Rhubarb is probably one of the hardiest plants, especially in northern states like mine. It has a tart taste to it, which we really enjoy in our family. Every time I've served this torte to someone who's never had it before, I wind up writing out the recipe for them - and it's my pleasure to share it!

1 cup all-purpose flour, divided
5 tablespoons confectioners' sugar
Pinch salt
1/2 cup cold butter
2 large eggs
1-1/2 cups sugar
3/4 teaspoon baking powder
3 cups sliced fresh or frozen rhubarb
Whipped cream

Steps:

  • In a small bowl, combine 3/4 cup flour, confectioners' sugar and salt. Cut in butter until mixture resembles coarse crumbs. Pat into a 11x7-in. baking dish. Bake at 375° for 10 minutes. , Meanwhile, beat the eggs, sugar, baking powder and remaining flour. Fold in rhubarb and spread over crust. Bake for 35-40 minutes. Cool. Serve with whipped cream.

1-3/4 cups all-purpose flour
1 teaspoon baking powder
2 large egg yolks, room temperature
1/2 cup shortening
2 tablespoons sugar
1/2 cup chopped walnuts
4 cups chopped fresh or frozen rhubarb
2 cups sugar
2 large egg yolks, room temperature
1/4 cup all-purpose flour
4 large egg whites, room temperature
1/2 cup sugar
1 teaspoon vanilla extract

Steps:

  • Combine first 6 ingredients with a fork until crumbly. Press into a greased 13x9-in. baking dish. Combine filling ingredients; mix well. Pour over crust. Bake at 350° for 50-60 minutes. In a bowl, beat egg whites until stiff. Gradually add sugar and vanilla, beating well. Spread or pipe over hot filling. Return to the oven until lightly browned, 10-15 minutes longer.

1 cup all-purpose flour
2 tablespoons white sugar
½ cup butter, melted
1 ¼ cups white sugar
2 ½ cups diced rhubarb
2 tablespoons all-purpose flour
⅓ cup milk
3 egg yolks, beaten

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Prepare a 9x9-inch baking dish with cooking spray.
  • Mix together 1 cup of flour, 2 tablespoons of sugar, and the melted butter until well combined; pat the mixture into the bottom of the prepared baking dish.
  • Bake the crust in the preheated oven until very lightly browned, about 25 minutes. Set aside to cool slightly. Increase oven heat to 350 degrees F (175 degrees C.)
  • Stir together 1 1/4 cup of sugar, the rhubarb, 2 tablespoons flour, the milk, and beaten egg yolks until thoroughly combined; pour over the crust.

½ cup margarine
2 tablespoons confectioners' sugar
1 ½ cups white sugar
3 tablespoons all-purpose flour
3 egg yolks

3 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.)
  • In a large bowl, combine 1 cup flour, margarine and confectioners' sugar. Mix together until it forms a ball. Press into the bottom and sides of a 9 inch square pan. Bake in the preheated oven for 20 minutes, or until golden brown.
  • In a saucepan, combine 1 1/2 cup sugar, 3 tablespoons flour, yolks and milk. Stir together, then add chopped rhubarb. Cook, stirring constantly, until thickened. Pour into hot crust.
  • In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar, continuing to beat until stiff peaks form. Spread meringue over rhubarb filling, covering completely.

2 cups flour
1 tablespoon sugar
5 cups rhubarb (cut)
6 egg yolks (reserve whites for topping)

1 orange (use only the grated zest of one orange)
6 egg whites
12 tablespoons sugar

Steps:

  • BOTTOM LAYER.
  • Rub butter, flour and sugar together;press into a large greased 11 x 13 pan,.
  • bake for 10 minutes at 350 degrees.
  • MIDDLE LAYER.
  • In a large bowl mix rhubarb,egg yolks,sugar, flour,evaporated milk, salt and zest of one orange, pour over baked crust and bake at 350 40 - 50 minutes until looks thickened.
  • TOPPING.
  • Beat egg whites stiff,add salt, add sugar gradually beating between additions.
  • Pour over rhubarb and bake at 350 for 15 minutes or until nicely golden brown.
  • NOTE: You may sprinkle the topping with coconut or nuts before baking if you wish, coconut seems to keep the topping from 'weeping'.

