add this brine to completely cover. Cover or seal well and chill for from 8 hours to overnight.
  • Remove the pork from the brine (discard the brine) and dry thoroughly. Cover with the remaining herb mixture, patting it in all over, then use kitchen twine to roll up pork and secure it tightly.
  • Heat the oven to 225 degrees. Prepare a triple layer of aluminum foil large enough to comfortably enclose the pork. Put the rolled pork on the foil, skin/fatty side up. Gather the foil, scrunching it over to form a loose but well-sealed parcel. Place in a roasting pan in the oven. Take the first check for the internal temperature after 8 hours. For very tender meat that can be sliced, it should be 160 degrees and will probably take 10 hours. Check more often if needed. For a "pulled pork" consistency, the internal temperature should be 200 degrees and it will take about 12 hours.
  • Rest the meat 20 minutes before unwrapping completely. Warm the applesauce and the rolls. Slice the pork not too thin (removing the twine as you go) and put in the sliced rolls with some of the cooking juices and lots of applesauce.

REALLY SLOW ROAST PORK SHOULDER WITH CRISPY, CRISPY CRACKLING AND GARLIC ROAST POTATOES

Really Slow Roast Pork Shoulder with Crispy, Crispy Crackling and Garlic Roast Potatoes image

Provided by Lorraine Pascale

Categories     main-dish

Time 6h45m

Yield 4 to 6 servings

Number Of Ingredients 13

2 teaspoons fennel seeds
1/2 teaspoon whole black peppercorns
Kosher salt
One 4 1/2-pound boneless pork shoulder
4 to 5 large Yukon gold potatoes, peeled and cut into large chunks
5 cloves garlic, unpeeled
6 to 8 medium whole shallots or 1 large onion cut into 6 wedges
3 carrots, cut into large pieces
2 large pears, cut into quarters
1 heaping tablespoon all-purpose flour
3/4 cup white wine, optional
1 cup good quality chicken stock
Freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F.
  • Grind the fennel seeds, peppercorns and salt in a spice grinder. Place the pork shoulder into a roasting pan and cut the rind into cross hatches. Rub the spice mixture into the meat and put it in the oven for 4 hours.
  • Arrange the potatoes around and under the meat and put it back into the oven for 1 hour.
  • Now add the garlic, shallots and carrots around the pork. If your roasting pan is not large enough to accommodate all the vegetables, place them in a separate roasting pan. Cook for 30 minutes, then add the pears. They don't need much cooking time and will disintegrate if cooked too long. Cook for another 30 minutes
  • When the meat is tender and flakes with a fork, remove it and the vegetables and keep warm. This will give the pork time to rest and become more tender. If the pork rind is not crispy, put it under the broiler for a few minutes until it is really crunchy and crispy.
  • To make the gravy, pour off all but 1 tablespoon of the fat from the roasting pan. Stir the flour into the roasting pan, add the wine, put the roasting pan onto a burner over medium-high heat and cook until the wine is reduced by half. If not using the wine, do this with the stock. Now add the stock and scrape off any bits of meat and vegetable on the bottom of the pan. Taste and add any seasoning if you think it needs it.
  • If the gravy is too thin, make a paste in a bowl with 1 tablespoon and 1 tablespoon flour. Add some of the hot gravy to the small bowl and stir. Add this to the hot stock, stirring constantly and bring to a boil. The gravy will thicken slightly.
  • If your gravy is too thick, just add a touch more stock. Serve the meat and vegetables with the gravy.
  • This dish struggles to make it to the table as the family descends upon it while I am trying to finish the gravy! Use any leftovers for pork sandwiches with some crunchy pickle.

