RED WINE POT ROAST

3 tablespoons olive oil
Kosher salt and freshly ground black pepper
One 4- to 5-pound beef chuck roast
2 tablespoons tomato paste
3 stalks celery, diced
3 cloves garlic, minced
2 onions, diced
2 cups red wine (or you can use more beef broth instead)
2 cups beef broth
1/4 cup sweet orange marmalade
5 large red potatoes, quartered
4 carrots, cut on the diagonal into 1-inch chunks
4 parsnips, peeled and cut on the diagonal into 1-inch chunks
3 sprigs fresh rosemary
3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Heat the olive oil in a heavy ovenproof pot (with a lid) over high heat. Salt and pepper both sides of the roast, then sear it for about a minute on one side and a minute on the other side. Remove the meat to a plate.
  • Reduce the heat to medium high and add the tomato paste, celery, garlic and onions. Stir it around and cook until the vegetables start to soften and the tomato paste releases its flavor, 2 to 3 minutes. Pour in the glorious wine, then stir and scrape the pot to get up all the browned bits on the bottom. Pour in the broth, then stir in the marmalade.
  • Return the meat to the pot and top it all off with the potatoes, carrots, parsnips, rosemary and thyme. Push the veggies and herbs into the liquid, then put the lid on the pot, transfer to the oven and roast until the meat is fork-tender, 3 to 4 hours. (Mmmm. The liquid becomes something magical.)
  • Transfer the roast to a serving dish (if it falls apart that's a good sign!) and place the vegetables all around it, then spoon on as much sauce from the pot as you'd like. Total, unmistakable, comfort food.

I call this my 'famous Seamus' pot roast because my tiny Siamese cat, Seamus, sat in the kitchen the entire time this pot roast was cooking. I've been making this recipe for 40+ years and I just throw the ingredients together; it's very forgiving. My son-in-law also says it's the best thing he ever ate. When boys hang around the oven, it can't be bad.

3 pounds boneless beef chuck roast
2 tablespoons all-purpose flour
2 tablespoons canola oil
½ cup water
½ cup red wine
1 teaspoon dried basil
½ teaspoon dried marjoram
½ teaspoon dried thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 onion, sliced
6 red potatoes, washed and halved
6 carrot, peeled and cut into 2-inch lengths
8 pearl onions, peeled and halved

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Sprinkle the roast evenly with the flour and set aside. Heat the canola oil in an oven-proof Dutch oven with lid over medium-high heat. Brown the roast on all sides, about 10 minutes total; remove from the heat. Pour in the water and wine. Sprinkle with the basil, marjoram, thyme, salt, and pepper. Arrange the onion slices on the roast.
  • Replace the cover and bake in the preheated oven for 3 hours. Add the potatoes, carrots, and pearl onions. Pour in additional water if the roast looks dry. Continue baking covered until the roast pulls apart easily with a fork, about 1 hour longer.

I have tried many recipes over the years and adjusted them and this is the result. Please do use the wine, most of the alcohol dissipates with the cooking.

2 teaspoons vegetable oil
1 onion, chopped
1 teaspoon red curry paste, or to taste
2 teaspoons ground cumin
1 teaspoon ground coriander
2 cups chicken broth
1 (14 ounce) can coconut milk
1 (10 ounce) can diced tomatoes and green chiles
3 tablespoons Asian fish sauce, or to taste
¼ cup brown sugar
4 cloves garlic, minced
1 tablespoon tomato paste
1 (3 inch) piece fresh ginger root, peeled and sliced
1 lime, juiced
2 bay leaves
1 ½ pounds small potatoes, halved
4 small heads baby bok choy, sliced in 2-inch sections, green leaves intact
1 ½ teaspoons cornstarch
1 tablespoon water
¼ cup chopped roasted peanuts, or to taste
¼ cup chopped fresh cilantro, or to taste

Steps:

