YOUR FAVOURITE CEREAL MUFFINS
I found this recipe many years ago in Chatelaine magazine. It is a great way to use up dry cereal. I have made it with rice krispies, Honey Bunches of Oats and granola and each time they turned out great.

Steps:
- Preheat oven to 375 degrees F.
- Grease 12 muffin cups or line with paper cups.
- In a large mixing bowl, use a fork to stir the flour with the sugar, baking powder, cinnamon, nutmeg and salt.
- Make a well in the centre.
- In a small bowl, whisk the milk with the egg and vanilla.
- Whisk in the butter.
- Peel the apple, if you wish, and coarsely chop.
- Pour the milk mixture into the centre of the dry ingredients and stir just until combined.
- Stir in the apple, raisins and cereal.
- Place the batter in the muffin cups.
- Sprinkle with extra cereal or cinnamon sugar if desired.
- Bake in the centre of the preheated oven for 25 to 30 minutes or until a toothpick inserted in the centre of a muffin comes out clean.
- Remove the muffins from the pan and cool on a wire rack.
- Serve right away or place in a plastic bag and refrigerate for up to 3 days or freeze.

- Preheat oven to 425 degrees F. Lightly grease a 6 cup muffin tin, set aside.
- In a one quart jar place all ingredients; mix well. Pour into prepared muffin tin.
- Bake for 17 - 20 minutes. Allow muffins to cool for 5-8 minutes before removing from tin.
- Yield: 6 muffins.

CLASSIC CRISPY RICE TREATS
Gooey marshmallows and crispy rice cereal come together in this recipe for the all-original favorite. We added a splash of vanilla extract and pinch of salt to give these sweet treats a palatable punch. Cut into squares, store between a few pieces of wax paper (to prevent any sticking) and enjoy for up to three days.

Steps:
- Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
- Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
- Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
- Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.

Wonderful breakfast, brunch, or mid-morning snack. This recipe is very versatile. Any kind of cereal works, and you can substitute dried fruit and/or nuts for part of the cereal. If using a cooked, hot cereal like oatmeal, combine with wet ingredients instead of dry.

- Preheat oven to 350°F.
- Grease 12 medium sized (2 3/4" diameter) muffin cups.
- In a mixing bowl, beat egg and whisk together with oil, milk and honey.
- In a large bowl combine the dry ingredients; mixed well.
- Pour the wet ingredients into the dry and stir just until flour is moist (batter should be lumpy).
- Fill muffin cups 2/3 full with the batter, and bake for 20-25 minutes (until golden brown and a toothpick comes out clean when inserted).
- Remove from pan immediately.
