SPINACH, RICOTTA, AND PROSCIUTTO CANNELLONI



Spinach, Ricotta, and Prosciutto Cannelloni image

Yield Serves 6 as an entrée

Number Of Ingredients 9

two 10-ounce boxes frozen chopped spinach
a 15-ounce container ricotta cheese
1 1/2 cups freshly grated Parmesan cheese (about 5 ounces)
3 large eggs
1/4 pound thinly sliced prosciutto, chopped fine
1/4 cup minced fresh parsley leaves (preferably flat-leafed)
ten 7-inch squares instant (no boil) lasagne*
about 6 cups Winter Tomato Sauce
*available at specialty foods shops and many supermarkets

Steps:

  • Cook spinach according to package instructions and drain well. Squeeze spinach dry by handfuls and chop fine. In a bowl stir together spinach, ricotta, 1 cup Parmesan, eggs, prosciutto, parsley, and salt and pepper to taste.
  • Preheat oven to 350°F. and oil a 13-by 9-inch baking dish.
  • In a large bowl of cold water soak lasagne squares until softened, about 15 minutes. Drain squares and pat dry between paper towels.
  • Spread 1 cup of tomato sauce on bottom of prepared dish. Working with 1 square at a time, spread about 1/3 cup filling along one edge and roll up to enclose filling, leaving ends open.
  • Arrange cannelloni as formed, seam sides down, in one layer in dish. Spoon 2 cups sauce evenly over cannelloni, covering them, sprinkle with remaining 1/2 cup Parmesan.
  • Bake cannelloni in middle of oven 30 minutes and let stand 10 minutes before serving.
  • Serve cannelloni with remaining tomato sauce, heated.

1 recipe , cut into 4-inch squares for cannelloni
1 recipe (approximately 3 cups) Fresh Tomato Sauce or Tuscan Tomato Sauce (see Sauces)
salt
1 pound fresh mozzarella cheese
1 (16-ounce) container whole or part-skim ricotta cheese
1/2 cup chopped imported Italian prosciutto (about 2 ounces)
1 large egg, beaten
3/4 cup freshly grated Parmigiano-Reggiano
Freshly ground black pepper

Steps:

  • 1 Prepare the pasta and sauce. Lay out some lint-free kitchen towels on a flat surface. Have ready a large bowl of cold water. Bring about 4 quarts of water to a boil. Add salt to taste. Add the pasta squares a few pieces at a time. Cook the pasta until tender but slightly underdone. Scoop the pasta out of the water and place it in the cold water. When cool enough to handle, lay the pasta sheets out flat on the towels, which can be stacked one on top of the other. Continue cooking and cooling the remaining pasta in the same way. 2 In a large bowl, combine the mozzarella, ricotta, prosciutto, egg, and 1/2 cup of the Parmigiano. Mix well and add salt and pepper to taste. 3 Spoon a thin layer of sauce in the bottom of a large baking dish. Spread about 2 tablespoons of the filling on one end of each pasta square. Roll up the pasta, starting with the filled end, and place the rolls seam-side down in the prepared pan. 4 Spoon a thin layer of sauce over the pasta. Sprinkle with the remaining Parmigiano. 5 Place a rack in the center of the oven. Preheat the oven to 375°F. Bake 30 minutes or until the sauce is bubbling and the cheeses are melted. Serve hot. This is a recipe from Rachel Ray. It is so decadent, even my 16 year old son can only eat one, maybe two! Even though it's rich and wonderful, it's super easy, especially because of the use of eggroll wrappers, instead of manicotti pasta!

4 tablespoons unsalted butter
4 tablespoons flour
1 pint heavy cream
1/2 teaspoon salt
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 large egg
8 refrigerated egg roll wraps
8 slices deli ham
1 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees.
  • In small saucepan, heat butter, over medium heat.
  • Whisk in flour until smooth.
  • Slowly whisk in cream, and cook, stirring continuously, for about 5 minutes, until thickened.
  • Remove mixture from heat, and stir in salt.
  • In a medium bowl, combine ricotta, mozzarella, and egg.
  • Spread a thin layer (about 1 1/2 cups) of sauce in the bottom of a 9X9 baking dish.
  • Lay an eggroll wrapper on a work surface.
  • Spread with about 3 tablespoons ricotta mixture, top with slice of ham, then roll up, jellyroll style.
  • Repeat with the remaining wrappers, and place, seamside down, in dish.
  • Spoon remaining sauce over canneloni, top with Parmesan, and bake for 20 minutes, until golden and bubbly.
