Zucchini alla Romana image

Small zucchini or summer squash work best for this recipe. This makes a nice side with grilled meats or...?

Number Of Ingredients 8

2 clove(s) garlic, minced
2 teaspoon(s) olive oil
4 cup(s) sliced zucchini
1 teaspoon(s) dried basil or 1 tablespoon fresh
1/4 teaspoon(s) salt, or to taste
dash(es) pepper, or to taste
2 tablespoon(s) shredded parmesan or romano cheese
6-8 cherry tomatoes, halved (optional)

Steps:

  • In a large skillet, heat oil and add garlic until just starting to "speak" - about 1 minute.
  • Add zucchini, salt and pepper. Cook uncovered over medium heat for about 5 minutes, until zucchini is crisp-tender, stir occasionally.
  • To serve, sprinkle with cheese and torn fresh basil. Optional - toss and serve with halved cherry tomatoes.
