RED VELVET PEPPERMINT WHOOPIE PIES
I made these for a Christmas party this year and have been asked to make them again for 2 other parties. The perfect combination of chocolate and peppermint. I added a little green food coloring into the cream cheese frosting for a festive touch.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix cake mix, oil, eggs, and peppermint extract together in a bowl.
- Roll the dough into walnut-size balls and space about 2 inches apart on a cookie sheet.
- Bake in the preheated oven until the tops of the cookies start to crack, about 8 minutes. Take out of the oven and let cool on the pan for about 5 minutes before moving to a cooling rack.
- Beat cream cheese, butter, and vanilla extract together in a bowl with an electric mixer. Add powdered sugar a little at a time to reach desired consistency, or to sweeten to your liking.
- Spread filling between 2 cooled cookies.

Santa will want to hurry down the chimney for these festive Peppermint Red Velvet Whoopie Pies. Grab a Peppermint Stick Flavor Mix and start spreading holiday cheer!

- Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
- Mix Duncan Hines® Red Velvet Cake Mix, flour, eggs, vegetable oil, water and buttermilk.
- Using a tablespoon, scoop batter onto parchment-lined baking sheets. Put no more than 6 to 8 on a sheet pan, as the batter will spread.
- Bake for 8 minutes. Let cool completely.
- Pour 1 packet of Duncan Hines® Frosting Creations™ Peppermint Stick into 1 can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended. Repeat with second can and packet.
- Spread 1 tablespoon of the Peppermint Stick frosting you just created on the flat sides of half of the whoopie pies and top with remaining pies.
- Put peppermints in a plastic bag and using a rolling pin, crush them into a fine dust.
- Drizzle melted white chocolate over top of whoopie pie. Sprinkle peppermint dust on wet white chocolate.
