CUBAN BLACK BEANS AND CUMIN SCENTED RICE



Cuban Black Beans and Cumin Scented Rice image

1 (1-pound) bag dried black beans
4 quarts water
1 smoked ham hock
1 1/3 cups olive oil
2 onions, peeled and finely chopped
12 cloves garlic, peeled, finely chopped
12 small sweet chile peppers, seeded and finely chopped (or your choice combo of hot peppers)
2 bay leaves
Salt and freshly ground pepper
4 tablespoons sugar
1/2 teaspoon whole dried oregano, crushed
1 cup dry red wine
3 tablespoons red wine vinegar
4 teaspoons dried oregano
1 teaspoon ground cumin
Cumin Scented Rice, recipe follows

Steps:

  • Pick over beans, discarding any shriveled ones of foreign particles. Wash well and soak, covered in water, for 4 hours. Drain beans and place in 4 quarts of water in a soup pot. Add ham hock to the beans. Bring rapidly to a boil. Reduce heat to moderate and simmer beans until tender, about 35 to 45 minutes.
  • In a saute pan, heat 1 and 1/3 cups olive oil. Add the chopped onions and garlic to the pan and saute over low heat. Add the chopped chiles and season with salt and pepper. Add the bay leaves and cook for about 10 minutes, stirring occasionally.
  • Add 1 cup of drained black beans to the onion mixture in the saute pan, and mash thoroughly with rest of the ingredients in the skillet. Stir in the sugar and the dried oregano.
  • Add the bean and onion mixture to the bean pot. Cover, and simmer for 1 hour, at moderate heat. Add red wine, vinegar, 4 teaspoons dried oregano and cumin. Uncover and cook until sauce thickens. Serve hot.
  • 1 1/2 tablespoons butter
  • 1 tablespoon cumin seeds
  • 3 cups uncooked basmati rice
  • 2 small limes, juiced
  • 6 cups cold water
  • 2 teaspoons salt
  • Heat butter over medium heat in a large saucepan. When butter is melted, add cumin seeds and saute for 1 minute. Stir in the rice and cook for 2 minutes.
  • Turn the heat to high and add the lime juice, water and salt. Mix well. Bring to boil on high heat. Reduce heat and cook covered on low for 15 minutes until water evaporates.

1 tablespoon canola oil
1 teaspoon minced garlic

1 cup long-grain rice

1 (15 ounce) can black beans, rinsed and drained

Steps:

  • Pour chicken broth into a 4-cup liquid measuring cup. Add water to measuring cup until the liquid measures 3 cups. Set aside.
  • Heat oil in a large saucepan over medium-high heat. Add garlic and cumin; cook for 30 seconds. Stir in rice. Add chicken broth and water mixture, salt, and pepper; bring to a boil. Reduce heat and simmer, covered, until rice is tender, about 20 minutes.
  • Stir in beans. Cover and heat until beans are hot, about 2 minutes more.

2 tablespoons olive oil
1 onion (5 ounces), chopped (about 1 cup)
2 or 3 large garlic cloves, peeled, crushed and chopped (2 teaspoons)
2 cups long-grain converted rice
1 tablespoon ground cumin
4 cups unsalted, homemade chicken stock or canned low-salt chicken broth
Salt to taste

Steps:

  • Heat the oil in a heavy saucepan with a lid. When the oil is hot, but not smoking, add the onions and saute them for 30 seconds.
  • Add the garlic; then, stir in the rice and cumin. Stir well to coat the grains of rice with the oil, and then add the chicken stock or broth. Bring to a boil, uncovered, stirring occasionally, over high heat. Then, reduce the heat to low, cover, and cook for 20 minutes. The liquid should be completely absorbed by the rice, which should be tender.
  • Fluff the rice with a fork and serve it with the cusk.

Chicken stock
1 1/2 pounds flank steak
1 tablespoon whole cumin seeds or 1 rounded tablespoon ground cumin
1 tablespoon whole Sichuan peppercorns or 2 teaspoons ground Sichuan pepper
2 tablespoons ginger and garlic stir-fry oil or peanut oil
2 tablespoons ginger and garlic stir-fry oil or peanut oil
4 cloves garlic, chopped
2 to 3 small dried whole red chiles* or 1 tablespoon chile paste, such as sambal oelek
2 green bell peppers or large green mild frying peppers, seeded and thinly sliced
One 2- to 3-inch stick cinnamon
One 1-inch piece fresh ginger, peeled and ground
1 portobello mushroom, cleaned and sliced
1 onion, chopped
1/2 cup dry sherry
1 bunch scallions or spring onions, cut on the bias
1/4 cup tamari or aged soy sauce
Handful cilantro leaves

