CHEESE AND SAUSAGE APPETIZERS
I got this recipe from a home economics instructor when I was teaching in Oklahoma. I think it represents the Southwest because of its spicy flavor. It can be used as an appetizer before a Mexican meal or served as a snack.

Steps:
- In large bowl, beat the cheese, butter, flour, salt and pepper on medium-low speed. Stir in cooked sausage. Form dough into 1-in. balls; place on ungreased baking sheet. , Bake at 400° for 15-20 minutes or until light golden brown. Serve warm or cold. Store in refrigerator or freezer.

WON TON WRAPPER APPETIZERS
Cheesy sausage-based filling in little cups made from baked won ton wrappers. The baked cups and filling may be prepared a day or two in advance (store covered in the refrigerator) and assembled shortly before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a miniature muffin pan with cooking spray.
- Insert wonton wrappers into the muffin pan so as to form small cups. Bake 5 minutes in the preheated oven. Allow the baked wrappers to cool. Remove from the pan.
- In a medium bowl, mix the sausage, Monterey Jack, Cheddar, black olives and Ranch-style dressing. Fill the baked wonton wrapper cups with the mixture.
- Bake the filled wonton wrappers 10 to 15 minutes, until the sausage mixture is bubbly and slightly brown. Watch closely so the wonton wrappers do not burn.

REDNECK SAUSAGE HORS D'OEUVRES

Steps:
- Heat a smoker to 300˚F.
- Place the sausage slices in a single layer on an aluminum baking pan, and sprinkle them liberally with the rub. Put the pan in the smoker and let the sausages smoke for 45 minutes. Check occasionally to make sure they're not sticking to the pan.
- Remove the pan from the smoker, and toss the sausages with the hickory sauce. Place toothpicks in the slices and arrange on a platter. And there you have it: redneck hors d'oeuvres.
SAUSAGE HORS D'OEUVRES
Steps:
- Preheat the oven to 375 degrees F.
- Using a stand mixer fitted with a paddle attachment, combine the sausage, cheese and baking mix and beat on low speed until blended. Add pepper to taste. Shape the mixture into 1-inch balls and place them 1 inch apart on an ungreased cookies sheet. Bake until browned, about 20 minutes.
- Drain on paper towels, sprinkle with salt and serve hot, warm or at room temperature.
REDNECK (O'DEARS) HORS D'OEUVRES
A tasty little snack. This little dish has also been referred to "cheap smore's. I once threw a "redneck" party - (where all you could bring was redneck type foods) I decided to bring this snack and they were a smash.

- 1. Lay out crackers (salty side down) - spread peanut butter on each cracker - top with 1/2 large marshmallow. Bake @ 350 for approx. 10 min. or until marshmallows are light brown. Eat and enjoy!!! ****Be sure to spray or lined cookie sheet with wax paper****
