1 pound ground round
1 large onion, diced
1 green bell pepper, diced
Salt and black pepper to taste
2 tablespoons chili powder
1 tablespoon cocoa powder
1 (15 ounce) can chili hot beans in chili gravy
1 (14.5 ounce) can RED GOLD® Diced Tomatoes Chili Ready
1 (14.5 ounce) can RED GOLD® Petite Diced Tomatoes & Green Chilies
1 (14.5 ounce) can RED GOLD® Diced Tomatoes
1 (15 ounce) can RED GOLD® Crushed Tomatoes

Steps:

  • Brown ground beef, onion and green bell pepper in a large skillet. Transfer to colander and rinse with hot water to remove fat. Transfer meat mixture to large kettle and add salt, pepper, chili powder and cocoa; mix well.
  • Add beans, diced tomatoes and crushed tomatoes. Bring to a boil; reduce heat to simmer and cook for 20 to 25 minutes.
  • Garnish with shredded cheese.

This is from "Moosewood Restaurant Cooks at Home" Cookbook. An incredible vegetarian chili. Very quick to make. I add no salt to this recipe and you would never miss it. It is a personal favorite that even my carnivore friends love. This makes a big pot and freezes extremely well.

1/2 cup bulgur
1/2 cup hot water
3 cups canned tomatoes, undrained (28 oz can)
3 tablespoons olive oil
3 cups onions, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1 tablespoon hot pepper sauce or 1/4 teaspoon cayenne
2 green bell peppers, chopped
2 cups corn
1 1/2 cups black beans, drained cooked (14 oz can)
1 1/2 cups red kidney beans, drained cooked (14 oz can)
salt
cheddar cheese (optional) or monterey jack cheese (optional)
cilantro (optional)

Steps:

  • Place the bulghur, hot water, and about a cup of the juice from the canned tomatoes in a small saucepan.
  • Cover and bring to a boil on high heat, then lower the heat and simmer gently.
  • Heat the olive oil in a large saucepan.
  • Saute the onions, garlic, cumin, chili powder, and Tabasco or cayenne.
  • When the onions are soft, stir in the bell peppers and saute for 2 to 3 minutes more.
  • Chop the tomatoes right in the can and add them to the pan (I used canned diced tomatoes instead).
  • Stir the corn and beans, and heat thoroughly on low heat.
  • Taste the bulghur. When it is cooked but still chewy, add it to the pan with its liquid.
  • Cover and simmer for a few minutes for the flavors to meld.
  • Add salt to taste.
  • Serve plain or topped with grated cheese and fresh cilantro.

1 (46 ounce) can RED GOLD® Fresh Squeezed Tomato Juice
1 onion, chopped
1 teaspoon dill weed
½ teaspoon dried oregano
1 teaspoon garlic powder
1 (15.5 ounce) can chili hot beans in chili gravy
1 (15.5 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
1 (14.5 ounce) can red beans, rinsed and drained
1 (1.25 ounce) package chili seasoning mix
1 tablespoon chili powder
½ cup sugar
Salt and black pepper to taste

Steps:

  • Brown turkey in large soup kettle, break into crumbles. Add remaining ingredients and simmer for 1 hour. Add water if desired for a thinner chili or add more tomato juice for a thicker consistency.

Stir in the corn and beans, and heat thoroughly on low heat. Taste the bulghur. When it is cooked but still chewy, add it to the pan with its liquid. Red Gold is a brand name of canned tomatoes. If you can't find it, use any brand you favor. I love the texture combo of ground and cubed meat in my chili; it becomes so tender. Cocoa, coffee and cinnamon may sound strange, but it really adds depth of flavor. This makes a huge pot; fee free to halve. It is not hot, just so good...

1 lb ground beef
1 lb ground pork sausage
3 lb beef stew meat (or cubed roast)
1 diced green bell pepper
2 diced celery
1 large diced onion
5 clove minced garlic
3 de-seeded, fine chopped jalapenos
46 oz red gold crushed tomatoes
29 oz tomato sauce
3 can(s) chili beans
1 can(s) refried beans
1/2 c brewed coffee
6 Tbsp chili powder
1 Tbsp brown sugar
1 Tbsp cocoa
1 tsp salt
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp red pepper
1/2 tsp oregano
1 pinch cinnamon
salt, pepper to taste

Steps:

  • 1. Brown ground beef, sausage in large skillet. Season with salt, pepper to taste during browning. Remove meat to very large chili pot.
  • 2. Brown stew meat or cubed roast, in batches, in drippings in skillet. Season with salt, pepper to taste during browning. Remove meat to pot.
  • 3. Saute chopped onion, celery, bell, jalapeno and garlic in drippings in skillet until soft. Season with salt, pepper to taste during saute. Remove veggies to pot.
  • 4. To chili pot over medium heat, stir in chili beans, refried beans, crushed tomatoes, tomato sauce, coffee.
  • 5. Stir in seasonings of chili powder, brown sugar, cocoa, salt, cumin, garlic powder, red pepper, oregano, and cinnamon.
  • 6. Bring chili to a bubble, turn heat to low, cover and simmer at least 2 hours, stirring frequently.
  • 7. Serve garnishes of chopped onion, shredded cheese, and Fritoes, along with Mexican Cornbread.
