Steps:
- Preheat oven to 400 degrees. Cream together margarine, peanut butter and both sugars. Beat in eggs. Mix in salt and baking soda, then flour. Do not beat or overmix. Roll dough into balls about the size of a walnut or golf ball. Dip tops of each ball into additional granulated sugar and place 1/2" apart on cookie sheet, sugar side up. When you have one row of cookies on the cookie sheet, dip a potato masher in the granulated sugar and press into the top of each cookie to create crosshatching. Continue with remaining rows until cookie sheet is full. Bake at 400 degrees for 7 to 9 minutes or until tops are no longer shiny. Do not brown. Allow cookies to cool on cookie sheet 5 minutes, then transfer to cooling rack or newspaper to cool completely. Repeat until all dough is used.
