2 cups all-purpose flour
2 tablespoons sugar
1 cup cold butter, cubed
FILLING:
2 cups sugar
1/3 cup all-purpose flour
1 teaspoon salt
6 egg yolks, lightly beaten
1 cup heavy whipping cream
5 cups sliced fresh or frozen rhubarb
MERINGUE:
6 egg whites
1/2 teaspoon cream of tartar
3/4 cup sugar
1 teaspoon vanilla extract

Steps:

  • In a small bowl, combine flour and sugar; cut in butter until crumbly. Press into a greased 13-in. x 9-in. baking dish. Bake at 350° for 20 minutes. Cool on a wire rack. , In a large bowl, combine the sugar, flour and salt. Stir in egg yolks and cream. Add rhubarb. Pour over crust. Bake at 350° for 50-60 minutes or until set., In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, a tablespoon at a time, until stiff peaks form. Beat in vanilla. Spread over hot filling. Bake for 12-15 minutes or until golden brown. Cool on a wire rack. Refrigerate for 1-2 hours before serving. Refrigerate leftovers.

1 cup butter, softened
4 eggs

1 ½ cups white sugar
1 cup half-and-half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix 3 cups flour and brown sugar in a large bowl; cut in softened butter with a knife or pastry blender until mixture resembles coarse crumbs. Reserve 1 1/2 cups flour mixture; pat remainder into the bottom of a 9x13-inch pan.
  • Bake in preheated oven until crust is lightly browned, about 15 minutes.
  • Beat eggs in a large bowl; mix 1/4 cup flour, white sugar, half-and-half, and salt into eggs, beating until smooth.
  • Sprinkle chopped rhubarb over baked crust. Pour egg mixture over rhubarb; top with reserved flour mixture.

2 tablespoons white sugar
1 cup cold butter
2 cups white sugar
⅓ cup all-purpose flour
1 teaspoon salt
6 egg yolks
1 cup heavy cream
5 cups thinly sliced rhubarb
2 cups thinly sliced strawberries
6 egg whites
½ teaspoon cream of tartar
¾ cup white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish. Whisk together 2 cups of flour and 2 tablespoons of sugar in a bowl; use a pastry cutter to cut the butter into the flour mixture until the mixture resembles coarse crumbs. Press the crust into the bottom and up the sides of the prepared baking dish.
  • Bake crust in the preheated oven until lightly browned, about 20 minutes.
  • Mix together 2 cups of sugar, 1/3 cup of flour, salt, egg yolks, and cream in a large bowl until well combined; stir in the rhubarb and strawberries. Pour the filling into the baked crust.
  • Return to oven, and bake until the filling is set, 50 to 60 more minutes.

1/2 cup heavy whipping cream, whipped
1-1/2 cups miniature marshmallows

  • In a large bowl, combine the crumbs, sugar and butter; set aside 2 tablespoons. Press remaining crumbs into an ungreased 11x7-in. baking dish. I found this recipe in an old Taste of Home magazine. I don't recall who submitted the recipe, but I tried it today, and it was delicious. I did make a 2 changes.....I added a little more sugar when I cooked the rhubarb along with a few drops of red food coloring to make it "prettier". I also used Cool Whip instead of whipping my own cream. I especially love the first layer (crust) which I could have eaten all alone !!

2 cups flour, all-purpose
1 cup pecans, chopped
1 cup butter, melted
1/4 cup sugar
1 cup brown sugar, packed
3 tablespoons cornstarch
5 cups fresh rhubarb (can also use frozen)
1 cup fresh strawberries, sliced
1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
1 1/4 cups heavy whipping cream, whipped and divided
brown sugar (optional for garnish)

Steps:

  • In a small bowl, combine the flour, pecans, butter, and sugar.
  • Press into a greased 13"x9"x2" baking dish.
  • Bake at 350 degrees for 18-20 minutes or until golden brown. Cool on a wire rack.
  • Topping: In a large saucepan, combine brown sugar and cornstarch.Stir in rhubarb until combined. Bring to a boil, stirring often. Reduce heat and cook until thickened and the rhubarb is tender. (This is where I also add a few drops of red food coloring to "pep it up" a bit) When done, remove from heat and cool. When cool, stir in the sliced strawberries.
  • Filling: In a small mixing bowl , beat cream cheese and confectioners sugar until smooth.Fold in 1 cup of whipped cream.
  • Spread the filling over the cooled crust, top with the cooled rhubarb mixture. Spread the remaining whipped cream on top of the rhubarb layer.
  • Garnish with some additional brown sugar ( I also added some extra sliced strawberries as garnish).
  • Refrigerate for 3-4 hours before serving.

4 cups diced rhubarb
1/2 cup granulated sugar
1 1/2 cups water
1 (6 ounce) package strawberry gelatin
1/2 cup whipped cream

Steps:

  • Mix rhubarb, sugar and ½ cup water in saucepan.
  • Stir occasionally and bring to a boil.
  • Cover saucepan and cook for 8 ­ 10 minutes.
  • Continue cooking, and add strawberry gelatin,continuously stirring until gelatin dissolves.
  • Remove from heat and add 1-cup cold water.
  • Allow to cool, then place in refrigerator to chill until partially set.
  • Remove from refrigerator and whip mixture with electric beater until fluffy.
  • Fold in whipped cream.
  • Garnish with fresh strawberries (whole or sliced).

4 cups chopped fresh or frozen rhubarb, thawed
1 cup sugar
1/4 cup strawberry gelatin powder
1 package white cake mix (regular size)
1 cup hot water
1/2 cup choppeed sweetened shredded coconut
1/3 cup slivered almonds, toasted
6 tablespoons butter, melted

Steps:

  • Arrange rhubarb evenly in a greased 13x9-in. baking dish. Combine sugar and gelatin powder; sprinkle over rhubarb. Sprinkle dry cake mix over gelatin mixture. Pour hot water over cake mix (do not stir). Top with coconut and almonds. Drizzle with butter., Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack.

3 Tbsp butter
1 Tbsp cornstarch
1/2 c sugar
1 lb fresh rhubarb, cut into 1/2
3/4 c packed brown sugar
3/4 c all purpose flour
3/4 c old fashioned oats (not quick cooking kind)
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 c cold butter, cut into cubes

Steps:

  • 1. Melt 3 T. butter in sauce pan; add cornstarch & sugar. Stir until blended. Add rhubarb; cook mixture over medium heat until rhubarb is soft, about 5 minutes, stirring gently. Remove from heat and cool. When cooled, spread into greased 9" square baking pan.
  • 2. Preheat oven to 375°F. To make topping, combine brown sugar, flour, oats, cinnamon, nutmeg and salt. Mix cold butter in until it resembles coarse crumbs. Sprinkle over filling in baking pan.
  • 3. Bake for 35-40 minutes. Serve with whipped cream/cool whip or ice cream, if desired.

¼ cup vegetable shortening

½ teaspoon salt
⅔ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix rhubarb with 2 cups sugar in a large bowl and spread into the prepared baking dish; sprinkle rhubarb with raisins.
  • Beat vegetable shortening with 2/3 cup sugar in a bowl; beat in eggs, one at a time, followed by vanilla extract. Whisk flour, baking powder, and salt together in another bowl. Gradually stir the flour mixture into the wet ingredients, alternating with milk, to form a smooth batter. Spread batter over fruit in baking dish.
