ASPARAGUS AND HAM CASSEROLE
I created this casserole one day while trying to find a good recipe for leftover ham. Instead of resorting to scalloped potatoes and ham, or ham and noodles, I tried asparagus. Everyone liked it so well, I've made it ever since.-Helen Ostronic, Omaha, Nebraska

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender; drain well. , In a greased 2-1/2-qt. baking dish, combine the asparagus, ham, rice, celery and lemon-pepper; set aside. In a large saucepan, combine soup and broth; add cheese. Cook and stir over medium heat until cheese is melted. Pour over ham mixture. , Combine crumbs and butter; sprinkle over top. Bake, uncovered, at 350° for 35 minutes or until heated through.

- Cook noodles according to package directions. Meanwhile, in a small bowl, combine the ham, cheese, soup, milk, onion, 1 teaspoon butter, poppy seeds and seasonings. Drain noodles; add to ham mixture., Transfer to a 1-1/2-qt. baking dish coated with cooking spray. Combine bread crumbs and remaining butter; sprinkle over casserole. Bake, uncovered, at 325° for 30-35 minutes or until heated through.

Even if you think you don't like asparagus you have to try this. It is a wonderfully easy quiche-like casserole to throw together for breakfast. This can be prepared the night before, covered, and put in the refrigerator overnight. Just be sure to allow extra cook time.

- Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 9x13 inch baking dish.
- Mix the ham, onion, red bell peppers, and asparagus in the prepared baking dish. In a large bowl, beat together the eggs, milk, flour, Parmesan, tarragon, salt, and pepper. Pour over the ham mixture.

- Heat oven to 400°F. Spray 2 (8-inch square) glass baking dishes with cooking spray. Cook and drain noodles as directed on package, using minimum cook time.
- In large bowl, stir together soup, cream cheese and milk. Stir in cooked noodles, ham, broccoli, asparagus and carrots. Divide half of the mixture between baking dishes. In medium bowl, mix mozzarella and Cheddar cheeses. Sprinkle half of the cheese mixture over casseroles. Top with remaining ham mixture. - Preheat oven to 325 degrees.
- Cook noodles according to package directions.
- Meanwhile, in a large mixing bowl combine both jars of cheese sauce, sour cream, and pepper (if desired) and stir until well blended.
- Drain the cooked noodles and gently stir into the cheese sauce until well coated.
- Stir the ham into the noodle mixture.
- Pour into an ungreased 3 quart casserole dish and set aside.
- After melting the butter add the crushed crackers and mash with a fork until completely coated with butter.
- Spread the buttered cracker crumbs evenly over top of the ham and noodle mixture.
- Bake, uncovered, at 325 degrees for about 35 minutes or until cracker crumbs are evenly browned and the cheese sauce is bubbling through. Serve immediately.

- In a saucepan, combine cream of celery soup, milk, onion, marjoram, and rosemary; heat over medium heat just to boiling. Add cheese; stir until mixture is smooth and cheese is melted.
- In a lightly buttered 1 1/2 quart casserole, layer 1/3 of the dry stuffing mix; top with half of the ham, half of the asparagus, and half of the cheese sauce.
- Repeat layers. Mix remaining 1/3 of the stuffing mix with 1 tablespoon melted butter; sprinkle over top. Bake at 350° for 30 to 40 minutes, or until casserole is hot and bubbly.

- Preheat oven to 350°F.
- Cook noodles according to package directions.
- Drain and pour into large mixing bowl.
- Saute celery and onions in skillet with oil over low heat until vegetables are translucent, not browned, about 5 minutes.
- Remove from heat and stir into cooked noodles.
- Stir in ham, soup, mushrooms, bouillon or broth, cheese, Worcestershire sauce, thyme, marjoram and Tabasco, if using.
- Pour mixture into an ovenproof casserole dish.
- In a small dish, stir together melted butter or margarine and bread crumbs until well blended.
- Sprinkle between your fingers over the surface of the casserole.
- Bake casserole in oven preheated to 350°F for 40 minutes.
NOODLE, ASPARAGUS AND HAM CASSEROLE
This recipe is very easy and you can use homemade of store bought Hollandaise sauce or you can use Alfredo sauce. Also any meat you desire can be used or veggie too..I have use sweet potato (cooked and diced and summer squash). My family enjoyed this and I hope you like it...This is also good cold.....

- Cut up asparagus in bite size pieces, removing top and breaking off bottom parts...make a few ribbons too.
- Place onions and asparagus in microwave for 2 minutes. Melt butter in hot skillet add oil then the microwaved veggies, sprinkle with the sugar. cook to glaze slightly.
- Add cooked noodles, and ham, stir to blend. Transfer mixture to a large bowl and pour the Hollandaise sauce over all . Sprinkle with Parmesan cheese. Stir well.
- Pour into large greased casserole and sprinkle the eggs over top then sprinkle with the paprika and basil.
- Heat briefly in microwave , if necessary. Enjoy. Note: More sauce may be needed as you know the pasta soaks it up quite a bit,if left overnight or out of the freezer....

Great way to use up leftover rice--I modified a recipe I found on the web and ended up with a real winner. Also great the next morning with scrambled eggs. I have a feeling that the right combination of seasonings could replace the cream of celery soup--let me know if you figure it out!

- Preheat oven to 450°.
- Place bread in a food processor, and pulse 10 times or until coarse crumbs form to measure 1/2 cup.
- Cook pasta in boiling water 7 minutes, omitting salt and fat. Add asparagus; cook 1 minute. Drain.
- Lightly spoon the flour into a dry measuring cup, and level with a knife. Place flour, thyme, salt, and pepper in medium bowl; gradually add milk and broth, stirring with a whisk until well-blended. Melt the butter in a medium saucepan over medium-high heat. Add the onion; saute 4 minutes. Add milk mixture; cook until thick (about 4 minutes), stirring constantly. Remove from heat, and stir in juice. I have no idea where this came from, but I'm pretty sure I tweaked it from some cookbook or another. This is not only easy, it's incredibly tasty. Not too heavy, and doesn't take long in the oven so it's not bad for a summertime casserole.

- Cook pasta in boiling water seven minutes.
- Add asparagus; cook an additional 2-3 minutes; drain.
- Meanwhile, melt butter in large frying pan and preheat oven to 450°F.
- Add onion to butter and saute 4-5 minutes, just until softened.
- Combine flour, thyme, salt, and pepper in a bowl.
- Add milk and chicken broth; combine well with a whisk.
- Add milk mixture to frying pan.
- Cook over medium heat, stirring frequently, until thickened (about 5 minutes).
- Remove sauce from heat; stir in lemon juice.
- Combine all ingredients except parmesan and bread crumbs in a large casserole dish.
- Combine parmesan and bread crumbs, and sprinkle over top of casserole.
- Bake at 450F for approximately 10 minutes, until casserole is bubbly and the bread crumbs are golden brown.