  • Generously season beef chuck roast with salt and pepper.
  • Heat a large skillet over high heat; add vegetable oil. When oil is hot, brown roast on all sides, about 2 minutes per side. Remove pan from heat.
  • Spread chopped onions in slow cooker; place browned roast on top of onions.
  • Spoon red chili paste into the hot skillet. Add cumin and coriander. Rub mixture into hot oil with the back of a spoon to blend. Place skillet over medium heat.
  • Pour in chicken stock. Return heat to high. Stir in coconut milk. Add diced tomatoes with green chiles, fish sauce, brown sugar, minced garlic, tomato paste, and sliced ginger; stir in lime juice. Bring to a boil.
  • Pour mixture over pot roast; add bay leaves. Stir to distribute ingredients in the slow cooker.
  • Cover slow cooker and set to Low. Cook until fork tender, 7 to 8 hours.
  • Remove meat from the broth. If desired, skim some fat from the surface of the broth.
  • Place potatoes and bok choy into the broth; stir. Cover and turn heat to high. Cook until potatoes are tender, about 12 minutes.
  • Blend cornstarch and water in a small dish until dissolved. Stir into broth mixture.
  • Cut meat into large chunks and add to the slow cooker; stir. Cover slow cooker and cook on high until meat is heated through and broth is slightly thickened, about 12 minutes.
  • Ladle into serving bowls and garnish with chopped peanuts and cilantro.

2 1/2-3 lbs beef roast (I use a rump roast)
1 1/2 cups red wine
1/2 cup water
6 garlic cloves, whole
1 large onion
1 cup baby carrots, whole
1 tablespoon worchestershire sauce
3 tablespoons brown sugar
2 beef bouillon cubes
1 teaspoon dried basil
1 tablespoon horseradish
salt and pepper
4 tablespoons butter
3 tablespoons flour

Steps:

  • Make six deep slits into the roast. Insert one clove of garlic into each slit.
  • Slice 1/2 of the onion. Layer on the bottom of the crock pot.
  • Add baby carrots.
  • Sprinkle salt and pepper on all sides of the roast. Place roast in crock pot on top of vegetables, fat side up.
  • Finely chop remaining onion.
  • Mix onion, wine, water, Worchestershire, bouillon, brown sugar, basil, and horseradish in a small bowl. Pour over roast.
  • Cook roast on low heat for 6-7 hours.
  • Turn roast over halfway through cooking to allow both halves to cook in the juices.
  • Remove roast to a serving plate. Spoon about 1/2 cup of juices onto the roast. Allow the roast to rest for 10-15 minutes.
  • Puree remaining juices, onions, and carrots in a food processor to make a gravy.
  • Pour gravy into a medium saucepan and heat on low.
  • Melt butter in a small pan or cup. Wisk in flour until it forms a paste.
  • Wisk paste into gravy mix. Continue to heat until thickened.
  • Slice roast, serve with gravy and enjoy!

1 cup low-salt chicken broth or beef broth
1/2 ounce dried porcini mushrooms
1 4-pound boneless beef chuck roast, trimmed
2 tablespoons extra-virgin olive oil
1 large onion, coarsely chopped
2 celery stalks with some leaves, cut into 1/2-inch-thick slices
3 garlic cloves, smashed
1 tablespoon chopped fresh marjoram plus sprigs for garnish
1 28-ounce can whole peeled tomatoes, drained
1 cup dry red wine

Steps:

