Oh, my goodness.... If I EVER want to impress someone, this is how I do it! It's my specialty recipe and can easily be tailored with the stuffing. The red bell pepper sauce is a MUST! I have made this for friends and family, and they just rave about it!

2 red bell peppers
2 lbs chicken breasts, pounded
1/2 lb mushroom, sliced thinly
1/2 lb lump crabmeat
1/4 lb gruyere, thinly sliced
4 green onions, sliced
1/2 cup butter
1/2 lb pecans, chopped
8 ounces sour cream

Steps:

  • Cut the red bell peppers in half and seed them.
  • Spray the skins with cooking spray and broil them (skin side up) until the skin is dark brown/black and bubbly.
  • Remove peppers and put them in a brown paper bag (fold up edges of bag).
  • Preheat the oven to 350 degrees and spray a cookie sheet with cooking spray.
  • Make sure your chicken breasts are pounded out or slit in half for stuffing.
  • Layer the mushrooms, crabmeat, cheese and green onions in the chicken and skewer them closed. (I use wooden skewers - you can also use toothpicks, but remember to take them out! I almost choked someone once!).
  • Melt the butter and coat the stuffed chicken breasts in it.
  • Roll the chicken breasts in the chopped pecans.
  • Cook at 350 for 30 minutes.
  • While the chicken is cooking, peel the skin from the peppers.
  • Blend peppers and sour cream until smooth.
  • Add salt to taste.
  • Serve chicken breasts with red bell pepper sauce as a topping or under chicken for a garnish.

8 large poblano chilies* (each about 3 ounces)
8 ounces peeled deveined cooked shrimp, coarsely chopped
2/3 cup soft fresh goat cheese (about 4 ounces), room temperature
1/2 cup (packed) grated Panela cheese or Monterey Jack cheese
1/4 cup chopped red bell pepper
2 tablespoons chopped shallot
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh basil
Red Bell Pepper Sauce
Fresh basil leaves (optional)

Steps:

  • Char poblano chilies over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel chilies. Using small sharp knife, carefully slit chilies open along 1 side. Remove seeds, leaving stems attached.
  • Mix shrimp and next 6 ingredients in medium bowl. Season to taste with salt and pepper. Fill chilies with shrimp mixture, dividing equally. Pull up sides of chilies to enclose filling. Place stuffed chilies on baking sheet. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 350°F. Bake chilies uncovered until heated through and cheeses melt, about 15 minutes. Spoon 3 tablespoons Red Bell Pepper Sauce onto each of 8 plates. Place 1 stuffed chili atop sauce on each. Garnish with basil leaves, if desired, and serve.

1 1/4 pounds sea scallops
1 pound spinach fettuccine
Red Bell Pepper Cream Sauce
Chopped fresh Italian parsley

Steps:

  • Whisk first 7 ingredients in large bowl. Mix in scallops. Refrigerate at least 3 hours or overnight.
  • Cook fettuccine in large pot of boiling salted water until tender but still firm to bite. Drain well.
  • Meanwhile, heat heavy large skillet over medium-high heat. Remove scallops from marinade. Add to skillet and cook just until opaque in center, about 1 minute per side. Bring Red Bell Pepper Cream Sauce to simmer in another large skillet. Add fettuccine to Red Bell Pepper Cream Sauce and toss to coat. Season to taste with salt and pepper. Transfer to large bowl. Arrange scallops atop pasta. Drizzle any pan juices over scallops. Sprinkle with parsley and serve.

