3 ½ cups chicken broth
3 tablespoons unsalted butter
1 small onion, finely chopped
3 cloves garlic, minced
1 cup Arborio rice
½ cup dry red wine
1 (8 ounce) package sliced cremini mushrooms
½ cup grated Parmesan cheese
⅓ cup grated mozzarella cheese
¼ cup chopped fresh parsley
salt and ground black pepper to taste

Steps:

  • Bring broth to a simmer in a saucepan over medium-high heat. Cover saucepan and keep broth warm over low heat.
  • Melt butter in a heavy large saucepan over medium heat; cook and stir onion until softened, about 8 minutes. Add garlic to onion and cook until fragrant, about 30 seconds. Stir rice into onion mixture and cook until fragrant and slightly toasted, about 2 minutes. Add wine to rice mixture and stir for 1 minute.
  • Pour 3/4 cup hot broth into rice mixture; cook and stir constantly until absorbed, about 6 minutes. Add 3/4 cup more hot broth; cook and stir for 6 minutes. Add 3/4 cup hot broth; cook and stir for 6 minutes. Add 3/4 cup hot broth; cook and stir for 3 minutes. Add the remaining 1/2 cup hot broth and mushrooms; cook and stir for 5 minutes.
  • Stir Parmesan cheese, mozzarella cheese, parsley, salt, and pepper into risotto; cook and stir until cheeses are melted, about 30 seconds.

2 1/2 cups chicken broth
1 tablespoon olive oil
2 tablespoons butter
1 medium yellow onion, chopped
2 cloves garlic, smashed with the side of a knife
1 cup arborio rice
2 cups red wine
Kosher salt
1 cup freshly grated Parmigiano-Reggiano cheese
2 tablespoons thinly sliced chives
1 teaspoon fresh thyme leaves

Steps:

  • In small saucepan, bring broth to a simmer. In medium saucepan, melt 1 tablespoon butter in oil over medium-low heat. When it foams, add onion and garlic; cook until softened. Pour in rice and stir to coat. Cook, stirring slowly, until rice is lightly toasted, about 3 minutes.
  • Pour in 1 cup wine and reduce over medium-high heat until almost gone. Add second cup and reduce once more. When pan liquid is syrupy, begin ladling in hot broth, 1/2 cup at a time. Stir rice and adjust heat so that it is just bubbling on the edges. Continue stirring and adding broth as needed. Rice is done when it is tender but still firm to the bite in center. If you run out of broth before rice is cooked, add hot water. Mixture should be creamy and loose, not soupy. Taste and adjust seasoning.
  • Stir in 1/2 cup cheese and remaining tablespoon butter. Fold in chives and thyme. Serve risotto, passing the remaining cheese at the table.

3 tablespoons unsalted butter
1 cup finely chopped onion
2 garlic cloves, minced
1 cup arborio rice, or medium-grain white rice
1/2 cup dry red wine
1/3 cup frozen peas, defrosted, optional
1/4 cup chopped fresh Italian parsley leaves
1/2 cup grated Parmesan, plus additional for garnish
Salt and freshly ground black pepper

Steps:

