ZUCCHINI PIE image

Number Of Ingredients 10

3 cups grated or finely diced zucchini, skin on
1 cup Bisquick
1/2 cup chopped onion
1/2 cup parmesan cheese
2 Tabs. parsley
1/2 tsp. garlic powder
1/2 tsp. oregano
pepper to taste
1/2 cup oil
4 eggs slightly beaten

Steps:

  • Mix all ingredients and pour into 9/10 inch pie plate. Bake at 350 for 40 mins. Optional: If in season, arrange slices of tomatoes on top before baking.
