Rhubarb cocktail is the perfect way to sip through the summer heat.

3 cups rhubarb, chopped into 2" pieces
4 cups water
4 cups granulated sugar
1.5 oz vodka or gin, per serving
6 tbsp simple syrup divided per glass
sparkling water, top off each glass
4 tsp lemon, juiced
ice
6 pieces rhubarb, peeled into long strips, optional

Steps:

  • In a small saucepan, bring rhubarb, sugar and water to a slow boil. Let cook for 10 minutes. Remove from heat and let cool completely before straining into a glass jar. Syrup can be stored in fridge for up to 2 weeks.
  • Fill glasses with ice. Add 1-2 tbsp simple syrup per glass and top with sparkling water. Garnish with rhubarb ribbons and enjoy!

Number Of Ingredients 6

2 tablespoons Rhubarb Syrup, recipe follows
2 tablespoons elderflower liqueur, such as St-Germain
Chilled prosecco or club soda, for topping
2 large stalks rhubarb, cut into 4-inch pieces
1/2 cup sugar
Juice of 1 lemon

Steps:

  • Add a few ice cubes to a glass. Then add the Rhubarb Syrup and elderflower liqueur. Top off with prosecco, stir and serve.
  • For the rhubarb syrup: In a medium saucepot, add the rhubarb, sugar and 1/2 cup water. Bring to a gentle simmer over medium-low heat and cook until the rhubarb is tender and the liquid turns bright pink, 15 to 20 minutes. Strain the syrup and let cool completely.
