ZESTY PRUNE SAUCE image

Yield 8 to 10 pints

Number Of Ingredients 14

6 lbs Italian prune plums, pitted and roughly chopped
2 lbs brown sugar
2 cups cider vinegar
1 cup white vinegar
5 tsp kosher salt
2 lg onions (yellow or red), chopped
10-12 cloves garlic
2-1/2 oz (appx 1/2 cup) goat horn peppers, chopped
1 cup raisins
3 tbsp soy sauce (reduced sodium)
1/2 tsp allspice
1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground ginger

Steps:

  • Combine plums, sugar, vinegars and salt in a large, non-reactive pot. Bring up to a boil for 10 minutes, then add remaining ingredients and return to a hard simmer for 30 minutes. Using an immersion blender, process until almost smooth. Simmer additional 20-30 minutes until thickened. Can immediately in sterile glass jars, leaving 1/4" at top. Complete canning as you would fruit jams.
