Steps:
- Grease 2 loaf pans.
- Use you preference of nuts, i.e. walnuts, pecans etc. I generally use semi-sweet chocolate chips when baking.
- Mix eggs, vanilla, oil and sugar; sift dry ingredients together,mix in wet ingredients until nicely incorporated. Add in zucchini,chocolate chips and nuts.
- Pour into loaf pans and bake approximately 45 min-1 hour at 350°F Freezes very well.
