This delicious and tasty chicken salad is seasoned with fresh chopped cilantro, lime juice, and poultry seasoning.

2 tablespoons olive oil, or more as needed
2 pounds skinless, boneless chicken breasts, or more to taste, cut into bite-sized pieces
1 teaspoon garlic powder, plus more to taste
kosher salt and ground black pepper to taste
1 pinch poultry seasoning, or more to taste
1 cup chopped celery
1 cup red onion, chopped
¼ cup slivered almonds, or to taste
3 tablespoons mayonnaise, or to taste
2 squeezes lime juice, or to taste
1 teaspoon ground cumin
1 teaspoon chili powder
1 tablespoon chopped fresh cilantro, or more to taste

Steps:

  • Heat oil in a large skillet over medium heat and add chicken. Season with garlic powder, salt, pepper, and poultry seasoning. Cook until chicken is no longer pink inside and juices run clear, 10 to 12 minutes. Transfer cooked chicken to a large mixing bowl.
  • Add celery, red onion, and almonds to the bowl with the chicken. Toss in mayonnaise, lime juice, cumin, chili powder, and cilantro. Season with additional salt, pepper, and garlic powder. Add additional mayonnaise if salad seems too dry.
  • Cover and refrigerate for about 1 hour. Serve chilled.

This is my twist on a recipe I found for the traditional chicken salad but without the mayo! It's best served in a wrap with lettuce and tomato or over your favorite green salad. I have found it's also very easy to make even lighter by using fat-free broth, lite soy sauce, and sugar substitute - none of which affects the taste!

1 lime, zested and juiced
2 tablespoons soy sauce
1 (10.5 ounce) can chicken broth
4 boneless, skinless chicken breast halves
2 tablespoons olive oil
1 teaspoon anchovy paste
½ teaspoon white sugar
½ teaspoon salt
freshly ground black pepper to taste
2 cloves garlic, minced
3 tablespoons chopped fresh cilantro
2 shallots, chopped

Steps:

  • Place the lime peel, soy sauce, and chicken broth in a skillet over medium heat. Place the chicken breasts in the skillet, and bring to a boil. Cover, and simmer until the chicken is fully cooked. Remove from heat, and allow to cool. Shred chicken, and set aside.
  • In a separate bowl, whisk together lime juice, olive oil, anchovy paste, sugar, salt, and pepper. Stir in garlic, cilantro, shallots, and chicken. Mix well.

2 cups chopped cooked chicken
1/2 cup chopped red onion
1/2 cup chopped celery
2 tablespoons slivered almonds
1/4 cup finely chopped cilantro leaf
1/4-1/3 cup mayonnaise
1 teaspoon sugar
2 teaspoons low sodium soy sauce
1/8 teaspoon pepper
salt, if needed to taste

Steps:

  • In a large bowl, combine chopped cooked chicken, onion, celery, almonds and cilantro.
  • In a seperate small bowl, whisk together mayo, sugar, soy sauce, pepper, and if needed, salt.
  • Pour dressing over salad mixture and toss well to evenly mix.
  • Chill before serving.

1 cup good quality mayonnaise
4 cups cooked cut-up chicken breasts
1/4 cup celery, chopped fine
1/4 cup red onion, chopped fine
1/4 cup fresh cilantro leaves, chopped
1/4 cup nacho-style sliced jalapeno, chopped
salt and black pepper, to taste

Steps:

  • In a medium mixing bowl, mix all ingredients together except the chicken.
  • Gently fold the chicken into the mayonnaise mixture until well combined.
  • Transfer to your serving bowl, cover with plastic wrap and refrigerate, to allow flavors to meld.

This is one of my favorite salads. I add more cilantro than is called for because I love it so much. Make a little extra dressing and keep it on hand in the fridge. Can be used for marinates, dips and of course salad dressing.

1/3 c olive or vegetable oil
2 Tbsp lime juice
2 Tbsp minced fresh cilantro
1/4 tsp ground cumin
1/4 tsp salt
1/8 tsp crushed red pepper flakes
2 c torn leaf lettuce (romaine, spring mix or spinich work great)
1 c tomatoes cut in wedges (cherry or roma tomatoes work well)
1 c cubed chicken (about 1 chicken breast)

Steps:

  • 1. In a jar with a tight-fitting lid (a canning jar works best), combine the oil, lime juice, cilantro, cumin, salt and red pepper flakes. Do a dance and shake the jar well.
  • 2. In a bowl, combine the lettuce, chicken and tomatoes. Drizzle with dressing and toss to coat. You can add extra cilantro if you wish on top. Refrigerate any excess dressing. I have also used some of this to marinate the chicken in a separate bowl or container prior to cooking. Turned out very well.