Steps:

  • Cook the rice using chicken stock according to the package directions. Wait to heat the pan for the stir-fry until the rice is 10 minutes from being ready to eat.
  • Cut the meat lengthwise into 2 thin steaks, then wrap in plastic wrap and place in the freezer for 10 minutes to firm it up for thin slicing.
  • Toast the cumin and peppercorns in small skillet then grind in a spice mill.
  • Very thinly slice the meat on an angle, against the grain into bite-size pieces.
  • Heat a large skillet over high heat with the stir-fry oil. When the oil ripples and smokes, add the meat and cook until browned. Remove the meat and add the garlic, chiles, peppers, cinnamon, ginger, mushrooms, onions and toasted spices. Stir-fry until tender-crisp, 2 to 3 minutes. Add the sherry. Add the scallions to the skillet with the beef, then toss with the soy sauce and cilantro. Serve with rice.

Steps:

  • Bring rice and 1 cup water to a boil in a small saucepan. Cover, reduce heat to low, and cook until water is absorbed and rice is tender, 25-30 minutes.
  • Meanwhile, combine quinoa, bay leaf, 1/4 teaspoon salt, and 2 cups water in a medium saucepan. Bring to a boil. Cover, reduce heat to low, and simmer until quinoa is tender, about 15 minutes. Drain; return quinoa to hot saucepan. Cover and let sit for 15 minutes. Discard bay leaf, fluff quinoa with a fork, and transfer to a large bowl.

Steps:

  • In a large Dutch oven or heavy pot, heat 2 tablespoons oil over medium. Add half the chicken, season with salt and pepper, and cook, turning halfway, until browned, 4 to 6 minutes. Transfer chicken to a plate. Repeat with remaining chicken.
  • Add butter, shallots and remaining oil and cook, stirring, until butter is melted and shallots are softened, about 2 minutes. Add the ginger, garlic, mustard seeds, cumin seeds and cardamom (if using), and stir until very fragrant, 2 minutes.

1 teaspoon green cardamom pods
1 teaspoon cumin seeds
1/2 cup sunflower or grapeseed oil

Steps:

  • In a large pot with a lid, bring 8 1/2 cups water to a boil over high heat. Meanwhile, drain the rice in a large fine-mesh sieve or colander and rinse under cold water until the water runs clear. Add the rice and 1 tablespoon kosher salt (or 1 1/2 teaspoons coarse kosher salt or fine salt) to the boiling water. Boil uncovered, until the grains seem to have doubled in length, 5 to 6 minutes.
  • Meanwhile, in a small saucepan or kettle, bring 1 1/2 cups of water to a boil and keep at a simmer. Place the cardamom pods on a cutting board and lightly crack them with the side of a large knife.
  • Drain the parboiled rice in the sieve or colander and return the rice to the pot. Add the cracked cardamom pods and any seeds that may have popped out, the cumin seeds and 1 tablespoon kosher salt (or 1 1/2 teaspoons coarse kosher salt or fine salt). Mix gently to combine, taking care to not break the rice grains. Drizzle with the oil and the just-boiled water from the saucepan, and stir gently to coat the rice.
  • Cover the pot and cook over high heat until steam escapes from beneath the lid, 3 to 6 minutes. This is a critical step in preparing the rice to avoid overcooking it. Once you see the steam, reduce the heat to low and cook until the rice is tender and all the water is gone, another 20 minutes. Serve immediately.

BAKED WHITE SEA BASS WITH DRUNKEN BABY POTATOES AND CUMIN RICE



Baked White Sea Bass With Drunken Baby Potatoes and Cumin Rice image

A healthy recipe suitable for a main-course. Was just inspired by the premium quality Fish and Baby Potatoes I came across in the supermarket.

800 g sea bass steaks
4 large spring onions
2 tablespoons ginger (julienned)
2 teaspoons salt (rock salt)
12 baby potatoes
75 ml chinese rice wine
100 g rice (preferably Thai Rice)
2 teaspoons cumin seeds
1/2 teaspoon salt (table salt)
1 teaspoon olive oil

Steps:

