Steps:
- Mix the eggs, oil, sugar together until light. Add zucchini and vanilla. Mix well. Mix the flour, cinnamon, baking powder, baking soda and salt in a separate bowl and add to the oil mixture. Mix well. Bake 1 hour at 325 degrees.