3 cups blanched slivered almonds, toasted (about 12 ounces)
1/2 cup sugar
5 tablespoons margarine, melted
1/4 teaspoon ground cinnamon
1/3 cup strawberry preserves
3 pints lemon or pineapple ice, sherbet or sorbet
Sauce
1 cup sugar
1/2 cup water
1 vanilla bean, split lengthwise
1 20-ounce bag frozen unsweetened rhubarb
1 20-ounce bag frozen unsweetened strawberries
1 1-pint basket fresh strawberries
Fresh mint sprigs

Steps:

  • For Crust:
  • Combine almonds and sugar in processor and chop finely. Transfer to medium bowl. Combine margarine and cinnamon and mix into almonds. Transfer to 9-inch-diameter springform pan. Using plastic wrap as aid, press almond mixture firmly 2 inches up sides and then over bottom of pan. Freeze 15 minutes.
  • Preheat oven to 350°F. Place pan with crust on cookie sheet and bake 20 minutes. If crust sides slip, press back in place with back of fork. Transfer pan to rack and cool crust completely.
  • Melt strawberry preserves in heavy small saucepan. Pour into cooled crust and spread to cover bottom. Cool. Soften ice very slightly and spread in pan. Freeze until firm. (Can be prepared 1 day ahead. Cover and freeze.)
  • For Sauce:
  • Combine 1/2 cup sugar and 1/2 cup water in heavy medium saucepan. Scrape in seeds from vanilla bean; add pod. Simmer 5 minutes. Add remaining 1/2 cup sugar and stir to dissolve. Add rhubarb. Bring to boil, reduce heat, cover and simmer until rhubarb is tender, about 8 minutes. Add frozen strawberries and bring to simmer. Cool. Cover and refrigerate until well chilled. (Can be prepared 1 day ahead.)
  • Remove vanilla pod from sauce. Cut between crust and pan sides with small sharp knife. Remove pan sides. Spoon 1/2 cup sauce over center of torte. Mound fresh strawberries in center. Garnish with fresh mint sprigs. Cut torte into slices and serve with sauce.

Cover and refrigerate 1/3 cup rhubarb liquid for glaze., Place rhubarb and remaining liquid in a blender; cover and process until pureed. Return to saucepan. Bring to a boil; stir in gelatin until dissolved. Refrigerate for at least 15 minutes or until slightly thickened., Meanwhile, in a large bowl, beat cream until it begins to thicken. My mother made this often while I was growing up. She's been gone for 13 years, but I still make this at least once a year to rave reviews. No one has ever had anything like this but anyone who likes rhubarb loves it. It makes a lot, but when my husband takes this to work, I only get the empty pan back! Prep time is based on having to cut your rhubarb. If already cut, reduce to 30 minutes.

With it's slightly sweet graham cracker crust, it's delectable cream cheese filling, and the yummy rhubarb-strawberry-gelatin topping, it's one of those desserts you just can't resist. I look forward every Summer to make this dessert. Note: Prep time is 2 hours & 55 minutes, which includes cooling and chilling.

1 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
1 tablespoon granulated sugar
9 tablespoons melted butter
2 eggs, beaten well
8 ounces cream cheese, softened
1/4 cup sugar
1/2 teaspoon vanilla extract
1 1/2 lbs thinly sliced rhubarb (5 cups)
1/2 cup sugar
1/4 cup water
1 (3 ounce) package strawberry gelatin

Steps:

  • To make the crumb mixture: In a bowl, add the graham cracker crumbs, the 1/2 cup of sugar, plus the 1 tablespoon of sugar, and the butter; mix well. (I used a fork to mix the ingredients together.) Press the crumb mixture in the bottom of a greased 11x7-inch glass baking dish. Set baking dish aside.
  • At this point, preheat the oven to 350ºF.
  • To make the cream cheese filling: In a bowl, beat the cream cheese until smooth. Gradually beat in the eggs. Finally beat in the sugar and extract, until mixture is creamy and smooth. Pour the filling over the crumb mixture, and bake in the oven for 20 minutes.
  • After removing the baking dish from oven, allow to cool at room temperature for 2 hours. (But, after cooling for 30 minutes, start preparing the rhubarb topping.).
  • To make the rhubarb topping: In a 3-quart saucepan, add the rhubarb, sugar, and water. (You may not think a 1/4 cup of water is not enough to cook the rhubarb, but trust me it is.) Cook over medium heat for 10 minutes; stirring continuously. Lower the heat to a simmer, and continue cooking for 5 minutes; stirring continuously. Add the gelatin powder, and stir for 1 minute. Remove from heat, and allow to cool at room temperature for 30 minutes.
  • Once the rhubarb mixture has cooled, place the saucepan in the refrigerator to chill for 20 minutes, then pour the mixture over the cream cheese filling.
  • Place the baking dish back in the refrigerator, and chill the dessert for 3 hours before slicing and serving.
  • Note: This is one dessert that doesn't need to be covered while stored in the refrigerator. (Refrigerate any leftovers.).