3 tablespoons oil
2 cups sliced mushrooms
2 medium onions, chopped
1 tablespoon fresh garlic, chopped
2 small red bell peppers, chopped

1 lb pork tenderloin, cut into about 1-inch pieces
2 tablespoons flour
1 -2 teaspoon chili powder
1 teaspoon seasoning salt (can use regular white salt)
black pepper
1/4 teaspoon cayenne
3 cups half-and-half cream or 3 cups full-fat milk
1 (14 ounce) can tomato sauce
9 ounces penne pasta, cooked and drained (cook only until el dente)

Steps:

  • In a large frypan melt the butter with oil.
  • Add in mushrooms, onions, garlic, red bell pepper and oregano; cook stirring until the onions are soft (about 4 minutes) set aside.
  • In a large heavy plastic zip-loc bag add in flour, seasoning salt, pepper, cayenne and chili powder.
  • Add in the pork cubes; shake to coat well.
  • Shake off any excess flour, then brown the pork in the frypan on all sides until browned.
  • Add the veggies back to the skillet along with the cream and tomato sauce; bring mixture to a boil and simmer covered for about 30 minutes.
  • Add in cooked pasta; toss to combine with sauce.
  • Sprinkle with Parmesan cheese and serve.

This recipe was inspired by one of our favorite tapas dishes. It's just like we like remember it from our first date some 13 years ago. I incorporated 2 Zaar recipes to create this clone. All of this can be made ahead and warmed in the microwave before serving. The Sweet Red Bell pepper sauce really make this dish amazing! 1 lb bacon, uncooked, applewood is best
8 ounces pitted dates, the larger the better
1 -2 garlic clove
1/2 large red bell pepper, seeded, quartered
1/2 medium yellow onion
1/4 cup half-and-half cream, a little more if desired, can using whipping cream
1 -2 tablespoon extra virgin olive oil
1/8 teaspoon salt (to taste)

Steps:

  • Preheat oven to 375°F.
  • Soak round toothpicks in water for 15 minutes, this will prevent burning when baking.
  • RED PEPPER SAUCE:.
  • Place garlic cloves w/ peels on a baking dish and bake for 15 minutes.
  • Rub pepper and onion with olive oil.
  • After baking the garlic cloves for 15 minutes, add the red bell pepper and onion to the baking sheet and bake for an additional 15 minutes, or until tender and roasted. It may take a bit longer.
  • Squeeze the roasted garlic out of it's paper into a blender along with the roasted onion and bell pepper. *use a blender or small food processor.
  • Blend until smooth. Slowly add olive oil until blended. * you may use more or less.
  • Add salt.
  • Slowly add half and half until creamy while blending.
  • Serve immediately or cover and refrigerate until ready to serve. Warm in the microwave before serving.
  • BACON WRAPPED DATES:.
  • Cut bacon strips in half (making them 1/2 as long approximately 3").
  • Microwave the strips for 2 minutes.
  • Wrap each date with a 1/2 strip of bacon and secure with a toothpick.
  • Spray a 4 sided cookie sheet with nonstick spray.
  • Place all prepared dates in the cookie sheet.
  • NOTE: If you have mini muffin pan, suspend the bacon wrapped date over each opening and the bacon fat will drip off into the muffin pan. This is my preferred method.
  • Bake for approximately 15 minutes, turning once. *Important to turn.
  • After turning, continue baking for an additional 10 minutes or until bacon brown and crispy or as desired.
  • BAKING TIME may vary. Just be sure to watch carefully.
  • Serve with sweet red pepper sauce for dipping or puddle the sauce on a plate and place the wrapped dates in the sauce.
  • Note: Everything can be prepared and baked ahead of time and served later. Just warm through in the microwave for about 30 seconds.

1 1/4 pounds plum tomatoes, halved lengthwise
2 large red bell peppers, halved lengthwise, seeded
5 tablespoons butter
4 large shallots, minced
1 14 1/2-ounce can low-salt chicken broth
1/2 cup dry white wine
3/4 cup chopped fresh basil
1/2 teaspoon dried crushed red pepper
8 8-ounce filet mignon steaks (each about 1 inch thick)
1/4 cup water

Steps:

