Steps:
- 1. Preheat oven to 325 degrees Fahrenheit. In a large bowl, combine the flour, sugar, cinnamon, baking powder, baking soda, and salt.
- 2. In a separate bowl, add the egg, banana, oil, and extracts; mix well.
- 3. Stir into dry ingredients just until moistened.
- 4. Fold in zucchini and pecans.
- 5. Pour batter into three 5 3/4 x 3 x 2-inch mini loaf pans that have been coated with non-stick cooking spray.
- 6. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- 7. Cool for 10 minutes before removing from pans to wire racks to completely cool.