2 cups 1/2-inch pieces fresh rhubarb (from about 1 pound)
3/4 cup halved hulled strawberries
1/2 cup plus 1/3 cup sugar
1/4 cup water
2 tablespoons fresh lemon juice
5 large egg yolks
1 cup chilled whipping cream
1/2 teaspoon vanilla extract
Sweetened strawberries (optional)

Steps:

  • For meringues:
  • Position racks in top third and center of oven and preheat to 250°F. Using 8-inch-diameter bowl or plate as guide, firmly trace 2 circles onto 1 sheet of parchment paper and 1 circle onto second sheet of parchment. Place papers, marked side down, on 2 baking sheets. Spray paper with nonstick spray.
  • Using electric mixer, beat egg whites in large bowl until frothy. Add cream of tartar and salt; beat until soft peaks form. Beat in sugar, 1 tablespoon at a time, then beat until whites are stiff and glossy. Beat in vanilla. Working in batches, spoon meringue into large pastry bag fitted with 1/2-inch plain tip. Starting in center of each traced circle and holding tip just above paper, pipe meringue in spirals to fill circles, forming 3 rounds.
  • Bake meringues until firm, dry, and pale golden, about 2 hours. Turn off oven; leave meringues in oven with door closed at least 4 hours or overnight.
  • For rhubarb cream:
  • Combine rhubarb, strawberries, 1/2 cup sugar, water, and lemon juice in saucepan. Bring to boil, stirring to dissolve sugar. Reduce heat and simmer until rhubarb is very tender, about 15 minutes. Puree mixture in processor. Chill until cold, about 1 hour.
  • Whisk yolks and 1/3 cup sugar in large metal bowl to blend. Set bowl over saucepan of simmering water (do not allow bowl to touch water). Whisk until mixture thickens and instant-read thermometer registers 140°F for 3 minutes, about 7 minutes total. Chill mixture until cool, about 15 minutes. Gently fold rhubarb mixture into yolk mixture. Using electric mixer, beat whipping cream and vanilla in another large bowl until stiff peaks form. Fold cream into rhubarb mixture in 2 additions.
  • Place 1 meringue disk in 9-inch-diameter springform pan. Spread 1/3 of rhubarb cream (about 1 1/2 cups) over meringue, leaving 1/2-inch plain border. Top with second meringue disk, then 1/3 of rhubarb cream. Top with remaining meringue disk and rhubarb cream (cream will not spread to sides of pan). Freeze until cream is firm, about 6 hours. (Can be made 4 days ahead. Cover with foil; keep frozen.)
  • Release cake pan sides. Serve torte with sweetened strawberries, if desired.

This is a beautiful spring and summer dish. It is so lovely you might not want to eat it, but it tastes even better than it looks. Plan ahead because it must sit overnight, but it is worth the work.

1 cup water
3/4 cup sugar, divided

1 tablespoon cold water
4 drops red food coloring
2 cups heavy whipping cream, whipped
24 ladyfingers, split
fresh strawberries
additional whipped cream, for topping

Steps:

  • In a large saucepan, bring rhubarb, water and 1/2 cup of sugar to a boil; reduce heat and simmer uncovered for 6 to 8 minutes, or until rhubarb is tender. Cool slightly.
  • Set aside 1 cup of rhubarb liquid for glaze place rhubarb and remaining liquid in blender and process until pureed. Return to saucepan, bring to a boil. Stir in the gelatin until dissolved; stir in vanilla. Cover and chill for 1 hour or until slightly thickened.
  • Meanwhile for glaze: combine reserved rhubarb liquid and remaining sugar in a small saucepan; bring to a boil.

  • Gradually fold the whipped cream mixture into rhubarb mixture and arrange 17 split ladyfingers in bottom and 26 around the edges of ungreased 9-inch spring form pan. Spread 1/2 the rhubarb mixture into the pan. Arrange remaining ladyfingers over rhubarb mixture. Carefully spread with remaining rhubarb mixture. Cover and chill overnight. Carefully spread glaze over top. Remove sides of pan. Garnish with strawberries and whipped cream.