  • Preheat oven to 300°F. Bring broth to simmer in saucepan. Remove from heat; add mushrooms, cover, and let stand until soft, about 15 minutes. Using slotted spoon, transfer mushrooms to cutting board. Chop coarsely. Reserve mushrooms and broth separately.
  • Sprinkle beef with salt and pepper. Heat oil in heavy large ovenproof pot over medium-high heat. Add beef and cook until brown on all sides, about 15 minutes total. Transfer beef to large plate. Pour off all but 1 tablespoon drippings from pot. Place pot over medium heat. Add onion and celery. Sprinkle with salt and pepper and sauté until beginning to brown, about 8 minutes. Add garlic, chopped marjoram, and reserved porcini mushrooms; sauté 1 minute. Using hands, crush tomatoes, 1 at a time, into pot. Cook 3 minutes, stirring frequently and scraping up browned bits from bottom of pot. Add wine; boil 5 minutes. Add reserved mushroom broth, leaving any sediment behind. Boil 5 minutes.
  • Return beef and any accumulated juices to pot. Cover; transfer to oven. Cook 1 1/2 hours. Turn beef and continue cooking until tender, about 1 1/2 hours longer. (Can be made 2 days ahead. Cool slightly. Refrigerate uncovered until cool. Cover and keep refrigerated.)
  • Transfer beef to cutting board; tent with foil. Spoon fat from surface of juices in pot. Bring juices to boil; cook until liquid is reduced to 4 cups, about 7 minutes. Season with salt and pepper.
  • Cut beef into 1/2-inch-thick slices. Transfer to platter. Spoon juices over, garnish with marjoram sprigs, and serve.

2 cups ketchup
1 tablespoon chili powder
1 tablespoon white sugar
1 teaspoon salt
6 large potatoes, peeled and halved
1 large onion, sliced

¼ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the roast in a roasting pan. Cover with the 2 cups water, ketchup, chili powder, sugar, and salt. Cook 1 hour in the preheated oven.

1 (5 to 6 pound) buffalo top round
1 cup rustic rub or seasoning blend
1/2 cup olive oil
2 large Spanish onions, chopped
2 pasilla peppers, chopped
1 carrot, chopped
6 ribs celery, chopped
1/4 cup chopped garlic
1 quart burgundy red wine
2 sprigs rosemary, leaves chopped
3 sprigs thyme, leaves chopped
2 large tomatoes chopped
3 quarts veal stock or beef broth
Salt and pepper
1 cup extra-virgin olive oil plus 1 teaspoon
1 teaspoon chopped garlic
2 sprigs sage leaves removed
1 cup basil leaves
1/2 cup grated Pecorino Romano
2 tablespoons toasted pine nuts
12 cloves roasted garlic
Salt and pepper
2 tablespoons butter
2 tablespoons shallots
2 tablespoons all-purpose flour
1/4 cup Kirsch
2 cups heavy cream
1/4 cup dried cherries
1 cup Gruyere
1 pinch ground nutmeg
Salt and fresh black pepper

Steps:

  • For the pot roast: Preheat the oven to 350 degrees F.
  • Rub the roast with the rustic rub or seasoning blend, cover and let sit in the refrigerator overnight. Using a grill pan, sear all sides of the roast.
  • Heat a roasting pan. Add olive oil, Spanish onions, pasilla peppers, carrots, celery and then the garlic, last. Deglaze the roasting pan with the burgundy and add the roast. Add herbs, tomatoes, and veal stock. Cover and roast for 3 to 3 1/2 hours or until falling apart.
  • For the Sage Pesto: Lightly saute the chopped garlic in 1 teaspoon of oil. Put sage, basil, Pecorino Romano, pine nuts, chopped garlic and roasted garlic in a food processor or blender and slowly drizzle oil to desired consistency. Season with salt and pepper, to taste, and refrigerate.
  • For the Cherry Fondue: Heat butter and shallots in a small saucepan over medium heat. Add flour to create a roux. Add Kirsch, cream, cherries, cheese, nutmeg, salt and pepper. Bring to a simmer to cook out flour. Season, to taste.
  • For the Potato Bones: Peel potatoes. Carve to look like osso bucco bones. Blanch potatoes for 3 to 4 minutes. Let cool. Fry for 4 to 5 minutes until golden. Stuff with buffalo, top with pesto and cherry fondue.

RED WINE POT ROAST (PRESSURE COOKER)

Easy and delicious. This is extremely flavorful, so you can dial down the spices a bit, but it is amazing! I use an electric PC, but I also have a stove top, and I think the times would be the same for either. Cut the pieces into serving pieces beforehand, so each is browned and simple to serve. Use a drinkable red wine. I buy box wines to keep on hand for cooking, and they are perfect for this. I serve this with garlic roasted mashed potatoes and honey-glazed carrots.