  • Bring the broth to a simmer over medium-high heat. Cover the broth and keep it warm over very low heat.
  • Melt the butter in a heavy large saucepan over medium heat. Add the onion and saute until translucent, about 8 minutes. Stir in the garlic and saute for 30 seconds. Stir in the rice and cook for about 2 minutes until the rice is toasted. Add the wine and stir until it is absorbed, about 1 minute. Add 3/4 cup of hot broth; simmer over medium-low heat until the liquid is absorbed, stirring often, about 6 minutes. Repeat, adding 3/4 cup of hot broth 2 more times, stirring often, about 12 minutes longer. At this point, the risotto can be made 4 hours ahead. Refrigerate the risotto (the rice will still be firm) and remaining broth, uncovered, until cool, then cover and keep them refrigerated until ready to proceed.
  • Bring the remaining broth to a simmer, then cover and keep it warm over very low heat. Stir 3/4 cup of hot broth into the partially cooked risotto over medium heat until the broth is absorbed and the risotto is hot, about 3 minutes. Add the remaining broth and simmer until the rice is just tender and the mixture is creamy, about 5 minutes longer. Stir in the peas and parsley. Add the 1/2 cup of Parmesan. 1 ounce dried porcini mushrooms*
2 cups boiling water
1 1/2 pounds fresh cremini or white mushrooms
3/4 stick (6 tablespoons) unsalted butter
5 to 6 cups low-salt chicken broth
6 ounces 1/4-inch-thick slices pancetta (Italian unsmoked cured bacon)**, chopped
1 cup finely chopped onion
1 tablespoon finely chopped fresh rosemary leaves or 1 teaspoon dried rosemary, crumbled
1 tablespoon finely chopped fresh sage leaves or 1 teaspoon dried sage, crumbled
3 cups Arborio rice**
2 cups dry red wine such as Rosso di Montalcino
3 tablespoons finely chopped fresh parsley leaves
1 cup freshly grated Parmesan
Garnishes: curls shaved with a vegetable peeler from a 1/4-pound piece of Parmesan, fresh rosemary sprigs

Steps:

  • In a small bowl soak porcini in boiling water 30 minutes. Pour soaking liquid through a fine sieve lined with a dampened paper towel or coffee filter into a bowl and reserve. Wash porcini under cold water to remove any grit and pat dry. Chop porcini fine.
  • Chop fine 1/4 pound cremini or white mushrooms (about 1 1/2 cups) and reserve. Depending on size, halve and/or quarter remaining 1 1/4 pounds cremini or white mushrooms and in a large heavy skillet cook in 4 tablespoons butter with salt and pepper to taste over moderate heat, stirring, until tender, 5 to 10 minutes. Remove skillet from heat and reserve mushrooms in skillet. (They will be reheated just before serving.)
  • In a large saucepan heat broth and keep at a bare simmer.
  • In a 5-to-6 quart heavy saucepan cook pancetta over moderate heat, stirring, 5 minutes. Add reserved finely chopped cremini or white mushrooms, remaining 2 tablespoons butter, onion, rosemary, sage, and salt and pepper to taste and cook, stirring, until onion is softened. Stir in rice and cook, stirring, until coated well with fat, about 1 minute. Add 1 cup wine and cook, stirring constantly, until absorbed. Add remaining cup wine and cook, stirring constantly, until absorbed.
  • Add 1 cup simmering broth and cook, stirring constantly, until absorbed. Continue cooking and adding broth, 1/2 cup at a time, stirring constantly and letting each addition be absorbed before adding next, until rice is tender and creamy-looking but still al dente, 20 to 25 minutes.
  • Note: About halfway through cooking, add reserved porcini soaking liquid and chopped porcini, stirring constantly until liquid is absorbed, and continue cooking and adding broth in same manner.
  • During last few minutes of cooking, reheat reserved cremini or white mushrooms in skillet over moderate heat, stirring, until hot, and stir in parsley and salt and pepper to taste. Stir grated Parmesan and salt and pepper to taste into risotto.
  • Serve risotto immediately, topped with cremini or white mushrooms and garnished with Parmesan curls and rosemary.

Get your dinner party off to a great start with red wine risotto

450-500ml/16-18fl oz chicken or vegetable stock, more if needed
85g butter
1 medium onion , chopped
200g round grain risotto rice , such as arborio or carnaroli
500ml red wine , a merlot is ideal
grated parmesan (or vegetarian alternative), to serve

Steps:

