1 loaf (1 pound) day-old pumpernickel bread, cubed
1 Slow-Cooked Corned Beef Brisket, cubed
1-3/4 cups sauerkraut, rinsed and well drained
8 large eggs, beaten
3 cups heavy whipping cream
1/2 cup Thousand Island salad dressing
1 cup shredded Swiss cheese

Steps:

  • In a large bowl, combine the bread, corned beef and sauerkraut. In another bowl, whisk the eggs, cream and salad dressing; pour over bread mixture and toss to coat. Transfer to a greased 13x9-in. baking dish. Let stand 5 minutes., Cover and bake at 375° for 40 minutes. Uncover; sprinkle with cheese and bake 5-10 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

2 cups broccoli florets
2 tablespoons water
6 eggs, beaten
12 slices rye bread, cubed
2 cups swiss cheese, shredded
1 (16 ounce) jar sauerkraut
5 ounces sliced corned beef
1/2 teaspoon salt
3 cups milk

Steps:

  • Coat a 13x9 baking dish with cooking spray; set aside.
  • Combine broccoli and water; cover and steam until broccoli is tender crisp.
  • Slice corned beef into strips, about 2 x 1/2 inch each.
  • In a large mixing bowl, combine eggs and milk.
  • Add broccoli, corned beef and remaining ingredients. Mix well. Spoon evenly into baking dish.
  • Cover with plastic wrap and refrigerate for at least 12 hours or overnight.
  • Heat oven to 325 degrees. Remove plastic wrap and cover dish with foil.
  • Bake for 45 minutes.
  • Remove foil and continue bakinf for 25-30 minutes longer or until knife inserted in the center comes out clean.
  • Let stand for 10 minutes before serving.

6 cups cubed rye bread (about 8 slices)
12 ounces sliced deli corned beef, chopped
1 1/2 cups shredded swiss cheese
8 eggs
1 1/4 cups milk
1/2 cup bottled thousand island dressing
1/2 teaspoon caraway seed
1/2 teaspoon dry mustard
1/2 teaspoon salt

Steps:

  • In a mixing bowl, combine the bread cubes, corned beef, and 1 cup Swiss cheese; spread mixture into a greased 3-quart baking dish.
  • In a mixing bowl, whisk the eggs, milk, salad dressing, caraway seeds, dry mustard, and salt together; pour egg mixture over bread mixture, pressing slightly to thoroughly moisten bread.
  • Cover and chill for 2 to 24 hours.
  • Sprinkle with remaining cheese.

This is like having a Reuben sandwich for breakfast - or any time of day! Can make it up to 24 hours ahead and chill until ready to bake.

8 slice rye bread, cubed (6 cups)
12 oz sliced deli corned beef, chopped
1-1/2 c shredded swiss cheese (6 oz.)
8 eggs
1-1/4 c milk
1/2 c bottled thousand island salad dressing
1/2 tsp caraway seeds
1/2 tsp dry mustard
1/2 tsp salt

Steps:

  • 1. In a large bowl, combine bread cubes, corned beef, and 1 cup of the cheese. Spread bread mixture in a greased 3 quart rectangular baking dish.
  • 2. In a medium bowl, whisk together eggs, milk, salad dressing, caraway seeds, dry mustard, and salt. Pour egg mixture over bread mixture in dish, pressing lightly to thoroughly moisten the bread. Cover and chill for 2 to 24 hours.