1 cup evaporated milk
2 3/4 cups white sugar
8 cups rhubarb, diced
6 egg whites
1 teaspoon vanilla extract

Steps:

  • To Make Crust:.
  • Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Lightly grease a 9x13 inch baking dish.
  • In medium bowl combine butter, 1-1/2 cups of the flour and 1 tablespoon white sugar. Blend together with an electric mixer.
  • Press mixture into bottom of baking dish and bake for 15 minutes, until set.
  • To Make Filling:.
  • In large mixing bowl combine 6 egg yolks, 4 tablespoons flour, evaporated milk, 2 cups sugar and rhubarb.
  • Stir together and pour over cooled crust.
  • Bake for 1 hour, until set.
  • To Make Meringue:.
  • In large mixing bowl, beat 6 egg whites until foamy.
  • Beat in sugar and vanilla until stiff peaks form.
  • Spread meringue over rhubarb and bake 10 to 20 minutes, until golden.

Easy and delicious, with a shortbread crust, this has been a family favorite for years. I have occasionally substituted milk for the half & half with good results. Prep time does not include chilling time or rhubarb washing and cutting.

1 cup flour

Steps:

  • Preheat oven to 350 degrees.
  • Mix the first 3 ingredients and put in bottom of a 9x13 pan, patting it down lightly.
  • Bake for 15 minutes.
  • While crust is baking, beat well the next 5 ingredients. Add rhubarb and pour over baked crust.
  • Bake at 350 degrees about 50 minutes, or until custard is set.
  • Serve chilled.

1 package Betty Crocker 1-step white angel food cake mix
1 1/4 cups cold water
2 teaspoons grated orange peel
Strawberry-Rhubarb Filling(below)
1 (15-ounce) container ricotta cheese
1/4 cup powdered sugar
1 container (8 ounces) frozen whipped topping, thawed or
3 cups sweetened Whipped Cream
(see Fabulous Frostings and Glazes chapter)
1/2 cup sliced strawberries
Strawberry Rhubarb Filling:
2 cups sliced fresh rhubarb
1/2 cup granulated sugar
2 tablespoons orange juice
1 1/2 cups sliced strawberries
4 drops red food coloring if desired

Steps:

  • 1- Move oven rack to lowest position (remove other racks). Heat oven to 350°.2- Beat cake mix, cold water and orange peel in extra-large glass or metal bowl with electric mixer on low speed 30 seconds beat on medium speed 1 minute. Pour into ungreased angel food cake (tube) pan, 10 x 4 inches. (Do not use bundt cake pan or 9 x 3 1/2-inch angel food pan or batter will overflow.)3- Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and not sticky. Do not underbake. Immediately turn pan upside down onto glass bottle until cake is completely cool, about 2 hours.4- While cake is cooling, make Strawberry-Rhubarb Filling. CRUMB MIXTURE:
1-1/2 cups graham cracker crumbs
1/2 cup granulated sugar
1 tablesp. granulated sugar
9 tablesp. melted butter
CREAM CHEESE FILLING:
2 large eggs, well beaten
1 (8 oz.) pkg. cream cheese, softened
1/4 cup granulated sugar
1/2 tsp. vanilla extract
RHUBARB TOPPING:
5 cups (1-1/2 lbs.) thinly sliced fresh rhubarb
1/2 cup granulated sugar
1/4 cup water
1 (3 oz.) box strawberry gelatin

Steps:

  • 1. To make the crumb mixture: In a bowl, add the graham cracker crumbs, the 1/2 cup of sugar, plus the 1 tablespoon of sugar, and the butter; mix well. (I used a fork to mix the ingredients together.) Press the crumb mixture in the bottom of a greased 11x7-inch glass baking dish. Set baking dish aside.
  • 2. At this point, preheat the oven to 350ºF.
  • 3. To make the cream cheese filling: In a bowl, beat the cream cheese until smooth. Gradually beat in the eggs. Finally beat in the sugar and extract, until mixture is creamy and smooth. Pour the filling over the crumb mixture, and bake in the oven for 20 minutes.
  • 4. After removing the baking dish from oven, allow to cool at room temperature for 2 hours. (But, after cooling for 30 minutes, start preparing the rhubarb topping.)
  • 5. To make the rhubarb topping: In a 3-quart saucepan, add the rhubarb, sugar, and water. (You may not think a 1/4 cup of water is not enough to cook the rhubarb, but trust me it is.) Cook over medium heat for 10 minutes; stirring continuously. Lower the heat to a simmer, and continue cooking for 5 minutes; stirring continuously. Add the gelatin powder, and stir for 1 minute. Remove from heat, and allow to cool at room temperature for 30 minutes.
  • 6. Once the rhubarb mixture has cooled, place the saucepan in the refrigerator to chill for 20 minutes, then pour the mixture over the cream cheese filling.
  • 7. Place the baking dish back in the refrigerator, and chill the dessert for 3 hours before slicing and serving.
  • 8. Note: This is one dessert that doesn't need to be covered while stored in the refrigerator. (Refrigerate any leftovers.)

