Flavorful, homemade sausage patties without the salt! Perfect for people who are trying to cut back on the salt.

1 1/4 lb ground pork
1 egg (beaten)
1 tsp dried sage
1 tsp dried thyme
1/2 tsp fennel seed
1 dash red pepper flakes
1/4 tsp black pepper
1/4 tsp salt
2 tsp brown sugar

Steps:

  • Combine all ingredients in a bowl.
  • Using your hands, mash all together until very well mixed.
  • Using a heaping tablespoon, form 12 patties. The mixture will be fairly wet, but will come together with some love!
  • Heat a nonstick skillet over medium high heat. Cook patties 4-5 minutes per side.

Number Of Ingredients 10

1/2 cup onion, finely chopped
2 tablespoons olive oil
2 teaspoons dried sage
1 teaspoon fresh ground black pepper
1 tablespoon sugar or 1 tablespoon brown sugar
1/8 teaspoon crushed red pepper flakes
1 pinch ground cloves
1 teaspoon fresh thyme, finely chopped
1 large egg yolk
2 lbs ground lean pork

Steps:

  • Cook onion in the olive oil over moderately low heat.
  • Stir occasionally until onions begin to soften and brown.
  • 8-10 minutes.
  • Cool for 10 minutes.
  • In a small bowl, combine the sage, pepper (red and black), sugar, cloves and thyme.
  • Place the egg yolk, pork, and reserved onion in a large bowl and then add the mixed spices.
  • Mix well.
  • Form into 16 patties, 2 ounces each.
  • Pan fry the patties in a large skillet over medium high heat for 5 minutes on each side or until the internal temperature reaches 160 degrees.
