ZESTY CHICKEN OREGANO (ERICA'S CHICKEN) image

Number Of Ingredients 7

2 1/2 - 3 lb chicken cut up
1/4 cup olive oil
1/4 cup lemon juice
2 tsp dried oregano leaves
1 tsp salt
1/2 tsp pepper
2 cloves garlic

Steps:

  • Place chicken in ungreased oblong pan 13 x 9 x 2 inches. Mix remaining ingredients (works best to use food processor); pour over chicken. Cook uncovered in 375 oven, spooning oil mixture over occasionally, 30 minutes. Turn chicken; cook until thickest pieces are done, about 30 minutes.