  • Wash the fish fillets and evenly sprinkle half of the julienned ginger and the chopped spring onion at the base of the baking pan.
  • Place the fish fillets on the bed of ginger and spring onion.
  • Sprinkle the other half of the julienned ginger and chopped spring onion on top of the fish fillets.
  • Sprinkle rock salt.
  • Bake uncovered at 200 degrees celsius for 20 mins (do not preheat the oven).
  • Boil the baby potatoes in salt water.
  • Halve the boiled baby potatoes. Do not peel the skin.
  • Soak the baby potatoes in the rice wine for half an hour.
  • Once marinated in the rice wine, line the baby potatoes in the baking pan (skin side down) and pour whatever is left of the marinade onto the potatoes.
  • Sprinkle rock salt and bake at 200 degrees celsius for 20 mins (do not preheat oven).
  • I baked the fish fillets and the baby potatoes together in the same pan.
  • Roast the cumin seeds until very light brown. The aroma of the cumin seeds will tell you when it is done.
  • Cumin Rice.
  • Add 2 cups of water to 1 cup of Thai Rice. (I cook the rice in a stone pot.).
  • Add the oil, salt and the roasted cumin seeds and let the rice cook in the stone pot until it starts bubbling away.
  • Turn off the gas (there will be liquid on top of the rice), cover the stone rice pot and the rest of the cooking gets done in the heat that is retained by the stone pot.

2 cups water or 2 cups vegetable broth
3 tablespoons vegetable oil
2 large onions, chopped

Steps:

  • Sort the lentils carefully, discarding any stones.
  • Rinse lentils, then combine with the water in a large saucepan.
  • Bring to a boil, cover and cook over medium heat about 20 minutes or until the lentils are just tender.
  • Drain the liquid into a measuring cup, leaving the lentils in the pan and add enough water to make 3 cups.
  • In a heavy skillet, heat the vegetable oil over medium heat.
  • Add the onions and saute, stirring occasionally, until they are well browned, about 15 minutes.
  • Add the garlic and cumin and saute 30 seconds; reserve.
  • Add reserved lentil cooking liquid to pan of lentils and bring to a boil.
  • Add salt and rice and return to a boil.
  • Add the onion mixture.
  • Cover, reduce heat to low, and cook, without stirring, until the rice is tender, about 20 minutes.
  • Fluff gently with a fork.
  • Season to taste with salt and pepper and lightly stir in parsley if desired.
  • Serve hot.

SPICY STEAMED RICE WITH CUMIN AND LIME JUICE

I initially got part of this combination from a Food Network show, and have added a few things along the way. I call it "Spicy Rice" and my husband loves it. It makes normal steamed rice much less bland. The step by step process allows all the ingredients to cook into the rice. I usually take into consideration the entree I'm serving it with before I add the Cajun Seasoning. It's a personal preference. All ingredient amounts can be adjusted according to taste.

1 tablespoon butter or 1 tablespoon margarine
1 teaspoon cumin
1/4 teaspoon cajun seasoning (optional)
1 teaspoon lime juice, divided

Steps:

  • Heat butter in a medium to large saucepan until melted. Add rice and toast for a minute or so until the butter has been absorbed.

2 tablespoons olive oil
20 chicken wings, tips removed and sections separated
2 ½ cups coarsely chopped onions
¼ cup coarsely chopped garlic
¼ cup chopped peeled ginger
2 cups long-grain white rice
1 ½ tablespoons ground cumin
2 ½ cups water
2 cups chopped cilantro stems, divided
1 (14 ounce) can diced tomatoes
1 tablespoon sriracha sauce
2 ½ teaspoons salt

Steps:

  • Heat olive oil in a pot large enough to hold chicken wings in a single layer. Add chicken wings; cook until browned, about 8 minutes. Turn wings with tongs; cook until second side is browned, about 8 minutes more. Transfer to a bowl using tongs.
  • Stir onions, garlic, and ginger into the drippings in the pot; cook until fragrant, 2 to 3 minutes. Stir in rice and cumin. Add water, 1 1/2 cup cilantro stems, tomatoes, sriracha sauce, and salt.

1/2 c short grain black rice
1 c quinoa rinsed well
1 bay leaf
1/4 t salt
4 T olive oil divided
1 small onion finely chopped
3 large garlic cloves minced
2 t cumin seeds
3 T fresh lemon juice
1/4 c fresh cilantro
salt and pepper
avacado
lemon cut in wedges

Steps:

  • Bring rice and 1 cup water to a boil in a small saucepan. Cover, reduce heat to low and cook until water is absorbed and rice is tender 25-30 min. Meanwhile, combine quinoa, bay leaf , salt and 2 cups water in a med saucepan. Bring to a boil, cover reduce heat to low and simmer until quinoa is tender, about 15 min. Drain, return quinoa to hot saucepan. Cover let sit for 15 min. Discard bay leaf, fluff with fork and transfer to a large bowl. Heat 2 T oil in large skillet over medium heat. Add onion and cook, stirring occasionally, until soft, about 8 minutes. Add garlic and cumin and cook, stirring often, for 2 minutes. Add to quicoa. Add rice, mix well. Stir in remaining 2 Tablespoons oil, fresh lemon juice, cilantro, . Season to taste with salt and pepper. Cut avacodo into wedges. Serve salad with avacado and lemon wedges.

