RED LENTIL AND PEANUT DIP

Number Of Ingredients 11

1 c red lentils
2 clove garlic, crushed
2 tsp grated ginger (or the kind in a tube)
1 tsp ground cumin
1 tsp garam masala or curry powder
1/2 tsp salt
1/4 c olive oil
3 dried new mexico or guajillo chiles, stemmed, seeded and cut into strips
1/4 c dry-roasted peanuts, chopped
fresh cilantro, for garnish
pita bread, or naan, or pita chips

Steps:

  • 1. Heat 2-3 cups water to a boil. Add lentils and cook uncovered, until tender. About 12 minutes.
  • 2. Drain lentils. Put in bowl and stir in garlic, ginger, cumin, curry powder and salt.
  • 3. Heat oil in a skillet over medium. Add chili strips and peanuts. Stir and cook until peanuts are golden, about 2 minutes.
  • 4. Spoon lentil mixture into serving dish. Spoon the peanuts, chili strips and remaining oil over lentils. Garnish with cilantro. Serve warm with chips , naan or pita.

Number Of Ingredients 9

1 pound dried red lentils
6 cups water
16 cloves roasted garlic, peeled
1 tablespoon olive oil
4 teaspoons lemon juice
1 1/2 teaspoons ground cumin
1 tablespoon salt
Freshly ground pepper to taste
2 tablespoons minced parsley

Steps:

  • Place lentils and water in a large saucepan. Bring to a boil. Reduce to a simmer. Cook, stirring occasionally, until the lentils are very soft, about 45 minutes. Drain through a fine-mesh sieve until mixture is thick but not dry.
  • Place the lentils in a food processor. Process until smooth. Add the remaining ingredients except the parsley. Process until smooth. Serve with crackers, and garnish with parsley.
