SLOW-COOKER FRENCH DIP image

3.5 - 4 lb beef chuck roast
1 box (2 packs) beefy onion soup mix
1 bottle or can of beer
1 can (10.5 oz) beef broth
4 cloves garlic
6 French dip or Hoagie rolls
Garlic butter
Condiments:
Cheese slices (provolone, Swiss, cheddar, are all good)
Peperoncini peppers, sliced
Hot cherry peppers, sliced
Grilled onions
Grilled mushrooms
Horseradish

Steps:

  • Place beef in slow-cooker Add soup mix (both packs), beer, and broth Add crushed garlic and mix well Cook 8 - 12 hours on low Remove beef and set aside Pour broth into de-fatting pitcher, catching onions from soup mix on top sieve Transfer onions into skillet and add de-fatted broth Boil to reduce liquid by ~ 1/3rd Using 2 forks, shred beef removing any excess fatty bits Transfer shredded beef to broth skillet, and simmer to keep warm Spread garlic butter in rolls and brown on griddle Remove beef from skillet, squeezing out but reserving broth Put beef in buttered roll and top with cheese and other condiments as desired Serve reserved broth in bowls as the au jus dip.
