This recipe is perfect for a potluck. It's pinwheel slices offer a great display on any serving tray. If you like roast beef and cheddar 2 bite snack this recipe is for you.

4 ounces cream cheese
1/4 cup sour cream
2 teaspoons chopped chives
1 1/2 teaspoons horseradish
1 teaspoon prepared mustard
8 ounces shaved deli roast beef
1 1/2 cups grated cheddar cheese
4 flour tortillas, bread

Steps:

  • Mix 5 first ingredients together in a bowl.
  • Spread cream cheese mixture on 4 tortilla bread up to edges.
  • Layer shaved deli roast beed over cream cheese spread leaving 1/4 inch on sides.
  • Spread cheddar cheese over roast beef.
  • Roll each tortilla jelly roll style and wrap with plastic wrap and refrigerate for about 1 hour. Take out and slice each tortilla ends and discard.
  • Slice each tortilla in 10 pieces. Lay on tray with tooth picks to hold the overlaying tortilla in place.

1 (8 ounce) package cream cheese, (softened)
2 tablespoons prepared horseradish
1 1/2 tablespoons Dijon mustard
6 (10 inch) flour tortillas
2 cups spinach leaves, stems removed
3/4 lb thinly sliced deli roast beef
4 ounces (1 cup) shredded cheddar cheese

Steps:

  • In a bowl, mix together cream cheese, horseradish, and Dijon mustard.
  • Assemble pinwheels by spreading a thin layer of the cream cheese mixture over each tortilla. Then layer spinach, roast beef, and cheese. Tightly roll up each tortilla and wrap it with the foil or plastic wrap.
  • To serve, slice each roll into one-inch slices.

2 (8 ounce) packages fat-free cream cheese, softened
3 ½ tablespoons prepared horseradish
3 tablespoons Dijon-style mustard
12 (12 inch) flour tortillas
30 spinach leaves, washed with stems removed
1 ½ pounds thinly sliced cooked deli roast beef
8 ounces shredded Cheddar cheese

Steps:

  • Beat the cream cheese, horseradish, and mustard together in a bowl until well blended.
  • Spread a thin layer of the cream cheese mixture over each tortilla. Arrange spinach leaves evenly over the tortillas. Place two slices of roast beef over the cream cheese. Sprinkle with Cheddar cheese, dividing evenly between tortillas. Starting at one end, gently roll up each tortilla into a tight tube. Wrap with aluminum foil or plastic wrap to keep the rolls tight. Refrigerate at least 4 hours.
  • To serve for lunch, unwrap and slice into 2 or 3 pieces. Only cut the rolls you will be using that day so the others do not dry out. To serve for parties, unwrap and slice the rolls diagonally into 1 inch sections, and arrange on a serving platter.

3/4 pound sliced deli roast beef, finely chopped
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 package (6-1/2 ounces) garlic-herb spreadable cheese
1 cup shredded smoked Gouda cheese
1/4 cup finely chopped red onion
2 tubes (8 ounces each) refrigerated crescent rolls

Steps:

  • Preheat oven to 375°. In a small bowl, mix the first 5 ingredients until blended. On a lightly floured surface, unroll 1 tube of crescent dough into 1 long rectangle; press perforations to seal., Spread half the roast beef mixture over dough. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Using a serrated knife, cut roll crosswise into twenty-four 1/2-inch slices. Place on parchment-lined baking sheets, cut side down. Repeat with remaining crescent dough and roast beef mixture., Bake 12-14 minutes or until golden brown. Refrigerate leftovers.

2 Old El Paso™ flour tortillas for burritos (from 11.5-oz package)
1 cup fresh spinach
1/4 lb thinly sliced deli roast beef
6 slices (3/4 oz each) provolone cheese
1 medium tomato, thinly sliced
24 toothpicks

Steps:

  • Mix mayonnaise and garlic in small bowl. Spread mixture evenly over tortillas.