  • Heat the stock in a saucepan and keep it warm at the side of the stove. Melt half the butter in a shallow saucepan or casserole, add the onion with salt and pepper and sauté for 5-7 minutes until soft, but not browned. Stir in the rice and sauté it, stirring constantly, until it absorbs the butter, about 2 minutes.
  • Stir in about half the wine with a little salt and pepper and simmer, stirring, until the rice starts to dry, 5-7 minutes. Add a couple of ladlefuls of hot stock and continue simmering, stirring gently but constantly. When the rice dries again and needs more liquid, add the remaining wine.
  • Continue cooking, stirring all the time and adding more stock in batches. At the end of cooking, the rice should be tender, still slightly al dente (chewy) and creamy from the starch that has begun to leach from the grains. This will take 25 to 35 minutes and don't hesitate to use plenty of stock.
  • Take the risotto from the heat, add the remaining butter in pieces, and stir it into the rice as it melts. Taste and adjust the seasoning. Serve the risotto in shallow bowls or on deep plates with a sprinkling of Parmesan. It is best served at once, though it can be kept warm for a few minutes. If necessary, soften it with a little more stock just before serving.

Steps:

  • Heat olive oil in a Dutch oven or heavy pot over medium heat; cook prosciutto until edges begin to curl and fat is rendered, 2 to 3 minutes. Add shallot and cook until fragrant, about 2 minutes. Add garlic and cook until fragrant, about 1 minute. Add mushrooms and cook for 30 seconds.
  • Cook and stir rice into prosciutto mixture, stirring continually, until rice is translucent around edges, 1 to 2 minutes. 1 small fennel bulb, chopped

1/2 head of garlic, halved crosswise

1 1/2 pounds Parmesan cheese rinds, broken into 2- to 3-inch squares
2 fresh thyme sprigs
2 fresh parsley sprigs
8 cups (about) water
Risotto:
4 fresh thyme sprigs
2 fresh Italian parsley sprigs
2 bay leaves
1 teaspoon whole black peppercorns
1 teaspoon fennel seeds
2 cups low-salt chicken broth
2 cups beef broth
1/2 cup (1 stick) butter
1/2 cup minced onion
1 garlic clove, minced
2 cups carnaroli rice or arborio rice
2 cups Pinot Noir
6 ounces white truffle butter*
2 tablespoons red or white verjus or 1 tablespoon red or white wine vinegar
2 tablespoons minced fresh Italian parsley

Steps:

  • Make parmesan broth:
  • Melt butter in heavy large saucepan over medium heat. Add leek, fennel, onion, and garlic. Stir until vegetables are soft, about 5 minutes. Add tomato paste and cook until beginning to brown on bottom of pan, about 2 minutes. Add cheese rinds, thyme, and parsley. Add enough water just to cover. Bring to boil; reduce heat to medium-low, cover, and simmer 2 hours, stirring occasionally. Strain, discarding solids in strainer. Return broth to saucepan. Boil over medium-high heat until reduced to 1 1/2 cups, about 15 minutes. Season with salt and pepper. DO AHEAD: Can be made 2 days ahead. Cover and chill. Rewarm before using, whisking to blend.
  • Make risotto:
  • Place first 5 ingredients in double layer of cheesecloth; gather ends. Tie tightly with kitchen string; trim excess cloth.
  • Bring chicken and beef broths to simmer in medium saucepan. Cover and keep warm. Melt butter in large saucepan over medium heat. Add herb bundle, onion, and garlic. Cook until onion is soft, stirring occasionally, about 5 minutes. Add rice and stir to coat. Add wine; increase heat to high. Boil until almost dry, about 6 minutes. Add warm broth mixture 1 cup at a time, allowing each addition to be absorbed before adding next and stirring often until rice is tender but still firm to bite, about 20 minutes. BARLEY RISOTTO WITH CAULIFLOWER AND RED WINE



Barley Risotto With Cauliflower and Red Wine image

The Italians make a risotto-like dish called orzotto with barley. It has a chewier, more robust texture than risotto made with rice and considerably more fiber. I like to use red wine in this dish, both for its flavor and because I like the way it tints the cauliflower.

