Roasted Celeriac with Italian herbs is a simple, tasty side dish that's ready in just 20 minutes with 4 simple ingredients.

1 large celeriac ((celery root))
2 tablespoons olive oil
2 teaspoons Italian herbs
½ teaspoon each salt and pepper

Steps:

  • Preheat the oven to 400°F/200°C
  • Peel the celeriac (it may be easier to use a knife than a vegetable peeler), then chop into chunks.
  • Add the celeriac to a bowl with the remaining ingredients and toss well to coat.
  • Spread into a single layer on a sheet pan and roast in the oven for 15-20 minutes or until golden on the outside and soft and cooked inside.

These spicy fragrant celeriac cubes will serve four as a side dish

85g butter
1 tbsp curry powder
1 tsp black mustard seed
1large celeriac

Steps:

  • Heat the oven to fan 190C/conventional 210C/gas 7. Heat the butter in a small pan, add the curry powder and black mustard seeds then cook for 2-3 minutes until fragrant and bubbling. Peel and dice the celeriac and tip into a roasting tray. Pour over the curried butter, season with salt and pepper and toss together. Roast for 40-50 minutes, shaking the tray every so often, until the celeriac is golden and has taken on the colour of the curry powder.

Give oven chips a new twist - with a helping of celeriac

2 large celeriac (1.3kg/3lb total weight)
3-4 tbsp groundnut or vegetable oil
1 tbsp mild curry powder

Steps:

  • Pre-heat your oven to 230C/ gas 8/ fan 210C. Peel the celeriac, slicing off the top and bottom and sweeping down the sides with a heavy, sharp knife to remove the tough skin. Cut the celeriac into thumb-thick slices and then into fat chips.
  • Bring a very large saucepan of salted water to the boil, throw in the chips and blanch (boil rapidly, uncovered, for 1-2 minutes). Drain the chips and throw back into the saucepan. Add the oil, curry powder and sea salt. Toss until well coated.
  • Spread the chips over a large heavy baking sheet, leaving plenty of space (you may need 2 sheets). Cook them in the oven for about 30-35 minutes.
