LAYERED REFRIED BEAN DIP
This recipe was posted on athriftymom.com, and I doubled the recipe (except the quantity of cheese I left the same as posted). Some of the portions weren't listed exactly so feel free to adjust to your liking or add more cheese. I must confess, I added a litte sour cream, salsa, taco seasoning mix, and cheese to the refried beans. Then I did another layer of salsa. If you're not a salsa fan, you'll probably want to use less. I also used chives instead of green onions because that's what I had. This is good as a dip, but I also thought it was good inside taco shells for lunch or dinner. Tortillas would also work well. You may find that half the recipe is sufficient instead of the doubled ingredients below. Thank you A Thrifty Mom for the great recipe! Serving size is estimated.

Steps:
- Rinse & sort pinto beans then add to Instant Pot with vegetables, spices, herbs, and water (or stock).
- Set Instant Pot to "Bean/Chili" setting for 45 minutes.
- Let pressure release naturally - about 15-20 minutes.
- Once cooked, discard bay leafs.
- Add salt to beans as desired (check the salt level in the juice, not the bean) then mash or puree using a masher, food mill, food processor, blender, or stick-blender. If you mash by hand the beans will be more rustic, if you want them smooth then use a blender (I prefer to use a stick blender).
- Makes about 8 cups.

CHORIZO REFRIED BEAN DIP
Steps:
- 1. Add pinto beans in food processor and puree until smooth or desired consistency. (If using canned refried beans, no pureeing is needed.)
- 2. In a non-stick skillet, sauté and mix chorizo until smooth. Add beans and mix thoroughly. Simmer on low-medium heat for 10-15 minutes; continue to mix occasionally to avoid beans sticking on bottom of pan.
- 3. Top with Kraft Cheddar or Monterey Cheese, and cover until cheese has melted. Remove from heat. Serve with chips or you can spread on flour tortillas to make burritos.

BAKED REFRIED BEAN DIP
Warm layered bean dip, great for parties when served right out of the oven with tortilla chips. You can alter it to include the veggies that you prefer. It is also easy to make mild, medium or hot. My mom started making this when I was a kid and I requested it whenever there was a reason for a potluck! NOTE: I like to bake all of my vegetables so that they get melted into the cheese but others prefer to bake after the cheese layer and add the veggies after baking.