7 to 8 cups vegetable or chicken stock, as needed
Salt
2 tablespoons extra virgin olive oil
1 small or 1/2 medium onion, minced
2 large garlic cloves, minced or pressed
1 1/2 cups barley
1 medium cauliflower, separated into small florets or sliced 1/2 inch thick
1 cup robust red wine, such as a Côtes du Rhône
3 tablespoons chopped flat-leaf parsley
2 ounces Parmesan cheese, grated (1/2 cup)
Freshly ground pepper

Steps:

  • Season the stock well with salt and bring to a simmer in a medium saucepan.
  • Heat the oil over medium heat in a large, heavy nonstick frying pan or a wide, heavy saucepan. Add the onion. Cook, stirring, until the onion begins to soften, about three minutes. Add the garlic, cauliflower and barley. Cook, stirring, for a couple of minutes, until the grains of barley are separate and beginning to crackle.
  • Add the red wine and cook, stirring, until there is no more wine visible in the pan. Stir in enough of the simmering stock to just cover the barley. The stock should bubble slowly. Cook, stirring often, until it is just about absorbed. Add more stock and continue to cook in this fashion, not too fast and not too slowly, adding more stock when the barley is almost dry, until the barley is tender but still chewy. Taste and add salt if necessary.
  • Add another ladleful of stock to the barley. Stir in the parsley and Parmesan, and immediately remove from the heat. Add freshly ground pepper, taste one last time and adjust salt. Serve at once.

This is a great one dish meal--you basically throw it all in the oven and it cooks itself. Don't be afraid of the amount of liquid used as a lot evaporates & a lot is soaked up by the rice. You can also add some whole fresh tomatoes to roast alongside the lamb if you like.

4 lamb shanks, frenched
1 cup arborio rice
2 carrots, peeled and diced
2 stalks celery, trimmed and sliced
425 g crushed tomatoes or 425 g diced tomatoes
1 teaspoon mild chili pepper, minced
2 cups beef stock
1 cup red wine
2 teaspoons dried rosemary
2 garlic cloves, crushed
water or stock
2 tablespoons fresh parsley, chopped

Steps:

  • Roast lamb shanks at 200 C in a roasting pan for approx 30 minutes.
  • Remove shanks from pan and drain fat from pan then add rice. Sprinkle carrots & celery over rice.
  • Mix chili, garlic, stock, tomatoes, wine & rosemary together and pour over rice. (This mixture could be used as a marinade for the lamb prior to cooking).
  • Place shanks on top of rice with tomatoes. Cover & cook at 150 C for approx 2 hours.
  • Check after an hour or so and add more liquid if necessary.
  • Serve garnished with chopped parsley.

2 tablespoons butter
1 cup fresh peas, picked over and rinsed and drained or 1 cup canned peas, rinsed and drained

Steps:

  • Over medium heat, render chorizo in pressure cooker. Remove chorizo but leave fat.
  • Add olive oil and onions. Cook until the onions become translucent.
  • Add the rice and stir for 3-4 minutes.
  • Add the wine and cook until reduced. Add the stock.
  • Secure the lid. Bring to high pressure, and turn heat to medium (or possibly lower) to stabilize at lowest temperature at which high pressure is maintained. From moment that high pressure was reached, cook for 5 minutes. Refer to your pressure cooker manual to check advised cooking times.

2 tablespoons butter
1 shallot
1/2 cup red qunioa
1/4 cup red wine
4 cups low sodium chicken broth
truffle oil
Parmesan cheese
salt
pepper

Steps:

  • Dice medium sized shallot. Melt butter in skillet on low heat. (Can substitute olive oil if desired, but butter will result in a better flavor.) Add diced shallot and cook until soft. Add salt and pepper to taste. Add quinoa and stir. Make sure quinoa is coated with oil. Add red wine -- a full bodied, fruity wine like Merlot is best. Red wine should just cover quinoa. Allow red wine to cook down before adding chicken broth. Add chicken broth slowly, a little at a time. Stir occasionally. Continue adding chicken broth until quinoa is soft. When ready to finish, add another dash of red wine, turn the heat up, and allow the red wine to cook off. Turn stove off. Drizzle with truffle oil to taste and stir. Serve. Makes 2 servings. Top with parmesan.