2 1/2-3 lbs beef roast, cut into 4-6 pieces
2 tablespoons oil
1 1/2 cups red table wine
2 tablespoons dried onion flakes
2 teaspoons black pepper
2 teaspoons garlic powder
1 teaspoon kosher salt
1 tablespoon condensed beef broth
1/4 cup water
2 tablespoons cornstarch

Steps:

  • In a separate dutch oven on the stove (or in the PC if using a non-electric one) brown all of the meat in oil. Get a really good sear on all sides.
  • Transfer meat to PC, and deglaze the pan with red wine, stirring to get up ll browned bits.
  • Add the wine to the PC.
  • Add remaining ingredients except water and cornstarch.
  • Cover PC and bring to high pressure. Cook for 60 minutes, and let pressure release naturally.
  • Open cover, remove meat and let rest covered with foil.
  • Make a slurry with cornstarch and water, and add to liquid in PC. Increase heat if needed to bring to boil, and whist until thickened.

This is a recipe I created on my own. It is so simple, just prepare the ingredients, throw them in the crock pot before work and when you come home you will have the most tender roast beef you have ever eaten!

2 -3 lbs chuck arm pot roast or 2 -3 lbs blade roast
3 slices thick cut bacon, diced
8 ounces portabella mushrooms, sliced
2 cups dry red wine (Cab Sauv. or Merlot)
1 large onion, quartered then halved
1 (14 1/2 ounce) can beef broth
2 teaspoons dried thyme
salt, to taste
pepper, to taste
1/2 cup flour
1 cup cold water

Steps:

  • Place roast in crock pot and season liberally with salt and pepper.
  • Cook bacon in skillet until crispy.
  • Add mushrooms, wine, onion, broth, and thyme to the crock pot with the roast while you are waiting for the bacon to cook.
  • When the bacon is done, add it to the crock pot and give it a good stir to mix all of the flavors together.
  • Set your crock pot at low for 7-8hrs.
  • I recommend at least 8 hours because your roast will become soo tender it will literally fall apart as you try to remove it from the dish.
  • If your roast seems tough yet, just give it a little more time, it will only get more tender the longer it cooks.
  • Remove the roast and transfer the remaining sauce to a sauce pan.
  • Mix 1/2 cup of flour with 1 cup of cold water.
  • Gradually add flour mixture to the remaining sauce while whisking over med high heat until sauce thickens.
  • Serve gravy over mashed potatoes.

6-8 medium red potatoes (cut into quarters)
1 white onion
1 small bag baby carrots
1 c fresh sliced mushrooms
1 c cherry coke
2 pkg lipton onion soup mix
2 c sweet red wine (i use lambrusco)
4 Tbsp cornstarch
1/4 c water

Steps:

  • 1. Coat Chuck roast with Olive oil on both sides. Season with salt and pepper to your liking. Rub garlic on both sides of each piece of meat, rubbing in salt and pepper with it. Add Cherry Coke to bottom of crock pot. Add half of the bag of carrots on the bottom. Add and arrange meat evenly in crock pot. Sprinkle 1 1/2 packets of Onion soup mix over the meat, reserving the rest to finish the top. Add Potatoes, Mushrooms, Onion, and remaining carrots. Pour Red Wine all over the top. Set Crock Pot on low and cook for 8-10 hours. About halfway through, add more salt and pepper if desired. 20 minutes before serving, add mixture of Cornstarch/flour and water (mixed well) to crock pot, and stir. Juice will thicken into a thin gravy.

