1/4 cup shortening
3 lbs rump roast, Boneless
2 cups onions, Sliced
1/4 cup unbleached flour
2 tablespoons salt
2 tablespoons sugar
pepper
2 teaspoons dry mustard
1/2 teaspoon celery seed
1/4 cup water
1 lb tomatoes, 1 can

Steps:

  • Melt shortening in a Dutch oven.
  • Add the meat and brown on all sides.
  • Place the onions on top of the meat.
  • Mix the flour and seasonings with 1/4 c water.
  • Blend with the tomatoes and add the misture to the dutch oven.
  • Bake at 325 degrees F about 2 hours, until the meat is fork-tender.
  • Serve with oven-browned potatoes.

1 1/2 cups onions, Minced
1/4 lb mushroom, Sliced
2 tablespoons vegetable oil
1 lb beef, Ground, Coarse Grind (Ground beef should only be ground once and be the leanest you can get.)
1 cup beef broth
1/2 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
3 medium potatoes
3 tablespoons butter
2 large eggs
1/2 cup breadcrumbs, Fine, Dry

Steps:

  • In a frypan saute onions and mushrooms in vegetable oil until soft.
  • Add ground beef; saute mixture 3 to 4 minutes.
  • Stir in broth; bring to a simmer.
  • Add worcestershire sauce, 1/2 t salt, and 1/4 t pepper.
  • Peel the potatoes and boil them in salted water until tender, about 30 minutes.
  • Drain and put through a food mill or grinder.
  • Beat in 2 T butter, 1/2 t salt, 1/4 t pepper.
  • Adjust seasonings to taste.
  • Beat in eggs.
  • Layer mixtures in a 1 1/2-quart buttered baking dish.
  • Spread 1/3 of potatoes on bottom of dish.
  • Top with 1/2 of the meat mixture.
  • Continue with layers, ending with a layer of potatoes.
  • Sprinkle the top with bread crumbs, and dot with remaining butter.
  • Bake at 375 degrees for 45 minutes and then at 400 degrees for 10 minutes more.

1-1/2 pounds beef stew meat, cut into 1-inch cubes
1/2 teaspoon salt, divided
6 tablespoons all-purpose flour, divided
1/2 teaspoon smoked paprika
1 tablespoon canola oil
3 tablespoons tomato paste
2 teaspoons herbes de Provence
2 garlic cloves, minced
2 cups dry red wine
2 cups beef broth
1-1/2 teaspoons minced fresh rosemary, divided
2 bay leaves
3 cups cubed peeled potatoes
3 cups coarsely chopped onions (about 2 large)
2 cups sliced carrots
2 tablespoons cold water
2 tablespoons balsamic or red wine vinegar
1 cup fresh or frozen peas
Additional fresh rosemary, optional

Steps:

  • In a small bowl, toss beef and 1/4 teaspoon salt. In a large bowl, combine 4 tablespoons flour and paprika. Add beef, a few pieces at a time, and toss to coat. , In a Dutch oven, brown beef in oil over medium heat. Stir in tomato paste, herbes de Provence and garlic; cook until fragrant and color starts to darken slightly. Add wine; cook until mixture just comes to a boil. Simmer until reduced by half, about 5 minutes. Stir in broth, 1 teaspoon rosemary and bay leaves. Bring to a boil. Reduce heat; cover and simmer until meat is almost tender, about 1-1/2 hours., Add potatoes, onions and carrots. Cover; simmer until meat and vegetables are tender, about 30 minutes longer., Discard bay leaves. In a small bowl, combine remaining 1/2 teaspoon rosemary, remaining 1/4 teaspoon salt and remaining 2 tablespoon flour. Add cold water and vinegar; stir until smooth. Stir into stew. Bring to a boil; add peas. Cook, stirring, until thickened, about 2 minutes. If desired, top with additional fresh rosemary.