275 g italian pork sausages
1 tablespoon extra virgin olive oil
2 tablespoons butter
1 onion, finely chopped
300 g arborio rice
200 ml red wine
1 1/3 liters chicken stock, heated
2 tablespoons parmesan cheese, freshly grated
sea salt
fresh ground black pepper

Steps:

  • Take the skin off the sausages, and pinch the meat into a non-stick frying pan. Fry meat until crusty and golden, then drain off the oil, and set the meat aside.
  • Heat the olive oil and half the butter in a pan. Fry the onion gently until softened but not brown. Add the rice, and using a wooden spoon, toss well until the rice is coated in the buttery onions. Pour in red wine and bring to a boil, stirring.
  • Add a ladle full of the hot stock to the rice. Stir carefully over medium heat until the stock has been absorbed. Continue to add the stock a ladle full at a time. This should take about 20 minutes.
  • Add the sausage meat, and stir for another 10 minutes until the rice is cooked but not soft.
  • Turn off the heat and add the Parmesan, remaining butter, and salt and pepper to taste. Stir through. Cover and leave to rest for 3-4 minutes before serving.

1 pound slender asparagus
2 tablespoons extra virgin olive oil
1 cup finely chopped onion
½ cup dried Porcini mushrooms, cleaned and chopped fine
1 ½ cups Arborio rice
1/2 cup dry red wine
2 tablespoons unsalted butter
Freshly grated Parmesan cheese
2 cups vegetable stock
2 cups water

Steps:

  • In a small bowl, pour ½ cup of boiling water over the dried mushrooms, let sit for 10-15 minutes. Snap off the ends of the asparagus where they break naturally. Peel the stems if necessary. Cut off the tips and set them aside. Chop the stems into 1” long pieces. Bring the water and stock to a simmer in a saucepan. Heat the oil in a heavy saucepan. Add the onion and cook gently until it is translucent. Add the rice and asparagus and cook, stirring, about 5 minutes. Add the wine, allow nearly all of it to evaporate, then add porcini mushrooms and soaking liquid. Slowly add the broth mix to the rice, about 1/4 cup at a time, adding a ladleful at a time as the liquid in the pan evaporates. Cook, stirring, until the risotto is plump and offers a little resistance to the bite. The risotto should be very moist. Stir in the butter and Parmesan cheese and serve immediately.

6 cups chicken broth
1 tablespoon Olive Oil
12 ounces Sweet or Hot Italian Sausage
1/3 cup Finely Chopped Shallots
1 cup Arborio Rice
1 cup Dry, fruity red wine (Chianti)
3 ounces Baby Arugula Leaves
1 pinch Kosher Salt to taste
1 pinch fresh ground black pepper to taste
1 tablespoon unsalted butter
3/4 cup Finely grated Romano Cheese

Steps:

  • Pour the chicken broth in a large sauce pan and bring to a boil over high heat. Reduce heat to low, cover, and keep hot.
  • Pour oil into large skillet and heat over medium heat. Add sausage and cook until no longer pink, stirring frequently, about 6-8 minutes. Transfer sausage to a medium mixing bowl, set aside.
  • Pour off all but two tablespoons of fat and return sauce pan to a medium low heat. Add rice and cook, stirring constantly until evenly coated with fat and heated through, about three minutes.
  • Increase heat to medium and add the wine to the saucepan. Cook, stirring constantly, with a wooden spoon, until the wine is almost fully absorbed. Using a ladle, add the hot broth 1 cup at a time, stirring constantly and adding more broth only after the precious addition has been absorbed. Continue cooking until the mixture is creamy and the rice grains are al dente, about 20 minutes. During the last 2 minutes of cooking, add arugula, stirring constantly, until arugula wilts. Taste and adjust seasoning with salt and pepper.
  • Remove from heat and stir in the remaining 1 tablespoon of butter, sausage, and romano. If risotto is thick, use any leftover stock or add hot water to thin as needed.
  • To Serve: Divide risotto between 4 warmed shallow serving bowls. Serve immediately.

