This recipe is on the side panel of Bob's Red Mill Oat bran hot cereal. I tried it today and it is delicious! My kids and grandson are gobbling them up right now! I altered the package recipe a little bit, and this recipe reflects those changes.

Number Of Ingredients 16

3/4 cup whole wheat flour (we grind our own)
1/4 cup all-purpose white flour
3/4 cup oat bran
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1 banana, mashed (1/3 cup mashed)
4 ounces activia cherry yogurt
1 medium egg
1/3 cup 1% low-fat milk
2 tablespoons vegetable oil
1/2 teaspoon vanilla
1/2 cup shredded carrot
1/2 cup chopped dates
1/2 cup chopped pecans

Steps:

  • Mix dry ingredients together. Add the carrots, dates, and pecans.
  • Mix liquid ingredients in separate bowl.
  • Combine the liquid ingredients with the dry ingredients and stir until moistened.
  • Lightly grease muffin tins. Fill 2/3 full with batter. Bake at 400 degrees for 18-20 minutes.

CRANBERRY BREAKFAST MUFFINS

A friend asked me months ago to post this recipe and I'm only getting around to it now! He likes Red River cereal and was intrigued by the fact that I have a muffin recipe that uses it. For those of you who don't know what Red River cereal is, it contains cracked wheat, rye and flax and is very healthy. I have only seen it sold in Canada though so if you want to try this, you may have to experiment with various combinations of the above. Please note that standing time is included in the cooking time.

Number Of Ingredients 11

3/4 cup rolled oats
1/2 cup red river cereal
1 cup buttermilk
1 cup all-purpose flour
3/4 cup brown sugar, packed
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/3 cup butter, melted
1 cup fresh cranberries (Use frozen if fresh are not available)

Steps:

  • Combine the oats, Red River cereal and buttermilk in a large bowl.
  • Let stand for 40 minutes.
  • Combine the flour, sugar, baking powder, baking soda and salt.
  • Add the egg and melted butter to the cereal mixture.
  • Add the dry ingredients and mix well.
  • Stir in the cranberries.
  • Spoon the batter into the prepared muffin pan.
  • Bake for 20 to 25 minutes or until the top springs back when lightly touched.

RED RIVER DATE MUFFINS

I adapted this from a recipe on the Robin Hood site, makers of Red River cereal, which by the way, is an EXCELLENT high fiber, tasty hot cereal. It called for cranberries, didn't have any, coped. My 3 year old grandson loves these "muppins". Very moist, tasty.

3/4 cup old fashioned oats or 3/4 cup quick oats
1/2 cup red river cereal, uncooked
1 cup buttermilk (or 1T lemon juice, fill cup with milk)
1 cup flour
3/4 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/3 cup butter, melted
1 cup chopped dates

Steps:

  • Combine oats, Red River and milk in large bowl, let stand 40 minutes.
  • Combine remaining dry ingredients.
  • Add butter and egg to cereal mixture.
  • Add dry ingredients& mix well.
  • Stir in dates.
  • Spoon into 12 greased muffin tins.
  • Bake at 375 degrees for 20-25 minutes or until set.
  • Turn out to cool and store in airtight container, if there are any to store.
  • Prep time includes letting cereal soak for 40 minutes.

This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

½ cup dark brown sugar
1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
2 eggs
1 cup chilled applesauce
4 tablespoons vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
  • Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
  • VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.

1/2 cup old-fashioned oats
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup all-bran cereal
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 large egg, beaten
1/4 cup vegetable oil
1/2 cup molasses
3/4 cup buttermilk
1 can (8 ounces) crushed pineapple in natural juice, undrained
1/2 cup chopped nuts, dates or raisins

Steps:

  • In a bowl, combine the first seven ingredients. Make a well in the center. Combine the egg, oil, molasses, buttermilk and pineapple with juice. Pour into well; mix just until dry ingredients are moistened. Stir in the nuts, dates or raisins. , Fill 18 greased muffin cups two-thirds full. Bake at 400° for 12 minutes or until golden brown.