1 1/2 tablespoons canola oil
1 1/2 teaspoons black cumin seeds
2 1/4 cups basmati rice
4 1/2 cups water
1 1/2 teaspoons salt
generous pinch of saffron dissolved in 2 tablespoons warm water

Steps:

  • Heat oil and fry black cumin seeds for 10 seconds.
  • Add rice and saute for a few minutes until rice starts to change color and become opaque.
  • Add water and salt. Bring to a boil, turn down heat and cover.
  • Simmer until all liquid is absorbed (15 to 20 minutes) and rice is cooked.
  • Pour saffron water into middle 2-inch circle of rice. Leave covered for a few minutes for water to be absorbed.
  • Fluff up rice with a fork and mix. Rice should be a marbled mix of white and yellow grains.

I made this up when I had some rice and tomatoes left over. It turned out better then the dish I made the rice for -- I used a mix of wild and Jasmine rice, but any rice would do. Time does not include cooking rice.

  • Drain Tomatoes and mix with rice.

1 1/2 cups Basmati rice
2 tablespoons olive oil
1/2 white onion
1 large tomato
2 tablespoons cumin
3-4 cloves garlic
4-5 italian sausages (I prefer Johnsonville Spicy Italian)
1 can red kidney beans, drained
1 sprig parsley, chopped
Salt and pepper to taste

Steps:

  • 1. Cook the rice. If you have instant rice, follow the instructions on the bag. If not, look here. 2. Peel and mince garlic into small pieces. 3.Chop the onion into ¼-inch pieces. 4. Chop the tomato into ½-inch pieces. 5. Slice sausages into ½-inch slices. 6. Sauté the olive oil, onion, tomatoes, garlic, sausage, beans and cumin in a large pan over medium heat until sausage is browned and beans begin to split. 7. Add the cooked rice to the pan and let it simmer. 8. Add the chopped parsley. 9. Add any salt, pepper and/or additional cumin to taste Serve and enjoy. 1 cup lentils
2 cups water or vegetable broth
3 tablespoons vegetable oil
2 large onions, chopped
3 cloves garlic, chopped
1 teaspoon ground cumin
1 1/2 cups long-grain rice
salt
freshly ground black pepper
2 tablespoons chopped parsley (optional)

Steps:

  • 1. Sort the lentils carefully, discarding any stones. 2. Rinse lentils, then combine with the water in a large saucepan. 3. Bring to a boil, cover and cook over medium heat about 20 minutes or until the lentils are just tender. 4. Drain the liquid into a measuring cup, leaving the lentils in the pan and add enough water to make 3 cups. 5. In a heavy skillet, heat the vegetable oil over medium heat. 6. Add the onions and saute, stirring occasionally, until they are well browned, about 15 minutes. 7. Add the garlic and cumin and saute 30 seconds; reserve. 8. Add reserved lentil cooking liquid to pan of lentils and bring to a boil. 9. Add salt and rice and return to a boil. 10. Add the onion mixture. 11. Cover, reduce heat to low, and cook, without stirring, until the rice is tender, about 20 minutes. 12. Fluff gently with a fork. 13. Season to taste with salt and pepper and lightly stir in parsley if desired. 14. Serve hot.

3 lb chicken wings
2 Tbsp olive oil
2 1/2 cups coarsely chopped onion
1/4 cup coarsely chopped garlic
1/4 cup coarsely chopped peeled ginger
2 cups long-grain white rice
1 1/2 Tbsp ground cumin
1 (14.5-oz) can diced tomatoes
1 Tbsp salt
1 Tbsp Sriracha or other hot sauce
2 1/2 cups water
1 1/2 cups chopped fresh cilantro stems, plus 1/2 cup chopped for garnish
Lime wedges, for garnish

Steps:

  • Pat wings dry with paper towels. Remove and discard wing tips, if attached. Cut each wing into 2 pieces. Heat oil over high heat in a 14-inch skillet or pot large enough to hold wings in a single layer. Place them in pan; brown, uncovered, 6-8 minutes on each side or until golden (if using a smaller pan, brown chicken in 2 batches). Transfer to a large bowl. Add onion, garlic and ginger to pan; cook 2-3 minutes or until tender. Stir in rice and cumin. Stir in tomatoes, salt, Sriracha, water and cilantro stems. Return wings to pan. Bring to a boil. Cover, reduce heat to low and cook 30-40 minutes or until wings are cooked through and rice is done. Serve garnished with chopped cilantro and lime wedges.