3 tablespoons vegetable oil
3/4 pound fresh porcini or stemmed shiitake mushrooms-1/2 pound cut into 1/2 -inch dice, 1/4 pound sliced 1/4 inch thick

1 medium shallot, thinly sliced
1 garlic clove, thinly sliced
2 tablespoons sugar
1 tablespoon water
3/4 cup dry red wine, such as Amarone
1/2 cup red wine vinegar
1/2 tablespoon unsalted butter
Risotto
5 cups chicken stock
1 tablespoon extra-virgin olive oil
1 small onion, minced
1 cup arborio rice (6 ounces)
1/2 cup dry red wine, such as Amarone
1 tablespoon unsalted butter
Salt and freshly ground pepper
One 2-ounce piece Parmigiano-Reggiano cheese, for shaving
2 teaspoons chopped mixed herbs, such as chives, mint and tarragon

Steps:

  • MAKE THE MARMALADE In a large, nonstick skillet, heat 1 tablespoon of the vegetable oil. Add the diced mushrooms; season with salt and pepper. Cover and cook over moderate heat until tender, 5 minutes. Uncover and cook, stirring, until browned. Transfer the mushrooms to a plate. 2. In the same skillet, heat another 1 tablespoon of vegetable oil. Add the shallot and garlic and cook over low heat until softened, about 10 minutes. Remove from the heat and stir in the cooked mushrooms. 3. In a small saucepan, simmer the sugar and water over moderate heat, washing down the side of the pan with a wet pastry brush, until amber, 6 minutes. Add the wine and bring to a boil, stirring to dissolve the sugar. Add the vinegar and boil over high heat until reduced by half, 12 minutes. Stir the mixture into the skillet and cook over moderate heat until the mushrooms are glazed, 3 minutes. Season with salt. 4. In a medium skillet, heat the remaining 1 tablespoon of vegetable oil. Add the sliced mushrooms, season with salt and cook over moderate heat until tender and lightly browned, about 8 minutes. Stir the mushrooms into the marmalade, and swirl in the butter. Cover and keep warm. 5. MAKE THE RISOTTO In a medium saucepan, bring the chicken stock to a simmer; cover and keep warm over low heat. In a large saucepan, heat the olive oil. Add the onion and cook over moderate heat until softened, about 5 minutes. Stir in the rice and cook for 2 minutes. Add the wine and simmer until almost evaporated. Pour in about 1 cup of the hot stock, or enough to cover the rice. Cook, stirring constantly, until the stock has been absorbed, about 5 minutes. Repeat, adding 1 cup of stock at a time and stirring until all of the stock has been absorbed. The risotto is done when the rice is just cooked and suspended in the creamy sauce, about 25 minutes. Stir in the butter and season with salt and pepper. 6. Spoon the risotto into bowls and top with the mushroom marmalade. Shave a few slices of Parmigiano-Reggiano over the risotto, garnish with the herbs and serve.

1 small onion, diced
2 garlic cloves, crushed
12 ounces risotto rice (just under 2 cups)
1/2 cup red wine
3 1/2 cups hot vegetable stock
5 ounces soft fresh goat cheese
fresh thyme sprig, to garnish
1 lb baby onion, peeled
1 tablespoon olive oil
1 tablespoon brown sugar
1 tablespoon Bourbon

Steps:

