Tomato Simmering Sauce for Fish image

Works well for strong flavored fish like tuna, bluefish, and mackerel. From a fish cookbook ripped from the days when I didn't keep track of the source.

Number Of Ingredients 12

1 medium onion, chopped
1/2 cup celery, chopped
3 tablespoons butter
2 cups fresh tomatoes, peeled, seeded, chopped
1/4 cup salad oil
1/4 cup distilled white vinegar
2 tablespoons lemon juice
1/3 cup brown sugar
2 tablespoons prepared mustard
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Cook onion and celery in butter until onion is limp.
  • Add tomatoes and cook for about 5 minutes.
  • Add remaining ingredients and simmer for 10-15 minutes.
  • Cook fish in this sauce and serve with the sauce over the fish.