2 teaspoons unflavored gelatin (from a 1/4-ounce envelope)
4 cups sliced fresh rhubarb stalks or thawed frozen rhubarb (1 lb)
1/2 cup plus 2 tablespoons sugar
3 cups vanilla low-fat yogurt
12 amaretti* (crisp Italian macaroons), finely chopped (3/4 cup)
1 pound strawberries

Steps:

  • Put 1/4 cup water in a small cup, then sprinkle gelatin on top and let gelatin soften while cooking rhubarb.
  • Cook rhubarb, 1/2 cup sugar, and remaining 1/2 cup water in a heavy medium saucepan over moderate heat, stirring occasionally, until very soft, about 7 minutes. Add gelatin mixture, stirring until dissolved, then cool 10 minutes. Purée in a food processor until smooth, then add yogurt and blend until combined. Freeze in ice cream maker.
  • Spread cookie crumbs evenly over bottom of an 8-inch springform pan. Spoon frozen yogurt gently over crumbs and carefully smooth top. Wrap pan in plastic wrap and freeze until yogurt is firm, at least 2 hours.
  • Soak a kitchen towel in hot water and wring it dry. Wrap hot towel around pan, then release side of pan and let torte stand at room temperature 20 minutes. Meanwhile, hull and quarter strawberries, toss with remaining 2 tablespoons sugar, and let stand 15 minutes. Cut torte into 8 wedges and serve with strawberries spooned on top.

6 cups chopped fresh or frozen rhubarb
1 cup water
3/4 cup sugar, divided
2 packages (3 ounces each) strawberry gelatin
1 teaspoon vanilla extract
4-1/2 teaspoons cornstarch
1 tablespoon cold water
4 drops red food coloring, optional
2 cups heavy whipping cream, whipped
24 ladyfingers, split
Fresh strawberries and additional whipped cream

Steps:

  • In a large saucepan, bring rhubarb, water and 1/2 cup sugar to a boil. Reduce heat; simmer, uncovered, for 6-8 minutes or until rhubarb is tender. Cool slightly. Set aside 1 cup rhubarb liquid for glaze. Place rhubarb and remaining liquid in a blender or food processor; cover and process until pureed., Return to saucepan. Bring to a boil; stir in gelatin until dissolved. Stir in vanilla. Cover and chill for 1 hour or until slightly thickened., Meanwhile, for glaze, combine reserved rhubarb liquid and remaining sugar in a small saucepan. Bring to a boil. In a small bowl, combine cornstarch and cold water until smooth; whisk into boiling mixture. Cook and stir until thickened. Remove from the heat. Stir in food coloring if desired. Cover and refrigerate overnight., Gradually fold whipped cream into rhubarb mixture. Arrange 17 split ladyfingers on the bottom and 26 around the edge of an ungreased 9-in. springform pan. Spread half of the rhubarb mixture into pan. Arrange remaining ladyfingers over rhubarb mixture; carefully spread with remaining rhubarb mixture. Cover and chill overnight. Carefully spread glaze over top. Remove sides of pan. Garnish with strawberries and whipped cream.

1 graham wafer crust

1 (3 1/2 ounce) package instant vanilla pudding

Steps:

  • Combine sugar& cornstarch.
  • Stir in rhubarb& water.
  • Cook& stir over medium heat until thickened.
  • Reduce heat, cook 2-3 minutes longer.
  • Add food coloring.
  • Spread on graham wafer crust and let cool.
  • Fold marshmallows into whipped cream and spoon over rhubarb mixture.
  • Prepare pudding according to package instructions and spread over all.
  • Sprinkle with graham wafer crumbs.
  • Chill (Best chilled overnight).