  • For this recipe, once you have started the baby onions, go straight to the risotto so they cook simultaneously.
  • For the baby onions, heat the olive oil in a small saucepan and add the onions, sugar and bourbon. Cover and cook over a very low heat, stirring occasionally, for 20-25 minutes. If the onions begin to dry out, add a tablespoon of water. You may need to uncover the pan during the last few minutes for the liquid to evaporate (if it has not evaporated by then, turn up the heat).
  • Meanwhile, for the risotto, heat the oil in a skillet and add the onion. Cook for a few minutes then add the garlic.
  • Add the risotto rice and stir well to coat with the oil.
  • Add the red wine and stir until the wine has soaked in completely.
  • Add the stock 1/2 a cup at a time, making sure the stock has been completely absorbed before you add more. This will take around 20 minutes. When all the stock is absorbed, taste the rice to make sure it is cooked but still firm. Remove from the heat.
  • Save about a third of the goats cheese to crumble over the risotto. Stir the rest into the risotto.
  • Put the risotto onto plates, top with the caramelised onions and crumbled goats cheese. Garnish with sprigs of thyme and serve!

3 tablespoons unsalted butter
1 cup finely chopped onion
2 garlic cloves, minced
1 cup arborio rice or medium grain white rice
1/2 cup red wine
1/3 cup frozen peas, defrosted, optional
1/4 cup chopped fresh parsley
1/2 cup Parmesan cheese plus additional for garnish

Steps:

  • Bring the broth to a simmer over medium high heat. Cover the broth and keep it warm over very low heat. Melt the butter in a heavy saucepan over medium heat. Add the onion and saute until translucent, about 8 minutes. Stir in the garlic and saute for 30 seconds. Stir in the rice and cook for about 2 minutes until the rice is toasted. Add the wine and stir until it is absorbed, about 1 minute. Add 3/4 cup of hot broth, simmer over medium low heat until the liquid is absorbed, stirring often about 6 minutes. Repeat, adding 3/4 cup of hot broth 2 more times, stirring often about 12 minutes longer. At this point, the risotto can be made 4 hours ahead. Refrigerate the risotto (the rice will still be firm) and remaining broth uncovered, until cook, then cover and keep them refrigerated until ready to proceed. Bring the remaining broth to a simmer, then cover and keep it warm over very low heat. Stir 3/4 cup of hot broth into the partially cooked risotto over medium heat until the broth is absorbed and the risotto is hot, about 3 minutes. Add the remaining broth and simmer until the rice is just tender and the mixture is creamy, about 5 minutes longer. Stir in the peas and parsley. Add the 1/2 cup of Parmesean. Season, to taste, with salt and pepper. Spoon the risotto into bowls. Sprinkle additional cheese over and serve.

1 1/4 cups arborio rice
1 cup of your favorite red wine
3-4 cups low-sodium chicken stock
6 ounces goat cheese
3 cups sliced mushrooms
1/4 teaspoon salt
1/4 teaspoon pepper
fresh basil for topping

Steps:

  • In a large skillet, heat 1 tablespoons of butter and olive oil over low heat, then add mushrooms. Let cook for 10-15 minutes, stirring occasionally until mushrooms are juicy and caramelized. While mushrooms are cooking, in a large saucepan heat 1 tablespoon each of butter and olive oil over medium heat. Once hot, add garlic and cook for 30 seconds. Add rice, tossing to coat in the butter and oil, then toast while stirring occasionally for 3-4 minutes. Add in wine, stirring every few minutes until absorbed. Once absorbed, add in 1 cup stock, stirring until absorbed like you did with the wine. Repeat 2-3 more times, until all stock has been added and absorbed. This should take about 15 minutes - I do not stir constantly, but actually just keep an eye on it and stir every few minutes. Taste rice and determine if the they are cooked to your liking (if not, add in 1 more cup of stock and stir). Reduce the heat to low and add in salt, pepper, 5 ounces of goat cheese and mushrooms, then stir. Serve with remaining goat cheese crumbled on top and a sprinkling of fresh basil.

In same skillet, heat 1T oil. Add shallot & garlic. Cook low until soft 10 min. Remove from heat & add mushrooms. In small saucepan, simmer sugar & water over med heat washing down sides w/ wet pastry brush until amber 6 min. Add wine & bring to boil, stirring to dissolve sugar. Add vinegar & boil on high until reduced to 1/2 12 min. Stir mixture into skillet & cook over med heat until mushrooms are glazed 3 min Season w salt.