Roast Pork Shoulder Sandwiches with Fennel Slaw image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 2h50m

Yield 4 servings with plenty of leftovers

Number Of Ingredients 15

3 1/2 to 4-pound boneless pork shoulder
Coarse black pepper
Sea salt
1 bulb garlic, chopped
5 to 6 sprigs fresh rosemary, stripped and finely chopped
2 tablespoons fennel seeds
EVOO, for liberal drizzling, plus about 1/4 cup
4 medium onions, cut into thin wedges
1 cup dry white wine
1 round tablespoon superfine sugar
1/2 lemon, juiced
2 tablespoons white balsamic or white wine vinegar
8 ounces cabbage, very thinly sliced or sliced on a mandoline
1 bulb fennel, very thinly sliced or sliced on a mandolin, plus a handful of fronds
4 ciabatta or other crusty sandwich/sub rolls (wrap in plastic if you are not serving that day, then crisp in oven to use)

Steps:

  • Preheat the oven to 375 degrees F.
  • Have the butcher butterfly the meat for you or take a very sharp knife and split the shoulder open and across the meat, opening the shoulder like a book, 1 to 1 1/2 inches thick. Heavily sprinkle the meat with lots of pepper and sea salt, garlic, rosemary and fennel seeds. Roll the meat up and tie with twine. Slather with EVOO and sprinkle with salt and pepper. Dress the onions with EVOO, salt and pepper and scatter across a baking pan. Set the meat on top and roast 1 hour.
  • Douse the pan with the wine and return to the oven. Roast another 1 to 1 1/2 hours to 145 to 150 degrees F internal temperature. Let stand 15 minutes, and then slice and serve. Or, cool to room temp, cover and store. To serve after storing, slice 1-inch thick pieces and reheat in shallow pan of warm chicken stock to heat through.
  • While the meat cooks, combine the sugar, lemon juice, vinegar, salt and pepper and about 1/4 cup EVOO. Toss the cabbage and fennel and fronds in the dressing.
  • To serve, slice the meat, pile on rolls with warm onions and cold fennel slaw on top.

PUERTO RICAN PERNIL (ROAST PORK SHOULDER)

PUERTO RICAN PERNIL (ROAST PORK SHOULDER) image

Categories     Pork     Roast     Dinner

Yield 8 people

Number Of Ingredients 19

1 pork shoulder picnic
minced garlic
minced cilantro
oregano
sazon with annatto (it will say "con culantro y achiote". you can buy this at any store that sells goya products. it would be in the ethnic, hispanic, or mexican food section of your store. if you cant find it you can use a blend of salt, granulated garlic, cumin, coriander, and ground annatto. annatto gives it that orangey color. if you dont have a grinder, get a little pan with olive oil. about a 1/4 of a cup. put 1 tablespoon of whole annatto seeds in the oil and keep on low heat until the oil is really orange. use cheesecloth or a really fine strainer and get out all the seeds out. use this in place of the olive oil later in recipe)
adobo (this is also sold with the sazon. it is a blend of salt, garlic powder, oregano, black pepper and tumeric)
salt (if needed)
pepper (if needed)
lime juice
lemon juice
vinegar
olive oil
cilantro
smashed garlic cloves
the best way to do it is over a period of 2 nights. it is so worth it in the end. but if you dont have time, you can do it for 4 hours each.
take your pernil and put it on a cutting board or huge bowl. whatever you prefer. take about an inch knife and start stabbing your pernil. turn the knife to make bigger holes. this is the time to take out your anger. (just kidding).
the first night, you want to soak it in a huge bowl with vinegar, lime juice, lemon juice, cilantro, oregano, and the smashed garlic.
the second night, rinse off everything.
ok now this step, i do because it just comes out so good but it really isnt necessary. i actually take my knife and cut under the skin until you can pull it back. i do this because when you finish cooking the pernil, you are going to have pork cracklings. when you take it off the pork after its cooked, you wont have any seasonings under it. so i do this so i can have seasoning under the skin too. and later it is easier to take the cracklin off later.

