It is a great next day, leftover user breakfast that is hearty and fast! My brother came up with this recipe and it has become a breakfast mainstay when we get together! Serve with bacon, toast and fruit. Yummy!

5 eggs, beaten
2 tablespoons milk
1 onion, chopped
2 slices cooked ham, chopped
1 cup shredded Cheddar cheese
1 to taste salt and pepper to taste
⅛ teaspoon garlic powder, or to taste
2 ½ tablespoons butter

Steps:

  • In a large bowl, beat together eggs and milk. Stir in onion, ham, cheese, salt, pepper and garlic powder.
  • Melt butter in a large frying pan or skillet over medium high heat. Add eggs and cook, without stirring, until eggs begin to set. At that point, stir the eggs until roughly scrambled. Keep doing this until eggs are fully cooked, about 10 to 15 minutes. Serve warm.

4 cups quick-cooking oats
1 cup packed brown sugar
1 teaspoon salt
1-1/2 cups chopped walnuts
1 cup sweetened shredded coconut
3/4 cup butter, melted
3/4 cup orange marmalade

Steps:

  • In a large bowl, combine the oats, brown sugar and salt. Stir in remaining ingredients. Press into a greased 15x10x1-in. baking pan. Bake at 425° for 15-17 minutes or until golden brown. Cool on a wire rack.

These are a great way to start your day--they aren't crumbly, so these bars are the perfect "on-the-go" breakfast for little hands to grab on their way to school, or for bigger hands on their way to the office!

2 eggs
3/4 cup brown sugar
1/2 cup vegetable oil
1/4 cup evaporated milk
1 teaspoon vanilla extract
2 1/2 cups old fashioned oats
1/2 cup whole wheat flour
1/2 cup flour, all purpose
1/2 teaspoon salt
3/4 cup raisins
1/2 cup walnuts, chopped

Steps:

  • In large bowl, mix eggs, sugar, oil, milk, and vanilla.
  • Seperately, combine flour, oats, and salt, then add to egg/sugar mixture.
  • Stir in raisins and walnuts.
  • Drop by tablespoonfuls onto parchment lined baking sheet, and bake at 350 degrees for 12-14 minutes, or until set.
  • Optional: press mixture into greased or parchment lined baking dish, and bake at 350 degrees for 15-20 minutes or until set, cutting into bars for serving.
