For the dressing
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1 flat anchovy fillet, or to taste, chopped
2 teaspoons balsamic vinegar
1 1/2 tablespoons fresh lemon juice
3/4 teaspoon Dijon-style mustard
1/3 cup olive oil
8 cups packed escarole, rinsed, spun dry, and torn into pieces
6 cups packed fresh spinach leaves, washed well, spun dry, and torn into pieces
1 cup finely chopped red onion

Steps:

  • Make the dressing:
  • In a blender blend together the garlic paste, the anchovy, the vinegar, the lemon juice, the mustard, and salt and pepper to taste. With the motor running add the oil in a stream and blend the dressing well.
  • In a large bowl combine the escarole, the spinach, the onion, and the dressing and toss the salad until it is combined well.

5 radishes, unpeeled, trimmed, coarsely chopped
1/2 cup olive oil
2 tablespoons Sherry wine vinegar
1 tablespoon honey mustard
1/2 teaspoon minced garlic
1 1/2 pounds slender green beans, trimmed
4 cups mixed greens (such as red leaf lettuce and baby spinach), torn into bite-size pieces
1 red onion, thinly sliced
2 large radishes, sliced paper-thin (optional)

Steps:

  • Place 5 radishes in processor. Add oil, vinegar, mustard and garlic; process until thick dressing forms. Season with salt and pepper. Transfer to small bowl. Can be made 1 day ahead. Cover; chill. Bring just to room temperature before using.)
  • Cook green beans in large pot of boiling salted water until just crisp-tender, about 5 minutes. Drain beans and rinse under cold water. Drain. Pat dry with paper towels. Wrap in kitchen towels and place in plastic bag. Chill until cold, at least 1 hour and up to 1 day.
  • Place beans, mixed greens and onion in large bowl. Toss with enough dressing to coat. Season with salt and pepper. Garnish with sliced radishes, if desired.

1 head of butter lettuce, leaves coarsely torn (about 8 cups)
2 large oranges, peel and white pith removed, thinly sliced into rounds

Steps:

  • Whisk oil, vinegar, orange peel, and juice concentrate in medium bowl. Season with salt and pepper. Add onion; marinate 30 minutes, stirring often. Divide lettuce among 4 plates. Top with orange slices. Ladle dressing with onion over.

  • Place the lime juice, cilantro, and hot sauce in food processor and add a little salt and pepper. Turn processor on and stream in extra-virgin olive oil. Taste dressing and adjust seasonings. DH loves this dressing. I was going to make a buttermilk dressing but forgot to buy the buttermilk so I had to come up with this on the fly. Cooking time is chill time.

3 ounces cream cheese, Philly of course, softened
1/4 cup red onion, finely diced

  • Whiz everything in a food processor (I use my mini) until smooth.
  • Cover and refrigerate for at least two hours. Serve with a Romaine salad or use as a dip for crudite.

I got this from a lady at church who served it for lunch. At least four of us mobbed her the minute we tasted it (luckily she'd brought copies). It's almost like a cross between vidalia onion dressing and regular poppy seed dressing. It's sweet, creamy, and tangy all in one! This recipe yields enough to fill a small-ish mason jar. Cook time is chill time.

1 cup plain yogurt, drained in fine sieve about 30 minutes
1/4 cup chiffonade fresh mint
2 tablespoons fresh lemon juice
2 tablespoons tahini
1 tablespoon olive oil
1/4 teaspoon cumin
2 cloves garlic, finely chopped
Kosher salt and freshly ground black pepper
2 red onions, peeled and sliced 1/2-inch thick crosswise
Olive oil, for brushing
Kosher salt and freshly ground black pepper
3 tablespoons finely chopped fresh oregano
3 cucumbers, peeled, halved lengthwise and sliced 1/2-inch thick
1/2 cup crumbled feta

Steps:

  • For the yogurt-mint dressing: Whisk the yogurt, mint, lemon juice, tahini, olive oil, cumin and garlic in a medium bowl and season with salt and pepper.
  • For the salad: Preheat the grill. Brush both sides of the onion slices with olive oil and season with salt and pepper to taste. Grill on each side for 2 to 3 minutes, just to obtain grill marks and cook slightly. Remove from the grill and coarsely chop. Add the onions, oregano and cucumber to the dressing and toss to coat. Season with salt and pepper to taste. Sprinkle with the feta.
