ROASTED VEGETABLE SOUP

- In a large saucepan, heat 3 cups of chicken stock. In 2 batches, coarsely puree the roasted vegetables and the chicken stock in the bowl of a food processor fitted with the steel blade. Pour the soup back into the pot and season, to taste. Thin with more chicken stock and reheat. The soup should be thick but not like a vegetable puree, so add more chicken stock and/or water until it's the consistency you like.
- Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, and seasonings in a 16 to 20-quart stockpot. Add 7 quarts of water and bring to a boil. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander and discard the solids. Chill the stock overnight. The next day, remove the surface fat. Use immediately or pack in containers and freeze for up to 3 months.
- Preheat the oven to 425 degrees F.
- Cut the carrots, parsnips, sweet potato, and butternut squash in 1- to 1 1/4-inch cubes. All the vegetables will shrink while baking, so don't cut them too small.
- Place all the cut vegetables in a single layer on 2 sheet pans. Drizzle them with olive oil, salt, and pepper. Toss well. Bake for 25 to 35 minutes, until all the vegetables are tender, turning once with a metal spatula.
- Sprinkle with parsley, season to taste, and serve hot.

- Crumble the ground beef into a large saucepan over medium heat. Cook and stir until no longer pink. Drain off grease and pour in the tomato juice. Add the onion, carrot, and potato. Pour in the entire contents of the cans of corn and green beans. Season with ginger, salt, and pepper. Reduce heat to low and let simmer 1 hour.

- In a stockpot, heat oil over medium-high heat; saute carrots, onions, celery and green pepper until crisp-tender. Add garlic; cook and stir 1 minute. Stir in remaining ingredients; bring to a boil. , Reduce heat; simmer, covered, until vegetables are tender, 1 to 1-1/2 hours. Remove bay leaf.

RHONDA'S VEGETABLE SOUP
This Vegetable Soup is so easy. You can make a Big Batch to Freeze some for later. Or make a smaller amount. 2 Chicken Broth, 1 Beef Broth, 1 small onion, 3/4 cup barley. 2 bags vegetables. I used Kroger Gumbo Vegetable Soup Blend Vegetables.

Steps:
- 1. starting with a very large soup pot. add all broth and onion. let simmer until heated. add canned tomatoes, including liquid.
- 2. add frozen vegetables. let simmer. then add the bouillon base. starting with a teaspoon at a time. stir and taste! then add more to your liking. this adds flavor and saltiness. this does not need salt. but you can add cracked black pepper if you like.
- 3. let simmer for 20 minutes. then add barley. simmer for 10 minutes. at this time you can add pre cooked meat or pasta if you choose.
