Here's a delicious dish that is very easy to make- and fast, too. The best thing, though, is that you mix everything in one bowl!

1 pound lean ground beef (90% lean)
3 cups canned diced tomatoes, undrained
1 medium green pepper, chopped
1 cup uncooked long grain rice
1 large onion, chopped
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine all ingredients. Place in a greased 2-qt. baking dish. Cover and bake at 400° for 1-1/2 hours, stirring once or twice. Uncover during the last 15 minutes to brown.

This is like Spanish Rice, but includes cheese and makes for more protein. kids love it. There is another version with chicken. Just saute about a pound of boneless, chopped chicken breasts, then proceed with the recipe. At the end, instead of baking, leave everything in the saute pan, add the rest of the sauce and the cheese. Then cover the pan and let it sit until the cheese melts.

1/4 cup butter or 1/4 cup margarine
1 medium onion, chopped (3/4 cup, approx.)
1 garlic clove, minced
1/2 green pepper, chopped
1 cup rice, uncooked
1 (15 ounce) can tomato sauce
1 teaspoon salt
pepper
1 1/2 cups grated cheese (cheddar, jack, etc.)
1 1/2 cups boiling water

Steps:

  • Saute onion, garlic, green pepper and rice in the butter until lightly brown.
  • Add all but 1/2 cup of tomato sauce.
  • Then add boiling water, salt& pepper.
  • Simmer, covered, until liquid is absorbed (about 20 minutes.).
  • Line a greased casserole dish with half the mixture.
  • Sprinkle 1 cup of cheese, then add the rest of the tomato sauce.
  • Add the rest of the rice and the last of the cheese.
  • Bake at 400 degrees for 15 minutes.

8 (5 ounce) bone-in, skinless chicken thighs
freshly cracked black pepper to taste
3 tablespoons butter, divided
2 tablespoons olive oil
2 tablespoons dry sherry
1 medium yellow onion, diced
1 medium green bell pepper, diced
2 cloves garlic, thinly sliced
1 cup uncooked long-grain white rice
1 ¾ cups reduced-sodium chicken broth
1 large bay leaf
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch saffron
2 medium tomatoes, cut into 1/4-inch slices
½ cup finely grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Trim excess fat from thighs. Wash and pat dry. Season moderately with pepper.
  • Heat 2 tablespoons butter and olive oil in a large Dutch oven over medium heat. Add chicken thighs and cook until well browned, 3 to 5 minutes per side. Pour sherry over top. Remove chicken to a plate. Drain excess fat, leaving about 2 tablespoons drippings in the skillet.
  • Add onion and bell pepper to the skillet and saute over medium heat until onions are translucent and peppers have softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add rice and saute for 2 minutes. Add chicken stock, bay leaf, salt, pepper, and saffron; bring to a boil.
  • Remove from the heat and lay chicken thighs in a single layer over the rice mixture.
  • Bake, covered tightly, in the preheated oven for 45 minutes.
  • When the casserole has about 5 minutes left, melt remaining tablespoon butter in a skillet. Add tomato slices and saute until heated through.
  • Place a tomato slice on top of each chicken thigh, then sprinkle Parmesan cheese over top. Return to the oven and bake, uncovered, until chicken juices run clear, about 15 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Let rest for at least 15 minutes before serving.

1 cup long-grain rice
1 cup tomatoes, cubed, peeled
1 cup onion, chopped
1 tablespoon chicken stock powder
1 teaspoon curry powder
2 cups water
50 g butter
1/3 cup celery, chopped
1/3 cup red capsicum, chopped (a mix of the vegetables to total one cup)
1/3 cup green pepper, chopped (a mix of the vegetables to total one cup)

Steps:

  • Mix all ingredients together and put into a buttered casserole dish with a tight fitting lid.
  • Bake at 180 C 1 to 1 1/4 hours, stirring after 30 minutes.
  • This can be all mixed together and left to stand until you are ready to cook it.
  • If fresh tomatoes are not available or convenient use canned, replace some to the water with the juice from the can. (I think it has a better flavour using canned).

4 tablespoons butter
1/2 cup uncooked rice
1 3/4 cups canned tomatoes, drained
1 cup juice, from canned tomatoes
2 teaspoons chopped parsley
1 1/2 teaspoons salt
1/2 teaspoon pepper
4 tablespoons grated parmesan cheese
chopped chives

Steps:

  • In a skillet, saute the rice in butter until the rice is golden brown; place in crock pot.
  • Pour the tomato liquid, tomatoes, parsley, salt and pepper into the crock pot; mix well.
  • Cover and cook on LOW setting for 6 to 8 hours.
  • Before serving, sprinkle with grated Parmesan cheese and chopped chives.

1/4 c butter
1 medium onion, chopped
1 garlic clove, minced
1/2 green bell pepper, chopped
1 c rice, uncooked
16 oz tomato sauce
1.5 c water, boiling
1 tsp salt
pinch pepper
1/3 c olives, chopped
1.5 c cheddar cheese, grated

Steps:

  • 1. Heat the butter in a heavy saucepan, add the onion, garlic, green pepper and rice and cook, stirring, until lightly browned.
  • 2. Reserve one-half cup tomato sauce and add the remainder to the rice mixture.
  • 3. Add the boiling water and salt and pepper to taste; simmer, covered, until the liquid has been absorbed.
  • 4. Line a greased one-quart casserole with half the rice, and sprinkle with the olives and one cup of the cheese; top with the remaining rice.
  • 5. Pour the reserved tomato sauce over the top, sprinkle with the remaining cheese and bake in a hot oven 400 degrees until hot and browned.