  • Preheat broiler. Brush large baking sheet with oil. Place tomatoes and bell peppers, cut side down, on prepared sheet. Broil until tomatoes and peppers begin to char and blister, about 5 minutes. Cool. Peel skins from 1 pepper half, then cut into thin strips; set aside. Chop tomatoes and remaining peppers (do not peel).
  • Melt 1 tablespoon butter in large nonstick skillet over medium heat. Add shallots and sauté until tender, about 4 minutes. Add broth and wine; bring to boil. Add chopped tomatoes, chopped bell peppers, 1/2 cup basil, and crushed red pepper. Boil mixture gently until reduced to 2 cups, stirring occasionally, about 15 minutes. Cool slightly. Puree mixture in blender until smooth. Pour into strainer set over bowl, pressing on solids to extract as much liquid as possible; set aside. (Sauce can be made 1 day ahead. Cover and chill.)
  • Heat heavy large skillet (preferably cast iron) over high heat. Sprinkle steaks with salt and pepper. Working in batches, add steaks to hot dry skillet and cook about 4 minutes per side for medium-rare. Transfer to platter; cover to keep warm. Add 1/4 cup water to skillet; stir to scrape up browned bits. Add sauce to skillet; reduce heat and simmer until heated through, about 4 minutes. Remove from heat. Whisk in remaining 4 tablespoons butter, then remaining 1/4 cup basil. Season sauce with salt and pepper.
  • Place 1 steak on each of 8 plates. Drizzle sauce over. Garnish steaks with reserved pepper strips and serve.

3 tbs finely diced white onion
3 large cloves of fresh garlic
1 32 oz can of peeled San Marzano tomatoes
1/4 cup heavy cream
2/3 cup grated parm reg
dry white wine
1 1 lb box rigatoni
3 tbs butter
1 tb vegetable oil
salt
pepper

Steps:

  • 1) remove sausage from casings; crumble and brown them in large, heavy cast iron enamled pot. when done, remove sausage and set aside. 2) using a pair of long tongs, roast peppers over gas flame until skins are slightly charred. set aside to cool. 3) Once peppers have cooled, pull skins off and dice fine, removing stem and seeds. 4) heat same pot you cooked sausage in over medium high flame. add 2 tbs of butter and i tb oil. when butter starts to bubble, add onion. Reduce heat to medium low. Stir until translucent, then add garlic. when garlic starts to turn pale gold, add 1/3 of diced pepper. Continue stirring for another minute or two, then add sausages and can of tomatoes. add about 1/2 cup of wine, and return heat to medium high. stir occaisionally. 5) start boiling water for rigatoni. 6) put remaining diced peppers in food processor with cream. puree. set aside. 7) when sauce has reduced (about 30 minutes) put pepper cream sauce in. stir and return heat to medium high. after 5 minutes, turn heat to low, add 2/3 of parm reg and mix in. 8) drain pasta and toss with sauce and remaining tb of butter. correct for salt. serve at once with the rest of parm reg on the table.

RED SNAPPER WITH CHUNKY TOMATO-BELL PEPPER SAUCE

1/2 cup dry white wine
1 1/2 cups purchased marinara sauce
3/4 cup chopped roasted jar-packed red bell peppers

2 6- to 8-ounce red snapper fillets

Steps:

  • Preheat oven to 400°F. Heat 1 tablespoon oil in heavy medium skillet over medium heat. Add garlic and sauté 1 minute. Add wine and bring to boil. Add marinara sauce, roasted peppers and half of basil and cook until reduced to thick sauce, stirring occasionally, about 5 minutes. Season to taste with salt and pepper. (Sauce can be prepared 1 day ahead. Cover and refrigerate. Reheat before continuing.)
  • Pour remaining 1 tablespoon oil into small baking dish. Add fish; turn to coat. Season with salt and pepper. Spoon sauce over fish. Bake just until cooked through, about 20 minutes. Sprinkle remaining basil over and serve.

