REUNION CASSEROLE
This is a noodle casserole just like Mom used to make! Its down-home taste has great appeal at a family gathering or as a dish to pass. It's also easy to prepare and can be assembled ahead of time. No leftovers here! -Bernice Morris Marshfield, Missouri

Steps:
- In a large Dutch oven, cook the beef, sausage and onion over medium heat until meat is no longer pink; drain. Stir in 1 cup cheese, green pepper, corn, soup, tomato sauce, olives, garlic, salt and noodles. , Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining cheese. Cover and bake at 350° for 35 minutes or until bubbly. Uncover; bake 10 minutes longer or until cheese is melted.

Steps:
- Mix the first four ingredients together.
- You can add a cooked vegetable to this to make a complete meal in one dish.
- Crush the Ritz crackers.
- Spray a casserole or baking dish with non-stick cooking spray.
- Add 1/3 of Ritz crackers.
- Put in half of chicken mixture.
- Add 1/3 of Ritz crackers on top of chicken.
- Put in the other half of chicken mixture and top with remaining Ritz crackers.
- Bake at 350 for 45 minutes.
- Makes 8 servings.

Steps:
- 1. Cook pasta; set aside.
- 2. Spray 13x9" glass baking dish with cooking oil set aside.
- 3. Saute' beef, sausage and onion in large pot.
- 4. Add salt, pepper, tomatoes, sauce, corn and 1/2 of the cheese. Mix well and simmer for at least 5 minutes.
- 5. Stir pasta into the mixture and transfer to prepared baking dish.
- 6. Spread remaining cheese over top of casserole.
- 7. Bake at 350 degrees until cheese is bubbling (about 10 minutes).
HOOD REUNION CASSEROLE
Chicken casserole with both regular and low fat versions. Got this from my great aunt after eating it at a family reunion. Every time I've served it the recipe wasn't requested by someone. Steps:
- Mix the the first four ingredients together.
- Crush the crackers.
- Melt butter, pour onto crackers and mix.
- Place a layer of crackers, layer of chicken mixture, layer of crackers, layer of chicken, layer of crackers in a casserole dish (I usually spray it with non-stick spray first).
- Bake at 350 degrees for 40 minutes.
- To make a low fat version use the yogurt instead of sour cream, use skim mozzarella and leave off the butter.
- You can also add cooked vegetables to this and make a one dish meal.
