Steps:
- Combine plums, sugar, vinegars and salt in a large, non-reactive pot. Bring up to a boil for 10 minutes, then add remaining ingredients and return to a hard simmer for 30 minutes. Using an immersion blender, process until almost smooth. Simmer additional 20-30 minutes until thickened. Can immediately in sterile glass jars, leaving 1/4" at top. Complete canning as you would fruit jams.
