YELLOW SQUASH GRATIN image

Number Of Ingredients 8

4 medium yellow squashes cut into 1/4 inch thick discs
1 medium yellow onion thinly sliced
1/2 cup breadcrumbs, matzo meal, or panko
1/2 stick unsalted butter cut into cubes
1 cup half and half or heavy cream
1 cup grated parmesan cheese
salt
pepper

Steps:

  • Pre-heat the oven to 450 degrees. Put a layer of aluminum foil into a lasagna pan and rub it with a thin coating of oil to prevent the squash from sticking. Lay the squash out in even layers across the pan. Top with onions, cut up bits of butter, cream, salt, pepper, bread crumbs, and parmesan. Bake on the lower rack in your oven for 20-40 minutes. Let sit for 10 minutes then serve warm.