1 bottom round roast, about 4 pounds
Salt and freshly ground black pepper
5 tablespoons vegetable oil
3 small onions, medium diced
1 head garlic (about 10 to 12 cloves), lightly smashed
1 pound carrots (about 4 medium), cut roughly into 1 1/2-inch pieces
2 cups low-sodium chicken, beef, or vegetable broth
2 cups medium-bodied red wine
2 1/2 tablespoons honey
5 to 6 sprigs fresh thyme
2 pounds russet potatoes, peeled and cut into 1 1/2 to 2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Season roast with salt and pepper. Heat oil in large oven-safe pot or Dutch oven over high heat for a couple minutes. Add the meat and brown well on all sides, about 10 minutes total. Remove and set aside on a plate. Lower heat to medium and saute onions, garlic, and carrots for 5 minutes. Add the broth, wine, honey, and thyme, stir to combine, and then add the roast back to the pot.
  • Cover pot and transfer to oven. Bake for 2 hours, turning the meat over twice. Add the potatoes to the pot and bake, uncovered, for another 30 to 45 minutes longer until both the potatoes and the meat are fork-tender.

1 teaspoon salt
1/2 tablespoon pepper
1 cup onion
1/2 cup tomato sauce
1/2 cup balsamic vinegar
1 cup beef stock
3 tablespoons butter
4 tablespoons flour
1 cup red wine

Steps:

  • Combine salt, pepper, garlic powder, onion power. Coat your roast with the seasonings.
  • Brown the pot roast over medium heat in pan. Brown on all sides (should take 5-7 minutes total). Do not clean your pan yet!
  • Add sliced raw onion to bottom of crockpot. Place browned meat into crockpot too.
  • In pan you just browned the meat in, add tomato sauce, balsamic vinegar, and beef stock. Simmer for 10 minutes or until reduced by half. Pour sauce over roast in crock pot. Juice should come partially up the roast but not cover it. As it cooks, the roast will release more juice.
  • Cook on low for 6-8 hours.
  • Remove roast from crockpot and lightly shred with a fork. Save all the juice from the crockpot to use in your gravy!
  • In a pan over medium-low heat, melt butter and whisk in flour. Cook on low for several minutes, whisking continuously until your rue is a golden brown color.
  • Deglaze the pan with your red wine. Make sure you continuously whisk!
  • Add in your roast juices 1 cup at a time. I typically end up adding about 3 cups of the liquid. Bring gravy to a low simmer and continue whisking. Simmer for 4-5 minutes until desired consistency.
  • Top your roast with the gravy and enjoy! I put mine on a toasted ciabatta roll. YUM!

2 lamb racks, with fat left on (but trimmed between fingers)
1/4 cup dry red wine
1/4 cup balsamic vinegar
1 (750 ml) bottle red wine vinegar
3 bay leaves
6 garlic cloves
6 medium pontiac red potatoes
baby spinach leaves
1/2 cup milk
butter

Steps:

  • For Pot Roast:.
  • In a large heavy bottom pot, heat 2 - 3 tbsp of olive oil.
  • Place lamb racks in fat down and leave for 4 - 5 minutes or until golden brow & caramelised.
  • Turn and seal all sides of the rack.
  • Throw in garlic cloves whole and bay leaves then add about 1 cup of the red wine vinegar and the balsamic vinegar and the red wine, keep over high heat. Use some aluminium foil and place inside the pot covering the roast but allowing some steam to escape around edges. Be careful, the fumes from the vinegar can really take your breath away!
  • Cook over high heat for about 45 minutes but keep a close eye on it, do not allow to boil dry, use the remainder of the bottle of red wine vinegar to ensure it does not boil dry. The vinegar and fat from the lamb will emulsify and create a lovely rich thick sauce.
  • Potato Crush.
  • Boil potatoes skin on until cooked, drain and add about 1 tbsp butter and 1/2 cup milk and the spinach, using something solid like end of rolling pin crush the potatoes. Don't use a masher as you don't want to mash them too much. After crushing just stir to make sure spinach and butter is stirred though, season with P&S to taste.
  • Also great served with broccolini on side.
  • When you cut the rack it should still be a little rare drizzle a little of the sauce on the cutlets before serving and a garlic clove or 2 and a bay leaf on each looks great too.

