KAREN'S RED HOT CAMPFIRE POTATOES

I came up with this recipe on a camping trip in New Hampshire's White Mountains. Potatoes, onions, and bacon are roasted in foil over an open flame. Normally I'd use olive oil, but we were in the mountains and the only source of fat/oil we had was the bacon. Turned out to be a hit and we've been making these ever since.

aluminum foil
6 slices bacon, divided
8 small red potatoes, or more to taste, halved
1 red onion, quartered and slightly broken apart
1 teaspoon red pepper flakes
1 teaspoon chili powder
coarse salt and freshly ground black pepper to taste

Steps:

  • Build a campfire and allow the fire to burn until hot.
  • Cross two 1 1/2-foot long pieces of aluminum foil so the centers are overlapping. Place 3 strips of bacon in the center of the foil.
  • Combine potatoes, onion, red pepper flakes, and chili powder in a bowl. Season generously with salt and pepper. Place potato mixture on top of the bacon slices and top with the remaining bacon slices.
  • Fold the opposite ends of the foil inward to create a packet, making sure that all open spaces are sealed.
  • Throw the packet directly on the campfire. Cook, turning as needed so the contents do not burn, until potatoes are tender and edges of the foil blacken, 45 to 60 minutes. Open packet very carefully.

5 medium red potatoes, diced with peel
1 medium onion, chopped
1 tablespoon garlic powder
1 tablespoon kosher salt
2 teaspoons chili powder
¼ cup extra virgin olive oil
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • Arrange the potatoes and onions in a greased 9x13 inch baking dish so that they are evenly distributed. Season with garlic powder, salt and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.
  • Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.

20 ml olive oil
900 g small small red potatoes, rinsed and quartered
1/2 teaspoon crushed red pepper flakes
salt & freshly ground black pepper

Steps:

  • Heat the oil in a non-stick fry pan or skillet The oil should be very hot so that the first potato pc put in sizzles.
  • Now add all the potatoes and saute evenly till evenly browned Sprinkle with the red pepper and cover and simmer for around 10-12 mins.
  • The potatoes should be tender or you will have to cook some more.
  • Season and serve.
