Satisfying, tasty and filling! A breeze to make. Using the Reuben ingredients and adding noodles really works. You can substitute Thousand Island dressing for the mayonnaise for added zip.

8 ounces egg noodles
4 tablespoons butter, melted
1 (20 ounce) can sauerkraut, drained and rinsed
1 pound corned beef
½ cup mayonnaise
2 cups shredded Swiss cheese
1 tomato, sliced
½ cup crushed saltine crackers
¼ teaspoon caraway seed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss with half the melted butter and place in a 9x13 baking dish.
  • Spread sauerkraut over the noodles; cover evenly with corned beef. Spread mayonnaise over beef and top with the shredded Swiss and tomato slices.
  • In a small bowl, toss together crushed crackers and caraway seed with remaining melted butter. Sprinkle crumb mixture over Swiss and tomato.
  • Bake in preheated oven 1 hour, until bubbly and golden.

This is a combination of several recipes I've found over the years. My family all like it very much and it is easier than doing Reubens, and occasionally you have left overs which are good, also.

8 oz uncooked egg noodles
1 lb pastrami, thinly sliced
1 can(s) sauerkraut, canned
8 oz pepperjack cheese, shredded
1 Tbsp margarine or butter, melted
1 c thousand island dressing
1/2 c milk
1 Tbsp prepared mustard
2 slice pumpernickel bread

Steps:

  • 1. Preheat oven to 350 degrees F. Spray 13x9 inch baking dish with nonstick cooking spray.
  • 2. Cook noodles according to package directions until al dente. Drain.
  • 3. Cut pastrami (or corned beef) into bite-size pieces. Combine noodes, pastrami, sauerkraut and cheese in large bowl. Pour into prepared dish.
  • 4. Combine dressing, milk, and mustard in small bowl. Spoon dressing mixture evenly over noodle mixture.
  • 5. Tear bread into large pieces. Process in food processor or blender until crumbs are formed. Combine bread crumbs and margarine in small bowl; sprinkle evenly over casserole.
  • 6. Bake, uncovered, 25 to 30 minutes, or until heated through.
