8 slices bacon
⅓ cup sunflower seed kernels
1 large head broccoli, cut into bite-size pieces
⅓ cup diced red onion
1 cup seedless red grapes, halved
1 cup mayonnaise
3 tablespoons apple cider vinegar
2 tablespoons white sugar
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble 7 slices of bacon; mix with sunflower seeds in a resealable bag.
  • Combine broccoli, onion, and grapes in a bowl.
  • Crumble the remaining bacon slice. Whisk mayonnaise, vinegar, sugar, and black pepper together in a bowl; fold in the 1 slice crumbled bacon. Pour dressing over broccoli mixture; toss to coat evenly. Cover bowl with plastic wrap and refrigerate for flavors to blend, about 2 hours.
  • Sprinkle bacon-sunflower seed mixture over salad before serving; mix well.

1 head broccoli, chopped into bite-sized pieces
4 ounces red onions, sliced thin or chopped
3 ounces raisins
3 ounces sunflower seeds
8 ounces mayonnaise
2 tablespoons sugar
2 tablespoons lemon juice
8 slices bacon, cooked and crumbled
salt and pepper

Steps:

  • Combine broccoli, onions, raisins, and sunflower seeds, set aside.
  • Combine mayo, sugar, lemon juice and salt and pepper.
  • Fold dressing into salad mixture.
  • Refrigerate.
  • Add bacon just before serving.

This is a variation of a broccoli salad we used to serve in a Vermont food co-op deli where I worked. It's not only a great way to get your veggies, but the capers and olives give it a piquant taste. Also, the blanched broccoli and red bell pepper make for a colorful side dish.

1 large head fresh broccoli (about 2 cups)
1 red bell pepper
1 1/2 tablespoons capers (small are the best)
7 1/2 ounces medium pitted black olives
1/2 red onion
1/2-3/4 cup olive oil
1/4 cup cider vinegar or 1/4 cup lemon juice
1/2 teaspoon dried marjoram
1/2 teaspoon garlic powder
1/4 teaspoon sugar
salt and pepper

Steps:

  • Trim broccoli and separate the florets into bite-size pieces.
  • Peel the stem and cut it into quarter inch discs.
  • Blanch the broccoli by dropping it into a large pot of boiling water for approximately 1 1/2 to 2 minutes, then dropping it into a bowl of ice water to stop the cooking process.
  • Drain and dry broccoli.
  • Roughly dice the red bell pepper and finely dice the onion.
  • In large bowl, combine the broccoli, bell pepper, onion, capers and olives.
  • Whisk together the olive oil, vinegar (or lemon juice), sugar, garlic, marjoram and salt and pepper.
  • Toss the dressing with the vegetables and refrigerate in an airtight container.
  • Adjust the seasoning if desired after twoenty-four hours.
  • Broccoli will lose its bright green color after about three days, but salad should keep for five days.

Parents appreciate broccoli because it's one vegetable that their children will eat. But what about broccoli for adults? How much plain steamed broccoli do you really want to eat? We rarely base a meal on this healthy food, yet there are plenty of ways to move it to the center of your plate. For main dishes, I am most likely to use broccoli in a salad, a soup or pasta. Those little flowers - the crown of the broccoli is the plant's flower - are like sponges for tasty sauces, dressings and broths. Like other cruciferous vegetables in the Brassica family (kale, collard greens, cabbage, Brussels sprouts and cauliflower), broccoli contains sulfur-containing phytonutrients that have gotten a lot of attention from nutritionists for their potential cancer-fighting properties. It's packed with vitamins C, A, K and folate, as well as with fiber. And broccoli is a very good source of manganese, tryptophan, potassium, B vitamins, magnesium, iron, calcium, zinc and vitamin E. In this beautiful salad, the bitter flavor of the endive is countered by the sweet red peppers and broccoli.

2 tablespoons sherry vinegar or champagne vinegar
1 teaspoon balsamic vinegar
Salt, preferably kosher salt, to taste
1 small garlic clove, minced or pureed
1 teaspoon Dijon mustard
6 tablespoons extra virgin olive oil, or use 2 tablespoons buttermilk and 1/4 cup extra virgin olive oil
12 ounces broccoli crowns (2 good-size crowns)
1 red bell pepper, roasted if desired
1 tablespoon lightly toasted pine nuts
6 Belgian endives, leaves separated
2 tablespoon chopped fresh herbs, such as parsley, chives, tarragon, chervil
3 ounces feta, crumbled

Steps:

  • Make the dressing. Mix together the vinegars, salt, garlic, mustard and oil, or use the buttermilk and oil. Set aside.
  • Bring a medium pot of generously salted water to a boil. Fill a bowl with ice water. Add the broccoli to the boiling water, and cook 2 1/2 minutes. Transfer to the ice water, let cool for a few minutes and drain. Dry on paper towels. Toss in a bowl with the red pepper, pine nuts, feta and half the dressing.
  • In a wide salad bowl, toss together the endives, herbs and remaining dressing. Top with the broccoli mixture, and serve.

I threw this together with what I had on hand and it was very tasty! I paired it with my Crispy & Juicy Fried Chicken. Mmm, just right for a picnic! This is also wonderful for Holiday dinners as the broccoli & red peppers stay a beautiful bright red & green!

1/2 pound(s) pasta of choice. (i used bow ties)
1/2 - head of broccoli, chopped very small, including some of the stems
1/2 jar(s) roasted red peppers, diced very small
- romano basil vinaigrette (or robust italian dressing of choice)

Steps:

  • Cook Pasta according to package until al dente.
  • Meanwhile, chop the broccoli and dice the roasted red peppers.
  • Steam (or microwave) broccoli until just turned bright green.
  • When pasta is done, drain well & put in a bowl.
  • Add in the broccoli & roasted red peppers. Coat well with the vinaigrette. Mix thoroughly.
  • Place bowl in the refrigerator to chill. Add a little more vinaigrette before serving, if needed.

1 large head fresh broccoli, chopped
¾ cup chopped celery
¼ cup minced green onions
¼ cup diced red onion
1 ½ cups seedless grapes, halved
¾ cup blanched slivered almonds
¼ cup white sugar
2 tablespoons distilled white vinegar
1 cup mayonnaise

Steps:

  • Place bacon in a large skillet. Cook, turning frequently, over medium high heat until evenly browned. Cool, and then crumble.
  • Preheat oven to 300 degrees F (150 degrees C). Spread slivered almonds on a cookie sheet. Bake for approximately 12 to 14 minutes or until lightly browned, turning once during toasting. Cool.
  • In a small bowl, mix together mayonnaise, sugar, and vinegar. Set aside.
  • In a large bowl, combine broccoli, crumbled bacon, celery, green onions, red onions, grapes, and toasted almonds. Toss with mayonnaise dressing. Chill for several hours in the refrigerator.