3 C thhinkly slice shallots (about 10)
1 bunch green onions, white and pale green parts separate from dark green parts, all chopped
3 lg jalapenos, seeded, finely chopped
1 t ground turmeri
1 t paprika
1 t black mustard seeds
3 large red belle peppers, thinly sliced

Steps:

  • For chicken: Preheat overn to 375F. Whisk first 13 ingredients in 2qt baking dish. Add chicken. Stir to coat. Bake until cooked through, about 40mins. For Curry: Heat veg oil in heavy large skilled over med-hi heat. Add cumin ses and cook til aromatic. Add shallots and light parts of green onions. cook til golden brown, about 6mins. Add tomatoes, jalapenos, turmeric, paprika and mustard seeds to skillet. Simmer unti oil begins to separate, about 10mins. Add bell peppers and reduce heat to med-low. Cover and cook til peppers are soft, stirring frequently, about 10mins. Season w/salt and pepper. Stir in dark green parts of green onions. Top chicken with sauce over rice.

Polenta Shapes with Roasted Red Bell Pepper Sauce image

4 cups chicken or vegetable stock
2 cups polenta
2/3 cup freshly grated Parmigiano-Reggiano
3 tablespoons chopped fresh thyme leaves, stems discarded
2 tablespoons olive oil
4 red bell peppers
1 poblano chili, or 1 jalepeno chili
2 tablespoons butter or olive oil
3 shallots
1 1/2 cups chicken or vegetable stock
2 tablespoons chopped fresh thyme leaves, stems discarded
2 tablespoons freshly squeezed lemon juice
Salt and pepper
1/2 cup heavy cream

Steps:

  • In a large pot over medium-high heat, bring stock to a boil.
  • Slowly pour in polenta, stirring with a whisk as you add it. After all polenta is added it will take about 2 minutes for it to begin to thicken. Reduce heat to low and continue cooking and stirring occasionally for approximately 40 minutes, or until polenta is smooth, and no longer gritty on the tongue. Just before finishing, stir in Parmigiano-Reggiano and thyme.
  • In a 9 by 12-inch baking dish, add 1 tablespoon water. Transfer polenta to baking dish and spread until it is of uniform thickness. Refrigerate for 1 hour, or until it solidifies.
  • To make roasted red bell pepper sauce, roast the red and poblano peppers whole over a gas flame, a charcoal flame or under a broiler, turning 1/4 rotation every few minutes, until entirely blackened. Immediately place in a paper bag, seal, and let sit for 3 minutes. Peel off the charred skin and discard. Slice the peeled peppers open and discard the membranes and seeds
  • In a saute pan over medium heat, heat the butter and add the shallots. Cook for about 6 minutes, stirring frequently, or until the shallots just begin to show signs of browning.
  • Add the stock, 2 roasted bell peppers, poblano chili, and thyme. Bring to a boil, then immediately reduce heat to medium-low and simmer for 15 minutes. (Adjust heat as required to simmer.)
  • Remove from heat and let cool. In a food processor or blender, add pan contents along with the remaining red peppers, lemon juice, salt, and pepper. Blend until smooth. Reserve.
  • Use a cookie cutter or a pairing knife to cut out desired polenta shapes. In a saute pan over medium high heat, add oil and saute polenta shapes for approximately 5 minutes per side, or until a golden brown crispy crust has formed on each side.
  • Just before serving, re-heat sauce in a saucepan and stir in cream. Ladle 2/3 cup of roasted red bell pepper sauce into a shallow bowl. Top with one piece of polenta. Serve immediately.
  • Recommended beverage: Italian Chianti (red)

  • For lamb:

  • Melt butter with oil in heavy large skillet over medium heat. Add shallots, leeks, saffron, and turmeric; sauté 5 minutes. Add 1 1/2 cups water, turnips, carrots, and rutabagas. Cover and simmer until vegetables are tender, stirring occasionally, about 25 minutes. Season generously with salt and pepper.
  • Meanwhile, prepare barbecue (medium heat). Brush grill with oil. Remove lamb from marinade, scraping off some of excess marinade. Sprinkle lamb with salt and pepper. Grill to desired doneness, about 3 minutes per side for medium-rare.
  • Divide grilled lamb chops among 6 plates. Serve with saffron vegetables and Red Bell Pepper Sauce.

