1 (14 ounce) can Rotel Tomatoes
1 (14 ounce) can black beans, drained and rinsed
1 (10 ounce) can white shoepeg corn, drained and rinsed
1 bunch green onion, chopped
1 (8 ounce) bottle Italian dressing (I like Kraft Zesty Italian)

Steps:

  • Drain all canned ingredients.
  • Mix vegetables together in bowl.
  • Coat with the Italian dressing.
  • You may not need the entire bottle.
  • Cover and chill overnight.
  • Serve with corn chips or crackers.

1 can black beans, rinsed and drained
1 can white shoepeg corn, drained
3 cups fresh salsa (Sam's or Costco carry large containers)
1/2 cup Italian dressing
1/4 cup fresh cilantro, chopped and lightly packed
Tortilla or baked pita chips

Steps:

  • In a large container, combine beans and corn. Drain liquid from salsa. Add salsa and Italian dressing to beans and corn. Chop some fresh cilantro and add for extra flavor. Let stand in refrigerator for 2 hours before serving. Serve with chips, enjoy!

I have been making this dip for large gatherings for many years. It's one of the most requested appetizers I make.

1 lb ground beef
1 lb breakfast sausage, regular
1 large onion, chopped
1 can(s) cream of mushroom soup
12 oz picante sauce
2 lb velveeta, cut in pieces
1 small can chopped green chilies
1 small can, chopped jalepenos (optional - use your own judgment)
2 large bags tortilla chips for dipping

Steps:

  • 1. Brown ground beef, sausage and onion in skillet. May be made ahead of time and frozen.
  • 2. Place all ingredients in large crock pot and heat on medium until cheese is melted and all ingredients are mixed together. Stir frequently.
  • 3. Be sure to put crock pot on Low or Warm after cheese melts so dip doesn't burn.
  • 4. Place chips in large bowl or basket next to the crock pot.
  • 5. Provide a large spoon for guests to put dip on small plates so folks won't dip chips into the crock pot. Warning: this won't stop some of 'em.
  • 6. This will become your most requested appetizer at any large gathering.

16 oz hot Jimmy Dean sausage
3 cans (30 oz) Rotel tomatoes and peppers (mild or spicy)
4 pkgs. (64 oz) cream cheese

Steps:

  • Brown sausage, drain grease and return sausage to pan. Mix in cream cheese and Rotel until melted and smooth. Serve with tortilla chips.

A BLACKEYE PEA SALAD OR DIP (A.K.A. REDNECK CAVIAR)



A Blackeye Pea Salad or Dip (a.k.a. Redneck Caviar) image

A simple and tasty side dish or dip. And healthy too!

Number Of Ingredients 10

2 cans (15 0z. Can) Blackeye Peas, Drained
½ cups Red Onion, Diced (about 1/2 Medium Onion)
½ cups Yellow Bell Pepper, Diced (about 1/2 Of Pepper)
2 Tablespoons Green Onion, Chopped (about 3 Green Onions)
⅓ cups Cilantro Leaves, Rough Chopped
¼ cups Canola Oil
¼ cups Rice Wine Or White Wine Vinegar
½ teaspoons Brown Sugar
¼ teaspoons Salt
¼ teaspoons Pepper

Steps:

  • Begin by draining the peas.
  • Dice the purple/red onion, green onion, yellow bell pepper and rough chop the cilantro.
  • Mix together the blackeye peas, onion, pepper and cilantro in a bowl.
  • In a small bowl whisk together the vinegar, oil, brown sugar, salt and pepper. Pour over the blackeye pea/onion/pepper combo, mix well to combine.
  • Serve right away or refrigerate until ready to serve.
  • Note that it does seem to taste better when it's been given time to warm up to room temperature instead of straight out of the fridge.
