I love French Onion Soup and have tried many variations. I seem to keep coming back to this one because it has such a rich flavor that we enjoy. I've also tried this with red wine and swapped out the cheese depending what I have on hand. Just make sure that the cheese melts well and gets gooey.

Steps:
- 1. Saute onions and garlic in melted butter in a large saucepan, about 45 minutes. They should be browned and tender. (See note below).
- 2. Add wine and simmer until reduced to a glaze, about 3-4 minutes.
- 3. Stir in chicken broth, beef broth and mustard. Simmer 20 minutes. Season to taste with salt and pepper.
- 4. Can be prepared 1 day ahead to this stage and refrigerated. Return soup to simmer before continuing.
- 5. Preheat broiler.
- 6. Ladle soup into broilerproof bowls. Top each bowl with a slice of toasted bread and the cheeses.
- 7. Broil until cheeses melt and bubble.
- 8. NOTE: I find that my garlic can get a little crispy and bitter when added to the onions at the beginning. So I usually add the garlic during the last 10-15 minutes of caramelizing the onions which is enough time to add a nice flavor.