1 red bell pepper, roasted and chopped
1/2 teaspoon fresh lemon juice
1/4 teaspoon sugar
cayenne to taste
1 tablespoon olive oil
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1/8 teaspoon ground ginger
1 tablespoon Dijon-style mustard
1 whole skinless boneless large chicken breast (about 10 ounces), halved
all-purpose flour seasoned with salt and black pepper for dredging the chicken
an egg wash made by beating 1 large egg with 1 teaspoon water
1 cup sweetened flaked coconut
2 tablespoons unsalted butter
2 tablespoons dry Sherry

Steps:

  • In a blender purée the bell pepper with the lemon juice, the sugar, the cayenne, the oil, and salt and black pepper to taste until the sauce is smooth. In a small bowl whisk together the garlic paste, the ginger, and the mustard and spread the mixture onto both sides of the chicken. In separate bowls have ready the seasoned flour, the egg wash, and the coconut. Dredge the chicken in the flour, shaking off the excess, dip it in the egg wash, letting the excess drip off, and coat it thoroughly with the coconut, pressing the coconut to make it adhere.
  • In a large ovenproof skillet heat the butter over moderately high heat until the foam subsides and in it sauté the chicken for 2 minutes on each side, or until the coconut is golden. Add the Sherry, transfer the skillet to a preheated 375°F. oven, and bake the chicken for 10 to 12 minutes, or until it is just cooked through. Divide the sauce between 2 large plates and arrange the chicken on it.
  • To roast peppers:
  • Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or broil the peppers on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until the skins are blistered and charred.) Transfer the peppers to a bowl and let them steam, covered, until they are cool enough to handle. keeping the peppers whole, peel them starting at the blossom end, cut off the tops, and discard the seeds and ribs. (Wear rubber gloves when handling chilies.)

Red Bell Pepper Stuffed Chicken With White Cream Sauce image

This is one of our favourite recipes that we save for special occasions. Your guests will be thinking they are fine dining in your home. The sauce is very rich, I usually serve this with steamed green beans on the side.

4 boneless skinless chicken breasts
salt and pepper
2 tablespoons olive oil
1 garlic clove, finely chopped
1 shallot, finely chopped
1/2 cup dry white wine
1 1/2 cups whipping cream
2 tablespoons fresh basil, juliened
2 sweet red peppers
basil leaves
1 cup shredded asiago cheese

Steps:

  • Roast the red peppers until blackened. Place the peppers in a bowl & cover with wrap to generate steam for approximately 5 to 10 minutes. Remove the blackened skin and seeds. Cut each red pepper into thirds.
  • Cut the chicken in half horizontally almost but not all the way through. Open the chicken like a book and season with salt and pepper.
  • Place a slice of roasted red pepper onto one side of the opened chicken breast. Top each with 2 basil leaves. Sprinkle with cheese. Fold the other side of the chicken over creating a bundle. Secure the chicken bundle with three pieces of string.
  • In a large non-stick pan, heat half of the olive oil over medium heat. Add the chicken and cover. Cook for approximately 7 minutes per side or until no longer pink inside.
  • Remove to plate and remove strings.
  • Add the remaining oil to pan, and cook the garlic and shallots until softened.
  • Stir in wine and boil for 3 minutes.
  • Stir in whipping cream. Season with salt and pepper. Simmer for 5 minutes or until thickened enough to coat the back of a spoon.
  • Return chicken to the pan, turn the chicken to coat while reheating.
  • Remove the chicken to individual plates. Spoon the white cream sauce over the chicken and garnish with fresh juliened basil.

Cream cheese has two jobs in this chicken dinner: it adds just the right amount of creaminess to the spinach and artichoke stuffing and enriches the roasted red pepper sauce.

