Stewed Okra and Tomatoes image

This is one of my favorite side dishes. It is good with good ole southern food. I like to make it when I make chicken fried steak and mashed potatoes....fried pork chops and macaronni and cheese; you've got the idea...very comforting and old school.

Number Of Ingredients 7

1 onion, chopped
3 c sliced okra
1 can(s) (14.5 oz) diced tomatoes, do not drain
1 tsp chopped garlic
1/2 tsp kosher salt
1/2 tsp black pepper
2 Tbsp canola oil

Steps:

  • 1. In a heavy bottom pot, heat oil
  • 2. Add the onion and garlic; sauté until tender, about 3 minutes.
  • 3. Add the okra and tomatoes, salt and pepper.
  • 4. Simmer for 15 minutes.
  • 5. Note: If needed, add water or chicken stock if the pot becomes too dry.