new potato, quartered, enough to cover the bottom of your crock pot
1/2 lb baby carrots
1 medium-large onion, cut into wedges
2 -3 tablespoons minced garlic
thyme
rosemary
salt and pepper
4 lbs bottom round steaks or 4 lbs rump roast
1 cup red wine
1/2 cup beef stock
1 (8 ounce) package baby bella mushrooms (optional)
3 tablespoons flour
cold water

Steps:

  • Layer potatoes, carrots, and onions at the bottom of the crock pot.
  • Add garlic and sprinkle thyme and rosemary to cover the vegetables.
  • Salt and pepper the roast, then sear all over to seal in moisture.
  • Place roast over vegetables, and pour in wine and beef stock.
  • Cook on high for 5 hours or until meat is tender, turning the meat half way through.
  • Dissolve flour by shaking in a jar with just enough cold water to dissolve it completely.
  • Remove the meat to a plate and pour dissolved flour into the crock pot along with mushrooms. Stir and let cook for 10 minutes or until gravy achieves a good consistency.
  • Slice roast and replace to crock pot to keep warm for serving.

1 tablespoon honey
1/2 teaspoon lemon juice

1 (6 ounce) can sliced mushrooms

Steps:

4 lbs boneless beef chuck roast (rump or bottom round)
salt
fresh ground pepper
2 tablespoons olive oil
3 large carrots, peeled and chopped
2 medium onions, chopped
2 celery ribs, chopped
2 garlic cloves, chopped
2 fresh thyme sprigs
1 bay leaf
ground cloves, a pinch
2 cups dry red wine
2 cups beef broth (homemade or store-bought)
2 tablespoons cornstarch, blended with 1/4 cup cool water

Steps:

  • Pat the meat dry with paper towels.
  • Sprinkle it with salt and pepper to taste.
  • In a large skillet, heat the oil over med-high heat.
  • Add the beef and cook until nicely browned on all sides, about 15 minutes.
  • Scatter the carrots, onions, celery, garlic, herbs, and cloves in a large slow cooker.
  • Place the beef on top.
  • Pour the wine into the skillet and cook, scraping the bottom of the pan, until the wine comes to a simmer.
  • Cook for 1 minute.
  • Pour the wine over the beef.
  • Add the broth to the slow cooker and season with salt and pepper to taste.
  • Cover and cook on low for 8-10 hours, or until the beef is tender when pierced with a fork.
  • Remove the beef to a platter and cover to keep warm.
  • Skim off the fat from the pan juices.
  • To thicken the sauce, strain the cooking liquid into a saucepan and discard the solids.
  • Bring the liquid to a simmer.
  • Add the cornstarch mixture and cook, stirring, until smooth and slightly thickened, about 2 minutes.

  • Make 10 slits in roast, using a sharp knife.

RED WINE POT ROAST WITH PORCINI MUSHROOMS



Red Wine Pot Roast with Porcini Mushrooms image

l cup cup chicken broth
1/2 ounce dried porcini mushrooms
4 pounds beef chuck roast, boneless
2 tablespoons olive oil
1 large onion coarsely chopped
2 celery stalks
3 garlic
1 tablespoon fresh thyme or marjoram
28 ounce canned tomatoes
1 cup dry red wine

Steps:

  • Preheat oven to 300. Bring broth to simmer in saucepan then add mushrooms and remove from heat. Cover and let stand till soft. Transfer mushrooms to cutting board and chop coarsely. Reserve mushrooms and broth separately. Sprinkle beef with salt and pepper and sear on all sides. Pour off most of the fat and add onions garlic and celery and saute then add herbs and tomatoes and wine and boil about 5 min. Add mushrooms and broth and boil 5 min more. Return beef to pot and cover and bake for 1 1/2 hours then turn beef over for another 1 1/2 hours. Best if made a day or so ahead and reheat. Transfer meat to cutting board and reduce sauce by half.
  • Enjoy with fennel mashed potatoes