2 tablespoons olive oil
1 clove garlic, chopped
1/2 small onion, chopped
Half of a 9-ounce box frozen artichokes, thawed, squeezed dry and roughly chopped
Half of a 5-ounce container baby spinach (about 3 cups)
1 tablespoon mayonnaise
1/4 teaspoon lemon zest plus 1 tablespoon lemon juice
10 tablespoons Arla Original Cream Cheese Spread
Kosher salt and freshly ground black pepper
4 small skin-on, bone-in chicken breasts (2 to 2 1/2 pounds total)
12 ounces small red-skinned potatoes, cut into 1/4-inch-thick half-moons
1/2 cup jarred roasted red bell peppers, drained and rinsed

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat 1 tablespoon of the oil in an extra-large nonstick ovenproof skillet over medium-high heat. Add the garlic and onion and cook, stirring, until the onion is softened and lightly browned, about 3 minutes. Add the artichokes and cook until warmed through, about 1 minute. Add the spinach and cook, stirring, until completely wilted, about 3 minutes. Transfer the mixture to a medium bowl and let cool completely. Wipe out the skillet and reserve.
  • When the spinach mixture is cool, add the mayonnaise, lemon zest and 7 tablespoons of the cream cheese spread and stir to combine. Season with salt and pepper.
  • Insert a thin paring knife into the thickest part of each chicken breast and cut down the side to make a 3-inch-long pocket. Stuff each pocket with one-quarter of the spinach mixture. Sprinkle the chicken with salt and pepper.
  • Return the skillet to medium-high heat and add the remaining 1 tablespoon oil. Add the chicken breasts skin-side down and cook until golden brown, about 4 minutes; transfer to a plate. Add the potatoes to the skillet, sprinkle with salt and pepper and cook, tossing, about 2 minutes. Turn off the heat, return the chicken to the skillet skin-side up and transfer to the oven. Roast, stirring the potatoes halfway through, until an instant-read thermometer inserted in the thickest part of the chicken registers 165 degrees F, 25 to 30 minutes.
  • Meanwhile, combine the roasted peppers, lemon juice and remaining 3 tablespoons cream cheese in a food processor or blender and process until smooth. Season with salt and pepper.
  • Spoon the red pepper sauce onto 4 plates. Top each with a chicken breast and some potatoes.

CHICKEN CANNELLONI WITH RED BELL PEPPER SAUCE

This recipe is outstanding and men especially seem to enjoy it. Its a bit of work, but worth it. Be sure and make the sauce...don't use store bought marinara.

1-8 oz pkg cannelloni or manicotti shells
4 c finely chopped cooked chicken
2-8 oz containers chive and onion cream cheese
1-10 oz frozen chopped spinach, thawed and well drained
1 c mozzarella cheese
1/2 c italian seasoned breadcrumbs
1 tsp seasoned pepper
3/4 tsp garlic salt
2-7 oz jars roasted red bell peppers, drained
1-16 oz jar creamy alfredo sauce
1-3 oz shredded parmesan cheese

Steps:

  • 1. Cook pasta according to package directions and drain. Stir together chicken and next six ingredients. Cut pasta shells lengthwise through 1 side. Spoon about 1/2 cup of the chicken mixture into each shell, gently pressing cut sides together.
  • 2. Place cut sides down, in a lightly greased 13x9 baking dish and pour Roasted Red Pepper Sauce evenly over shells. Bake Uncovered at 350 degrees for 25-30 minutes or until thoroughly heated.
  • 3. Roasted Red Bell Pepper Sauce: Combine the jars or red bell peppers that have been drained with the Alfredo sauce and the Parmesan cheese in a blender until smooth. Yields 3 1/2 cups of sauce.

POLENTA TRIANGLES WITH ROASTED RED BELL PEPPER SAUCE

Italian comfort food! Love the the texture with the cheesy crust of the polenta. I prefer to bake the polent, however I've also included instructions for frying. Time does not include chilling time for the polenta (which can be made 24 hours in advance).

