Number Of Ingredients 14

1 whole chicken (3 1/2 to 4 pounds)
Salt and freshly ground black pepper
Salt and freshly ground black pepper
4 sprigs fresh rosemary
4 sprigs fresh thyme
1 onion, cut in half
1/2 head garlic
1/2 lemon, cut in half
Olive oil
6 small Yukon gold potatoes, cut in half
6 whole shallots, peeled
2 carrots, peeled and cut on the bias
2 heads escarole, rinsed, and cut into 1 1/2-inch pieces
2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 450 degrees F.
  • Rinse the chicken inside and out and pat dry. Generously sprinkle salt and pepper inside the cavity, and then add the rosemary, thyme, onion, garlic and lemon. Once the herbs are inside the cavity, truss the chicken.
  • Place the chicken in a roasting pan and rub olive oil over the skin. Sprinkle with salt and pepper, and then place in the oven for 15 minutes.
  • After 15 minutes, take the chicken out and add the potatoes, shallots and carrots to the pan. Roast until the juices run clear, another 45 minutes. Remove from the oven and let rest on a carving board for about 10 minutes.
  • While the chicken is resting, remove the vegetables from the pan and drain most of the chicken fat. On medium heat, add the escarole to the pan and saute until wilted halfway. Combine the Dijon mustard, vegetables and escarole into a serving dish. Carve the chicken, place on top and serve.

1 pound white new potatoes, halved (quartered if large)
1 large red onion, cut into eighths
1 head garlic, cloves separated and left unpeeled
6 sprigs thyme
1 lemon, quartered
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. Arrange chicken, potatoes, onion, garlic, thyme, and lemon in a 12-by-16-inch roasting pan. Whisk together oil and vinegar and drizzle over chicken and vegetables. Toss to combine and season with salt and pepper. Turn chicken skin side up. Roast until chicken is browned and cooked through, about 50 minutes.

2 pounds red potatoes (about 6 medium)
2 large sweet red peppers
2 large green peppers
2 medium onions
2 tablespoons olive oil, divided

8 boneless skinless chicken thighs (about 2 pounds)

  • Preheat oven to 450°. Cut potatoes, peppers and onions into 1-in. pieces. Place vegetables in a roasting pan. 1 whole chicken (3 1/2 to 4 pounds)
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1 1/2 pounds Yukon Gold potatoes, cut into 1/2-inch-thick rounds
1 large red onion, cut crosswise into 1/2-inch-thick rounds and separated into rings
1 bunch watercress (3/4 pound), thick ends trimmed
1 tablespoon fresh orange juice

Steps:

  • Preheat oven to 450 degrees, with rack in upper third. Place chicken, breast side down, on a work surface. Starting at thigh end, with kitchen shears, cut along one side of backbone, then the other side. (Discard backbone or freeze it for stock.) Open chicken like a book and flip it over. Press firmly on breastbone (as shown) to flatten. Rub chicken all over with 2 teaspoons oil and season with salt and pepper.
  • Line bottom of a broiler pan with foil. Drizzle foil with 2 teaspoons oil and arrange potatoes in a single layer, turning to coat. Top with onions and season with salt and pepper. Cover vegetables with slotted top of broiler pan and place chicken, breast side up, on top. Roast until chicken is cooked through (a thermometer inserted into thickest part of thigh, avoiding bone, should read 165 degrees), 35 minutes. Let chicken rest 5 minutes before serving.
  • Toss watercress with 2 teaspoons oil and orange juice and season with salt and pepper. Divide potatoes and onions among 4 plates, top with watercress, and serve alongside chicken.

This is a moist and simple way to prepare a roast chicken. It's even better when you add some garlic to the thyme butter!

4 ounces unsalted butter, softened
1 large onion, coarsely chopped
1 teaspoon salt
1/2 teaspoon fresh ground pepper

6 medium potatoes, scrubbed & quartered

Steps:

  • In a skillet, melt 1 T butter over medium heat.
  • Add onion, 1/4 teaspoon salt and a pinch each of pepper and thyme; saute until onion is light brown (about 10 minutes), then remove from the skillet and let cool to room temperature.
  • In small bowl combine remaining 7 tablespoons of butter, 1/4 teaspoon salt, a pinch of pepper, and remaining thyme.
  • Using your fingers, gently loosen the breast, thigh and leg skin of the chicken: place in baking dish.
  • Rub 4 tablespoons thyme butter under the skin and stuff the cavity with browned onion.
  • Seal the cavity, rub skin with 1 tablespoon thyme butter, and arrange potatoes around chicken.
  • Bake chicken at 400 degrees for 1 hour and 15 minutes or until juices run clear when the thigh is pierced.

2 sweet potatoes, sliced very thinly
2 Yukon Gold potatoes, sliced
1 large onion, sliced
1 (2 to 3 pound) roasting chicken
2 tablespoons olive oil, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease the top and bottom of a broiler pan with cooking spray.
  • Layer sweet potatoes, potatoes, and onion slices in the bottom of the broiler pan.
  • Place chicken, breast side down, on a work surface. Cut along both sides of the backbone with kitchen shears from top to bottom; remove backbone. Flip chicken and splay it open. Press firmly onto breasts with your hands to break the breast-bone.

1 (3 1/2-4 lb) cut up whole chickens
1/4 cup unsalted butter, softened
3 tablespoons chopped fresh thyme
1 teaspoon dried poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons extra-virgin olive oil
2 large onions, cut into 1 inch wedges
4 large garlic cloves, minced
2 lbs sweet potatoes, peeled, sliced crosswise (3 to 4 potatoes)
1 tablespoon lemon juice

Steps:

  • Heat oven to 350°F Cut round of parchment paper to fit diameter of Dutch oven. With kitchen shears, remove back rib bones from breast and thigh portions of chicken, (This will make the pieces smaller and easier to fit into the pot.) Stir butter, thyme, poultry seasoning, salt and pepper in small bowl. Coat chicken with half of the butter mixture.
  • Heat Dutch oven over medium-high heat until hot. Add oil; heat until hot. Cook chicken, in batches, 5 to 7 minutes or until golden brown, turning once and adjusting heat as necessary. Remove chicken.
  • Add onions to Dutch oven; cook and stir over medium heat 1 minute. Add garlic; cook and stir 30 seconds or until fragrant. add sweet potatoes; cook and stir 1 minute. Stir in remaining butter mixture until melted; cook 1 minute. Nestle chicken in one layer in vegetables. Press parchment paper round over chicken; cover with lid.
  • Bake 50 to 60 minutes or until chicken is no longer pink in center and vegetables are tender. Remove and discard parchment paper. Remove chicken and vegetables.
  • Skim off any fat that rises to surface of sauce; bring sauce to a boil over high heat. Stir in lemon juice; boil 3 to 4 minutes or until slightly thickened. Serve chicken alongside vegetables; spoon sauce over chicken.
