ZUCCHINI AU GRATIN WITH GRANA PADANO image

2 white onions ( ~ 10 oz)
olive oil
4 zucchini ~ 1 #
4 slices pancetta, ~ 2 1/2 oz
1 slice white bread
rosemary
1 1/2 oz grana padano

Steps:

  • Slice onions. Heat 3 tblsp oil in skillet, add onions, cook till soft, then arrange them in oven proof dish. Cut ends off zucchini, slice lenghtwise. Place half slice pancetta on top of each zucchini half. Layer zucchini over onions, overlapping slightly. Mix bread, rosemary and grana Padano in food processor. Sprinkle mixture and olive oil over zucchini. Bake at 325 for ~ 25 minutes, serve warm.
