We love reubens, so this was a treat for us. I make these often for our family gatherings or for the ball games.

Number Of Ingredients 6

1 cup rye crackers, crushed
3 ounces cream cheese
1 tablespoon onion, chopped
16 ounces sauerkraut
12 ounces corned beef
1 cup evaporated milk

Steps:

  • Drain sauerkraut very well, then chop fine.
  • Add 1/4 of the rye cracker crumbs to cream cheese,onion sauerkraut and beef.
  • Mix well.
  • Shape into small balls.
  • Dip balls into evaporated milk, then roll in remaining cracker crumbs.
  • Bake at 350 for 15 minutes.
  • May be served cold or hot.

1 package (8 ounces) cream cheese, softened
1 1/2 cups shredded Swiss cheese (6 ounces)
1/2 cup Thousand Island dressing
4 ounces deli sliced corned beef, chopped
1/2 cup well-drained sauerkraut
Pretzel crackers, if desired
Cocktail rye bread slices, if desired
Chopped fresh chives, if desired
Sliced radishes, if desired

Steps:

  • Heat oven to 400°F.
  • Mix cream cheese, 1 cup of the Swiss cheese, the dressing and corned beef. Spread in pie plate, 9x1 1/4 inches, or quiche dish, 9x1 1/2 inches. Top with sauerkraut and remaining 1/2 cup Swiss cheese. (Cover and refrigerate up to 24 hours if desired.)
  • Bake about 15 minutes or until bubbly around edge. Serve hot with pretzel crackers or cocktail bread. Garnish with chives and radishes.

MINI STUFFED BAKED POTATO APPETIZERS



Mini Stuffed Baked Potato Appetizers image

Your guests will love these, you can double the amount to serve a large crowd! You can make these in advance and chill until ready to serve.

15 small red potatoes (washed and leave unpeeled)
1/4 cup olive oil (or use vegetable or Canola oil)
1/2 teaspoon garlic powder (or to taste)
1/2 teaspoon seasoning salt (or to taste) or 1/2 teaspoon white salt (or to taste)
2 cups sour cream
1 small green onion, finely chopped
3 -4 slices bacon (cooked and finely crumbled)
black pepper
finely chopped green onion (to garnish)

Steps:

  • Set oven to 400°F.
  • In a bowl mix together the oil with salt and garlic powder.
  • Slice the potatoes in half then coat all sides with the oil mixture.
  • Place on a greased baking sheet cut-side down.
  • Bake for about 25 minutes or until just tender; cool completely.
  • In a medium bowl combine sour cream with green onions and crumbled cooked bacon, then season with black pepper.
  • Slice a small thin piece off of the bottom of the baked potato half so that it will sit upright, then turn potato over.
  • Using a melon baller or small spoon scoop out some of the center pulp (reserve the pulp for later use).
  • Fill with about 1 tablespoon sour cream mixture, then sprinkle more chopped green onion on top of the sour cream.
  • Serve immediately or chill until needed.
  • Delicious!

When I'm in a hurry and my family wants a hearty breakfast, I often make these easy waffles. You'll be pleasantly surprised by the subtle potato flavor.

1-1/3 cups instant potato flakes
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2-1/4 cups whole milk
2 large eggs, lightly beaten
1 tablespoon canola oil

Steps:

  • In a large bowl, combine potato flakes, flour, baking powder and salt. In a small bowl, whisk the milk, eggs and oil; stir into dry ingredients just until moistened. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown.
