A mouthwatering classic-corned beef piled on top of tangy sauerkraut, with Thousand Island dressing and melted Swiss cheese grilled on rye bread.

2 tablespoons butter, softened
8 slices rye bread
1/4 cup Thousand Island dressing
1 cup sauerkraut, drained, squeezed dry (from 14.5-oz can)
1/2 lb corned beef, thinly sliced
8 slices Swiss cheese

Steps:

  • Heat closed contact grill 5 minutes.
  • Spread butter on one side of each bread slice. On unbuttered side of 1 bread slice, spread 1 tablespoon of the dressing. Top with 1/4 cup of the sauerkraut, 2 oz corned beef, 2 slices cheese and remaining bread slice, buttered side up. Repeat for remaining sandwiches.
  • When grill is heated, place sandwiches on grill. Close grill; grill 5 to 6 minutes or until cheese is melted and grill marks appear. Serve immediately.

Thousand Island Dressing:
8 (1/2-ounce) slices thin-slice rye bread
1/2 cup Store Bought or Homemade Thousand Island dressing (see recipe below)
8 (1/2-ounce) thin slices reduced-fat Swiss cheese
1/4 cup refrigerated sauerkraut, rinsed and drained
8 ounces sliced deli, homestyle turkey breast
1/4 cup light mayo
1/4 cup light plain yogurt
1 TB Ketchup
1 TB Sweet Pickle Relish
Dash of Lemon Juice
1 tsp Cherry Pepper Relish
Dash of Paprika

Steps:

  • Spread one side of each bread slice evenly with 1TB dressing. Place one cheese slice on dressed side of each of four bread slices; top each with 1 tablespoon sauerkraut and 2 ounces turkey. Top each sandwich with 1 cheese slice and 1 bread slice, dressed side down. Coat the outside of the sandwich (top and bottom) with cooking spray. Heat a large skillet over medium-high heat. Add sandwiches to pan. Place a cast-iron or other heavy skillet on top of sandwiches; press gently to flatten sandwiches (leave cast-iron skillet on sandwiches while they cook). Cook 2 minutes on each side or until browned and cheese melts.

1/4 cup thousand island salad dressing
1 cup sauerkraut, drained, squeezed dry (from 14.5-oz can)
1/2 pound corned beef, thinly sliced
8 slices Swiss cheese

Steps:

  • Heat flat top griddle for 5 minutes with panini press on top.Spread butter on one side of each bread slice. On unbuttered side of 1 bread slice, spread 1 tablespoon of the dressing. Top with 1/4 cup of the sauerkraut, 2 ounces corned beef, 2 slices cheese and remaining bread slice, buttered side up. Repeat for remaining sandwiches.When grill is heated, place one sandwich on grill. Grill 5 to 6 minutes or until cheese is melted and grill marks appear. Serve immediately. Place panini press back on grill and allow to heat 2-3 minutes, then repeat above directions with remaining sandwiches. Making sure to heat press in between each sandwich.

8 slices rye bread or 8 slices pumpernickel bread
1/2 cup thousand island dressing
12 ounces sliced corned beef
2 cups sauerkraut
8 slices swiss cheese
1/4 cup soft butter

Steps:

  • Spread the dressing on one side of each bread slice.
  • Divide the corned beef among four of the dressed bread slices. Evenly distribute the sauerkraut over the meat, and top with two slices of cheese per sandwich.
  • Place the remaining dressed slices of bread dressing-side-down onto the cheese.
  • Preheat an electric Panini griddle; or heat a skillet over medium-high heat.
  • Spread the top of each sandwich with butter and place them butter-side down onto the hot surface; you'll probably need to work in batches.
  • Spread butter on the other side of each sandwich, then close the griddle, or cover the panini with a heavy lid, flipping to grill on both sides.