Steps:

  • after that, you are going to make a paste. it is going to include all the spices, minced garlic, minced cilantro, lemon juice, lime juice, and olive oil. add salt last. you dont want it to be too salty. when you have this thick paste, you are going to give your pernil a rub down. it do mean it literally. you might want gloves for this because the annatto will make your hands orange for a few hours. i dont use gloves because im used to having my hands in it. you are going to take that paste and rub it all over your pernil. those holes you made the night before when you stabbed it, are going to be filled with that savory seasoning. get it all in there with those fingers. now put it in the roasting pan you are going to use. cover it with aluminum foil. the next day you are going to finally cook it. yay!! there are 2 different ways to cook it. if you have all day: preheat your oven to 400. put your pernil in uncovered for 20 minutes. put aluminum foil on and reduce heat to 275 degrees. leave the pernil in there all day. preferably for about 6-8 hours. at the end of those 6-8 hours, uncover the pernil. increase heat to 400 degrees again for 20 minutes, or until the skin on top is crispy. if you DONT have time: preheat your oven to 400. put your pernil in uncovered for 20 minutes. put aluminum foil on and reduce heat to 350 degrees. leave the pernil in there until your meat thermometer reads 160-170. it would be about 2-4 hours depending on the size f your pernil. uncover you pernil. increase heat to 400 degrees again for 20 minutes, or until the skin on top is crispy. let sit for 20 minutes and dig in. enjoy!!

  • 4. When done to your taste, place roast on a platter and cover with foil to keep warm. Pour juices from crockpot, into a skillet, put some juice in a cup,add a little cool water, and the corn starch...mix well..then add to the cup of juice into the skillet. Stirring and cooking on medium heat, till this lucious gravy is made...YUM!!! Carve roast..serve and enjoy. Some smashed taters and fresh green beans...will round out this glorious meal. This is my recipe. Main foto pinched from Stepoday

Yield 8 servings

Number Of Ingredients 12

1/4 cup black peppercorns
3 tablespoons juniper berries
1 tablespoons coriander seeds
1/2 cup Diamond Crystal or 1/4 cup plus 1 1/2 tsp. Morton kosher salt
3 tablespoons sugar
1 (8-10-pound) skin-on, bone-in pork shoulder (Boston butt)
5 sprigs rosemary
10 garlic cloves, unpeeled, lightly crushed
2 cups dry white wine
Cranberry sauce, cornichons, and whole grain mustard (for serving)
Special Equipment
A spice mill or mortar and pestle

Steps:

  • Finely grind peppercorns, juniper berries, and coriander seeds in spice mill or with mortar and pestle; transfer to a small bowl and mix in salt and sugar.
  • Set blade on a box cutter to about 1/3" (or use a very sharp paring knife or X-Acto knife) and cut long parallel lines into the skin of pork shoulder, spacing about 3/4" apart. You want to cut completely through the fat, getting as close to the meat as possible without slicing into it. Then, using a pair of kitchen shears, snip between rows to create a diamond-shape pattern, spacing about 3/4" apart. Cutting a crosshatch design into the fat will help it cook out and allow the salt and spices to penetrate the meat.
  • Rub entire shoulder with spice mixture, covering any exposed meat and pushing into cuts in fat. Try to get the spices into the fatty layer and not on the surface of the skin, where they may burn as the shoulder roasts. Make sure to use all of the spices, even though it may seem like a lot. Wrap shoulder tightly with plastic and chill at least 3 hours and up to 3 days.
  • Place a rack in lower third of oven; preheat to 225°F. Line a rimmed baking sheet with 2 layers of heavy-duty foil (be generous with the foil unless you really enjoy scrubbing pots and pans after Thanksgiving dinner). Place rosemary sprigs and garlic in the center of baking sheet and set a wire rack on top. Set pork shoulder on rack and transfer to oven. Pour wine and 2 cups water into baking sheet and roast shoulder until meat is pulling away from the bone and skin is very dark, 9-10 hours (overnight is great).
  • Let pork shoulder sit uncovered at room temperature until ready to serve (at least 30 minutes and up to 5 hours).
  • Just before serving, reheat roast in a 350°F-400°F oven to soften fat and warm the surface of the roast (but don't let it take on any more color), 5-10 minutes.
  • Serve warm with cranberry sauce, cornichons, and mustard.

Big Daddy's Rockin' Roast Pork Shoulder image

Show: Paula's Best DishesEpisode: Big Bites I saw this this morning and it looked sooooooo easy and good. I think I'll give it a try Sunday. Instead of making the Sofrito myself I think I'll buy it from the market. I find Adobo salty so I buy the low sodium Adobo.