4 cups vegetable stock or 4 cups water
1 teaspoon salt
1 cup polenta (not quick-cooking) or 1 cup yellow cornmeal (not stone ground)
4 tablespoons unsalted butter
1/2 cup freshly grated parmigiano-reggiano cheese
2 tablespoons chopped fresh thyme leaves, stems discarded
4 red bell peppers, roasted, peeled and seeded
1 poblano chiles (adjust to taste) or 1 jalapeno, roasted, peeled and seeded (adjust to taste)
1 tablespoon butter
1 tablespoon olive oil
3 shallots
1 1/2 cups chicken stock or 1 1/2 cups vegetable stock
2 tablespoons chopped fresh thyme leaves, stems discarded
2 tablespoons fresh lemon juice
salt and pepper
1/2 cup heavy cream
2 tablespoons olive oil
parmigiano-reggiano cheese, grated

Steps:

  • RED PEPPER SAUCE:.
  • Roast the red and poblano peppers whole over a gas flame, a charcoal flame or under a broiler, turning 1/4 rotation every few minutes, until entirely blackened.
  • Immediately place in a paper bag, seal, and let sit for 3 minutes.
  • Peel off the charred skin and discard.
  • Slice the peeled peppers open and discard the membranes and seeds.
  • Thinly slice two of the red peppers and set aside.
  • In a saute pan over medium heat, heat the butter and olive oil and add the shallots.
  • Cook for about 6 minutes, stirring frequently, or until the shallots just begin to show signs of browning.
  • Add the stock, 2 roasted bell peppers, poblano chili, and thyme. Bring to a boil, then immediately reduce heat to medium-low and simmer for 15 minutes. (Adjust heat as required to simmer.).
  • Remove from heat and let cool.
  • In a food processor or blender (I use my kitchen 'motorboat'), add pan contents along with the lemon juice, salt, and pepper.
  • Blend until smooth.
  • Return to sauce pan and add remaining thinly sliced red pepper.
  • Set aside.
  • POLENTA:.
  • In a large pot over medium-high heat, bring stock to a boil.
  • Slowly pour in polenta, stirring constantly with a whisk as you add it.
  • Reduce heat to moderately low and cook, stirring constantly, until polenta is smooth.
  • Reduce to low heat, cover and cook until polenta is smooth, and no longer gritty on the tongue, about 30 minutes. Just before finishing, stir in Parmigiano-Reggiano and thyme.
  • Pour creamy polenta into lightly oiled round cake or pie pan using a rubber spatula to smooth the surface.
  • Refrigerate polenta until completely cold and firm.
  • Cut polenta into wedges and remove from pan with a spatula.
  • To Bake:.
  • Bake at 450 degrees for until lightly browned, approximately 10-12 minutes.
  • Pan Fried:.
  • Add enough olive oil to completely coat the bottom of a large, heavy skillet and heat to medium.
  • Add as many polenta triangles as you can without crowding the pan and cook for 2-3 minutes on each side or until golden. Sprinkle lightly with grated parmigiano-reggiano cheese.
  • To Serve:.
  • Just before serving, re-heat sauce in a saucepan and stir in cream.
  • Ladle 1/2 cup of roasted red bell pepper sauce over each wedge. Top with Parmigiano-Reggiano and serve immediately.

3 c thinly sliced shallots-10 lg
1 bunch green onions,white and pale green parts separated form dk green parts, all chopped
1 lb plum tomatoes,chopped-4 lg
3 large jalapeno chiles, seeded,finely chopped
1 t ground tumeric
1 t paprika
1 t black mustard seeds
3 large red bell peppers,thinly sliced

Steps:

  • Preheat oven to 375. Whisk first 13 ing in 2-qt baking dish. Add chicken; stir to coat. Bake until chicken is cooked through, about 40 min. Divide rice among bowls. Top with chicken thighs, then divide sauce among bowls. Top with red pepper and shallot curry. Curry: Heat vegetable oil in heavy large skillet over med-high heat. Add cumin seeds and cook until aromatic, 30 seconds. Add shallots and white and pale green parts of scallions. Cook until golden brown, stirring often, about 8 minutes. Add tomatoes, jalapenos, tumeric, paprika and mustard seeds to skillet. Simmer mixture until oil begins to separate, about 10 minutes. Add bell peppers and reduce heat to med-low. Cover skillet and cook until bell peppers are soft,about 10 min. Season curry to taste with salt and pepper, Stir in chopped dk green onions.
